The Ultimate Cream Cheese Corn Casserole using corn muffin mix ~ Memorial Day side dish ideas

- This creamy, moist and delicious corn casserole is the perfect comfort food and side dish for all family dinners! The cooked peppers and onions make all the difference!

Ingredients Used
1 8.5oz pk of corn muffin/cornbread mix
1/2 cup or 1 stick of butter @room temp
8oz cream cheese @ room temp
2 eggs @ room temp
1/2 yellow onion
1 can cream style corn
1 can whole kernel corn (drained)
3/4 to 1 cup diced assorted peppers
1 tsp pure vanilla extract
1-2 cups of shredded cheddar/ Colby Jack cheese
Directions: sauté the onions and peppers in the melted butter first for about 5-6 minutes total. Allow it to cook down completely! Mix the other Ingredients and add the cooked peppers and butter. Pour into a hot casserole dish and top it off with the cheese! Bake immediately @ 350F for 40-45 minutes.
Allow to rest for at least 15 minutes, serve and enjoy!

My teenage son was always bringing friends home for sleepovers. One night he had 3 boys over and they helped to shovel a lot of snow for us the next morning. I only had one lb of breakfast sausage to feed them, but I always keep Jiffy corn bread mix in my pantry. I made this casserole (doubled it) and sprinkle the cooked, crumbled sausage in it. They were so happy and it filled them up! I love Jiffy cornbread mix!

Thank you for this recipe idea. If you are watching the sodium, as we are, there IS salt-free cream corn available. Re this recipe, I've never liked cream corn, but THIS recipe looked so good that I tried it, and we enjoyed it. I had to make my own (easy) low-sodium cornbread mix (using baking soda substitute, low-sodium baking powder, and a mix of salt substitute and lite salt) vs. using Jiffy's high-sodium stuff, but it was all worth it.

Mansa, I made this tonight! My hubby and I both loved it. The cream cheese took it over the top! I will be making this again, on a regular basis! My hubby doesn't like cornbread,( I know, right), so I didn't know if he would like this. But, like I already said he loved it. Thank you for sharing!
