Alas, the yuppies discovered my "cheap ghetto food" (let's add things like fresh mussels and softshell clams to the list), and it didn't take long for all of it to be priced "above my means" (and I presume priced so as to reduce "the poor" to buying "processed" garbage). I'm old, I'm cynical, and... I worry about the world we're leaving the next generations.

I soak my ox tails in water and Xeroxing wine and just a smidge of baking soda to tenderize. Over night...to remove the blood.....I want to try your recipe...looks so good!
I tried your recipe and my oxtails came out delicious. The only thing I changed was using sherry wine to deglaze rather than butter. Just a personal preference. Thank you so much!

I live in Texas! Growing up my mother made Oxtail Stew and everyone was sucking (oops I couldn't think of another word lol)! Basically you clean them the same way! The veggies are onion garlic celery and bell pepper! Then cut up your favorite potatoes (I like to use the mini reds or baby Yukon gold)!Add baby carrots & green peas ( add the peas at the end, the heat will cook them)! You can use russet potatoes, you just need to cube them up! For seasoning try the same spices except for the brown sugar (unless the amount you use doesn't make it sweet)! Now use Worcestershire Sauce & a pack of Lipton Soup Mix! This is where our recipe differs in the cooking of the Oxtails! We season our flour and then brown the Oxtails in oil (We use bacon grease!) After browning them don't throw away your flour you may need it to thicken the gravy! You need bay leaves and thyme! Then saute your veggies after browning the Oxtails! Then throw everything in the Insta Pot except for the peas! Check your gravy at the end to see if it has a stew like consistency! If does you won't need the flour! If it's not then use the flour for a slurry (thickening agent)! Serve with rice or not! My mother always made a pot of greens and cornbread to go with it! Just a suggestion from the Lone Star State! Girl!!! They are $10.99 per lb in NY. I just came back from the South and they are $12.79 per lb. I almost fell out!! But lord oxtails are so good😋😋

Very EXPENSIVE....I looked at some the other day when I was in the store & for 8-9 tails the cheapest was $16.53 & the tails weren't that big.
