    hi im from mexico, and i usually make skewers, one tip i get to prevent fire on skewers/toothpicks, i soak them with water and then put the food in, and go to big green egg. so the wood dont ignite. nice recipe

    I smoke my bacon for about 20 mins then I take off and proceed to wrap the the shrimp with bacon and jalapeño and then back on the pit. this personally helps me from drying out my shrimp. it doesn't take long once they go back on

      Thanks! I prefer Cowboy charcoal which I can get at Costco or Lowes here.

      Thanks for the coal info. I almost pulled the trigger on buying The green egg yesterday. But I live in a small city Houston Tx. I think there was only 1 store that had one. You would think the Green eggs folks would want to sell a lot of these. I like your how to Egg videos. Thanks

    Have you tried using the plate setter and cooking indirectly? It would eliminate the flare ups but would probably take longer to cook the bacon. That may not be good for the shrimp. Anyways, just wanted to see if you have tried. Thanks for the post.

      Hey Max, I have not, but interesting idea. The bacon getting cooked would be the concern.
