When I smoke salmon I look for the fat globules to form on the flesh and turn opaque; then I know it's done. I season with kosher salt, fresh cracked black pepper, dill weed and garlic...everyone always raves and wants seconds. Son

If you use chunks instead of chips it won't burn. Chips should only be used in a metal box. That keeps them from burning.

It's a brand new cedar plank out of the plastic, so no.

Could you not just use a cooler to keep your veggies warm instead of using the oven and risking over cooking?
