I also know this as tamale pie, I add olives, mushrooms as well, and when it comes out of the oven to prevent a dry crust on the cornbread, I lightly roll a cube of butter over the crust & to top it off I sprinkle a layer of cheese over it with & top with a sprinkling of green onions& thinly sluced tomatoes.. Yummm!
When money was tight, I would bake the Jiffy cornmeal mix on top of a can of chili in an 8” X 8” pan. Kids loved it….we’d pour a little honey on it for a treat.
We would have fluffy scrambled eggs with canned chili on top for dinner sometimes. As a child I didn’t realize it was a “budget” meal. It was warm, filling, and tasted good!

My grandfather taught me to never ever stir the beans. If you’re planning to stir the food, add the beans last and gently fold them in so as not to rupture the skins. I watch this video a couple of times now, couldn’t figure out what it was about the way you cook. Now I know what it is! You have such a gentle and loving hand, it really makes a difference.
To make your own taco seasoning mix, just mix up: garlic powder, onion powder, salt, black pepper, cumin, chili powder, paprika....a tablespoon or so of each to your taste.

I too realize this is a year old post but TH-cam suggested your channel to me. First, I was soooo happily surprised and impressed that a mom/cook boosted the nutrition profile by adding the spinach. All of these delicious looking comfort food recipes are always “3 blocks of Velveta, 2 containers is sour cream, 2 blocks of cream cheese, a bag of precooked white rice, 2 cups of sugar, 4 cans of mushroom soup,and a topping of Fritos!” Usually that is followed by “ don’t worry about any old vegetables in here, no sir. It’s straight processed fat, fake cheese, and a whole bunch of preservatives!” The finished product looks good but it wouldn’t be allowed in our house, let alone in our kids ! I could always alter the recipe but the whole point is to find a completed, good recipe I can quickly follow. Why do so few mom’s not understand the purpose of food….to nourish the people who eat it. Good job “mom” and thanks. I will be making this …..a lot of goodness here!
Awe, thank you so much. I will say, I have a good bit of the overly processed meals as well. I do try to make a balance. I mostly find that balance in our routine breakfasts (easy yogurt, fruit, and maybe granola) and snacks. We eat a lot of veggies, but most times they are a side dish. My daughter loves "grossing her friends out" by telling them " we love vegetables". She thinks it is so funny the gross faces they give her.
Wholeheartedly agree! However, Velveeta does have something to it. It now comes in a pouch as a creamy cheese and it is good and convenient for so many things - broccoli and cheese, nacho topping and this .... There's three pouches in my pantry at any given time.
Yum! My mom made something like this when we were kids (40+ yrs ago) called "tamale pie" 😂 it was one of my favorite meals, it's so fun to see something similar - brings back fun memories and looks so good!
When I was a teenager in the 70s you could buy a Tamale Pie kit in a box. It was one of the first things I learned to cook. I remember it was really good too.
My husband loves cornbread, so I made this for tonight's dinner. I didn't have any Jiffy Cornbread mix or taco seasoning, so I had to make the taco seasoning and cornbread from scratch. My veggie chopper was broken, so I had to chop everything by hand. The whole thing took me an hour, leaving me crabby and out of sorts when I put the dish into the oven. But it was TOTALLY WORTH IT! Not only did my husband love it, but it tasted delicious and plated up beautifully--good enough for company! From now on, I'll have Jiffy Cornbread Mix and taco seasoning in my pantry. Actually your version was the healthier way to go. I don't like the taco package seasonings with all the additives. And the corn bread is easy to make from scratch. Your body will say thank you if feed it less toxins.
I made this on a whim today. I know I hit a home run when one of the kids came into the kitchen after taking one bite and said "You gotta make this more often, it rocks." This particular kid NEVER even notices what she eats. Tastes great, filling, not expensive. A great recipe. Thanks!!!

I used this as inspiration for yesterday's dinner. We are vegetarian so I used more of the beans and vegetables as well as some Impossible Burger to make the filling. I also added some Chipotle pepper powder to the mix and chopped some canned jalepenos to the cornbread. The bottom crust seemed to take forver to cook, but it was well worth the wait! I made ours in an.8×8 pan and made 4 smaller helpings for the freezer. This is definitely a keeper! Thanks.

This recipe is a good one. It's been around for a long time only known as tamale pie. The cornbread was put on top of the filling along with green olives and cheese mixed in the topping. I love the spin on spinach. Thank you for sharing.
Krista my family, friends and especially my grandchildren absolutely love this dish. I have made it several times and they are requesting it again. I love it with a cup of coffee. Good way to get some vegetables in the kids. I can't thank you enough for this recipe. It's my top ten in my recipe box.

Tried this tonight. Had to let mine cook for about 30 minutes or so in a glass Pyrex dish. Came out well, served with avocado slices. The cornbread is a bit sweet but balanced the meat mixture perfectly.
I have been making a dish similar to this for about 30 years. But I use jalapeno pepper and onion. 2 packages of unsweetened cornbread mix. One can of cream style corn and 2/3 cup milk. I add the cheese to the cornbread batter. Bake at 350 for 35-45 minutes. That gives suffecient time for the ground meat to become tender. I usually make a pot of pinto beans to go with it. This cornbread is also delicious with warm enchilada sauce poured over the top.
Good video, good comfort food. We called this tamale pie growing up. But we didn't add greens, used a scratch corn bread made with buttermilk, green chiles and chopped green onions in corn bread batter with gobs of cheese. Also sliced olives in filling, no beans. It was so good! Glad I came across this, and I will make this for my neighbors tomorrow, using the spinach from my garden, too.

I've been working on a longterm food storage for our family. This means I now have more dehydrated foods to incorporate into recipes. I've really grown to luv dehydrated Jalapeños and Green Chile (milder). They still pack lots of flavor. Also, home bottled Pinto beans and garden tomatoes. Tex-Mex food is so versatile and I think it's all packed with nutrients.
Yes! My daughter and I began dabbling in dehydration last year. It has been awesome for so many things. I have not been entirely successful in our gardening efforts. (my daughter has been more successful with hers), but we have been able to dehydrate many herbs and can different foods to make dinners easy to throw together. The dehydrated jalapenos were a big shock of heat for us lol. I love jalapenos and spice, but boy did they pack a punch when dehydrated.

I made it yesterday with a different cornbread mix (Marie Callenders) and it was just right, in fact, perfect. I took it to my BFF picnic and we gobbled it up. This one is a keeper! I like how you added spinach to use it up. I’ve actually chopped up spinach fairly small and mixed it in tuna salad when I needed to use it up. You can’t taste it and it adds some pretty color and nutrients to the salad.

We make this, too & call it Tamale Pie. Like you, I add spinach & any other healthy veggies I have in the fridge along with jalapeno & pablano peppers. It's a definite easy, quick meal & a kid pleaser.
I live in the South grew up in the North. I grew up eating Jiffy - my husband grew up eating homemade cornbread. He hates Jiffy lol. I now make homemade cornbread and it is great. Think I will try this but make my own cornbread.
I like it both ways, depends on my mood and what I'm making. For this in particular, I prefer the Jiffy because it has just the right amount of sweetness for contrast, but I guess I could always add a little sugar to my cornbread and make it work.
I add chopped spinach to a lot of things that I cook. The family thinks it’s parsley since I cut it up into small pieces. I agree about the added nutrients.
My kids poked and prodded in the beginning, now they are used to it and actually say "oh I love spinach... etc" because they know they've had it in a lot of dishes they really like. I do the same with things like carrots, peppers, onions etc. I'll shred them up and put them in a lot of soups.

Here in Mexico we make something similar called _pastel de maíz._ It does not rely on quite as many commercially processed ingredients - and Cheddar cheese is very hard to find here - but it's a great way to use up any leftover _guisado_ as the filling.

Krista, after listening closely to you and watching, we made Mexican Cornbread. Two of us had it two days. It is delicious. We will be making it again. Thank you for sharing with us. We used cream corn and will use whole kernel next time. We also used ground turkey because we don't eat beef.
I made this just for 2 people I used 1 box of jiffy mix put it in a 8x8 pan. 4 boxes of jiffy mix just seems to much corn bread for 1 lb of hamburger meat for 9x13 . Maybe I will try it when I have someone over for dinner. Tks for recipe 😋 mine is still cooking sure it will be good 👍 😋

Terrific recipe! I just made our second pan to utilize the left over beans & corn from the first time I made this a week ago. The first pan provided 3 meals for me and my husband, and no doubt this batch will do the same. I appreciate that the next two meals will be a quick heat up in the microwave, and no cooking on my next few work days. This is a tweak-able dish, and next time I'll try subbing kidney beans in place of the black beans. I omitted the bell pepper as I didn't have it on hand, and we still love it! Holy cow. I came up with a cornbread dish much like this years ago. Its cheap and easy to make. Kids called it Dads Cornbread pie. Lol. However I precook the bottom layer of cornbread in the microwave first. Takes about 5 minutes and that keeps the filling from sinking to the bottom of the cornbread mix.
This looks delicious & easy. I’ll definitely be making this! I have a little gadget called a chop stir that I got on Amazon. It has a 4 way end on it to brown the ground beef & crumble it at the same time. I love mine & highly recommend it.

Well thank you. I find myself it a constant state of dieting. I relapse over and over. As I've gotten older, I think I have given up and replaced it with desire to eat better foods instead.
@@EverydayTexasLife My doctor and nutritionist demanded diet is to eat 6 small meals a day. Every 3 hours 4 ma I have to put good food into my mouth. Very strict and very hard to do all day everyday. I need to graze or I gain weight due to a genetic defect called MTHFR. I have to have IV glutathione every night and weight just dropped off of me. Cutting back made me fat. So did fasting. After my first dose of glutathione, I lost 10% body fat in one week. Anybody else that is struggling with their weight and you don’t daily “over eat” might want to order a MTHFR test, do a cheek swab for $150 and find out if you too have this genetic defect. 20% to 40% of the population might have one or two mutations and it affects everybody differently. It took me 46 years to figure it out.

I like additional spice so I added about 1/2 cup of drained, pickled jalapeno peppers to the meat mixture just prior to placing it on the cornbread. So good. Using this to food prep for work lunches for the week.

No need to sauté the onions and peppers beforehand; just cook them with the hamburger meat. Plus I drain the grease off mine before adding the taco mix. You can also use refried beans mixed into the burger. Great addition with the spinach. Your recipe is awesome as is, just commenting for other folks who might want to spin it a little. I could always alter the recipe but the whole point is to find a completed, good recipe I can quickly follow. Why do so few mom’s not understand the purpose of food….to nourish the people who eat it. Good job “mom” and thanks. I will be making this …..a lot of goodness here!
Awe, thank you so much. I will say, I have a good bit of the overly processed meals as well. I do try to make a balance. I mostly find that balance in our routine breakfasts (easy yogurt, fruit, and maybe granola) and snacks. We eat a lot of veggies, but most times they are a side dish. My daughter loves "grossing her friends out" by telling them " we love vegetables". She thinks it is so funny the gross faces they give her.

Wholeheartedly agree! However, Velveeta does have something to it. It now comes in a pouch as a creamy cheese and it is good and convenient for so many things - broccoli and cheese, nacho topping and this .... There's three pouches in my pantry at any given time.

When I was a teenager in the 70s you could buy a Tamale Pie kit in a box. It was one of the first things I learned to cook. I remember it was really good too.
My mom made this all the time . She threw everything in your t from mushrooms to can pinto beans cheese and all stuff she had in her cubbies
My husband loves cornbread, so I made this for tonight's dinner. I didn't have any Jiffy Cornbread mix or taco seasoning, so I had to make the taco seasoning and cornbread from scratch. My veggie chopper was broken, so I had to chop everything by hand. The whole thing took me an hour, leaving me crabby and out of sorts when I put the dish into the oven. But it was TOTALLY WORTH IT! Not only did my husband love it, but it tasted delicious and plated up beautifully--good enough for company! From now on, I'll have Jiffy Cornbread Mix and taco seasoning in my pantry. Many thanks for sharing this wonderful casserole.

Actually your version was the healthier way to go. I don't like the taco package seasonings with all the additives. And the corn bread is easy to make from scratch. Your body will say thank you if feed it less toxins.

I used this as inspiration for yesterday's dinner. We are vegetarian so I used more of the beans and vegetables as well as some Impossible Burger to make the filling. I also added some Chipotle pepper powder to the mix and chopped some canned jalepenos to the cornbread. The bottom crust seemed to take forver to cook, but it was well worth the wait! I made ours in an.8×8 pan and made 4 smaller helpings for the freezer. This is definitely a keeper! Thanks.

This recipe is a good one. It's been around for a long time only known as tamale pie. The cornbread was put on top of the filling along with green olives and cheese mixed in the topping. I love the spin on spinach. Thank you for sharing.

Tried this tonight. Had to let mine cook for about 30 minutes or so in a glass Pyrex dish. Came out well, served with avocado slices. The cornbread is a bit sweet but balanced the meat mixture perfectly.

I have been making a dish similar to this for about 30 years. But I use jalapeno pepper and onion. 2 packages of unsweetened cornbread mix. One can of cream style corn and 2/3 cup milk. I add the cheese to the cornbread batter. Bake at 350 for 35-45 minutes. That gives suffecient time for the ground meat to become tender. I usually make a pot of pinto beans to go with it. This cornbread is also delicious with warm enchilada sauce poured over the top.

Good video, good comfort food. We called this tamale pie growing up. But we didn't add greens, used a scratch corn bread made with buttermilk, green chiles and chopped green onions in corn bread batter with gobs of cheese. Also sliced olives in filling, no beans. It was so good! Glad I came across this, and I will make this for my neighbors tomorrow, using the spinach from my garden, too.

I made empanadas recently, and the meat mix you made is similar to one i saw and used, except it was chicken. Your recipe is next on my list. The base meat mix is easily adjustable for flavors and other ideas for things. Thanks, cant wait to make this.

I've been working on a longterm food storage for our family. This means I now have more dehydrated foods to incorporate into recipes. I've really grown to luv dehydrated Jalapeños and Green Chile (milder). They still pack lots of flavor. Also, home bottled Pinto beans and garden tomatoes. Tex-Mex food is so versatile and I think it's all packed with nutrients.
Yes! My daughter and I began dabbling in dehydration last year. It has been awesome for so many things. I have not been entirely successful in our gardening efforts. (my daughter has been more successful with hers), but we have been able to dehydrate many herbs and can different foods to make dinners easy to throw together. The dehydrated jalapenos were a big shock of heat for us lol. I love jalapenos and spice, but boy did they pack a punch when dehydrated.
I know several variations of this recipe and it can be made with left overs as well. Always turns out great!
Yes indeed! Some of our best "recipes" come from leftovers. Many times on busy nights I depend and plan for leftovers to recreate another meal.

I made it yesterday with a different cornbread mix (Marie Callenders) and it was just right, in fact, perfect. I took it to my BFF picnic and we gobbled it up. This one is a keeper! I like how you added spinach to use it up. I’ve actually chopped up spinach fairly small and mixed it in tuna salad when I needed to use it up. You can’t taste it and it adds some pretty color and nutrients to the salad.

We make this, too & call it Tamale Pie. Like you, I add spinach & any other healthy veggies I have in the fridge along with jalapeno & pablano peppers. It's a definite easy, quick meal & a kid pleaser.

I live in the South grew up in the North. I grew up eating Jiffy - my husband grew up eating homemade cornbread. He hates Jiffy lol. I now make homemade cornbread and it is great. Think I will try this but make my own cornbread.
I like it both ways, depends on my mood and what I'm making. For this in particular, I prefer the Jiffy because it has just the right amount of sweetness for contrast, but I guess I could always add a little sugar to my cornbread and make it work.
I add chopped spinach to a lot of things that I cook. The family thinks it’s parsley since I cut it up into small pieces. I agree about the added nutrients.
My kids poked and prodded in the beginning, now they are used to it and actually say "oh I love spinach... etc" because they know they've had it in a lot of dishes they really like. I do the same with things like carrots, peppers, onions etc. I'll shred them up and put them in a lot of soups.

Here in Mexico we make something similar called _pastel de maíz._ It does not rely on quite as many commercially processed ingredients - and Cheddar cheese is very hard to find here - but it's a great way to use up any leftover _guisado_ as the filling.

If you're doing scratch cornbread, you can punch it up with jalapeno or other peppers. Jalapeno cornbread is awesome.

I made this just for 2 people I used 1 box of jiffy mix put it in a 8x8 pan. 4 boxes of jiffy mix just seems to much corn bread for 1 lb of hamburger meat for 9x13 . Maybe I will try it when I have someone over for dinner. Tks for recipe 😋 mine is still cooking sure it will be good 👍 😋

Terrific recipe! I just made our second pan to utilize the left over beans & corn from the first time I made this a week ago. The first pan provided 3 meals for me and my husband, and no doubt this batch will do the same. I appreciate that the next two meals will be a quick heat up in the microwave, and no cooking on my next few work days. This is a tweak-able dish, and next time I'll try subbing kidney beans in place of the black beans. I omitted the bell pepper as I didn't have it on hand, and we still love it! Holy cow. I came up with a cornbread dish much like this years ago. Its cheap and easy to make. Kids called it Dads Cornbread pie. Lol.
However I precook the bottom layer of cornbread in the microwave first. Takes about 5 minutes and that keeps the filling from sinking to the bottom of the cornbread mix.

This looks delicious & easy. I’ll definitely be making this! I have a little gadget called a chop stir that I got on Amazon. It has a 4 way end on it to brown the ground beef & crumble it at the same time. I love mine & highly recommend it.

Well thank you. I find myself it a constant state of dieting. I relapse over and over. As I've gotten older, I think I have given up and replaced it with desire to eat better foods instead.
@@EverydayTexasLife My doctor and nutritionist demanded diet is to eat 6 small meals a day. Every 3 hours 4 ma I have to put good food into my mouth. Very strict and very hard to do all day everyday. I need to graze or I gain weight due to a genetic defect called MTHFR. I have to have IV glutathione every night and weight just dropped off of me. Cutting back made me fat. So did fasting. After my first dose of glutathione, I lost 10% body fat in one week. Anybody else that is struggling with their weight and you don’t daily “over eat” might want to order a MTHFR test, do a cheek swab for $150 and find out if you too have this genetic defect. 20% to 40% of the population might have one or two mutations and it affects everybody differently. It took me 46 years to figure it out.

No need to sauté the onions and peppers beforehand; just cook them with the hamburger meat. Plus I drain the grease off mine before adding the taco mix. You can also use refried beans mixed into the burger. Great addition with the spinach. Your recipe is awesome as is, just commenting for other folks who might want to spin it a little.
