I grew up for a few years just down the street from an old fashioned black couple named rufus and esther. They were the type to welcome anyone who was hungry to their table if you got out back and helped in the garden a bit. We was always broke, so I helped in their garden quite a bit, and ate with them quite a bit. They'd always call me their adopted white grandson. Sad to say they've both passed away, but on to my point, mrs.Esther could cook. She always made some great oxtail, or neck bones either way. She would use the broth she'd have left and either use it in some pintos or a pot of greens. This was a trip back in time for me, thank you for making this video.
Thank you for sharing this story. It’s funny but it’s almost like I could picture myself at the table with you all. What a wonderful warm memory to have. God bless 😊
I used this recipe and it was my first time cooking oxtails...my husband loves oxtails and I have always been hesitant to make them as it is a dish that must be prepared correctly or it can be disastrous. He absolutely loved the flavor and appreciated the fact that the oxtails were well-seasoned but not too spicy. He is a chef and said that this was an excellent recipe that I will use again. Thank you so much for sharing 🙂.

I’ve tried your recipe, at first I was not sure how it was going to taste because I was not familiar with the aroma from the blended ingredients. But when my wife and I first ate it they were sooo delicious. The next day they were even more better, because the sauce thickened over night. Your recipe has been added to my culinary collection. This recipe looks really tasty and I am definitely going to try it. It’s funny how all people believe that their country is an originator of certain dishes. I am of Mexican descent and I grew up with oxtail soup. It’s a traditional dish. I live in Hawaii and Hawaiians have a traditional oxtail soup as well. There’s lots of various Asians here with their oxtail soups at restaurants and filipinos they believe they’re the originators of putting oxtails in soup form. My Filipino friend assured me. :) Point is we all make use of animal body parts and same ingredients, a little differently from country to country and people to people, and that is such a wonderful thing. Lots of deliciousness to explore!
Lime or lemon juice tomato sauce cuts all that grease out flavor fully withouth dryiing out your meat i cant wait to try your recipe its in my brain i love oxtails better than most steaks
@@jayholla31 That's so true! I've been really wanting to try to make ox tails using a recipe. So I looked into the prices in my area. It's not easy to find. Plus it's as costly as filet mignon! everyone keeps saying Jamaicans are being negative but I haven't seen it, but as a Jamaican I think this is an innovative way of doing it and I will be trying this recipe!!!!
That's the way oxtail is cooked in the leeward Islands.. We burn the sugar and add the meat along with all the other ingredients then we add liquid and seasonings...
Same here honey in Alabama. I ask some of my Alabama native and they be like ox tails....I be like you mean to tell me u r from the South and your parents have never cooked oxtails. U kidding me or some dont like them. Hell every Saturday that was my meal. I thought all of us black folk ate ox tails. Even my husband said he didnt eat oxtail which I dont believe his behind at all because his mom said she cooked them lol
It amazes me how much a supermarket charges for oxtails. They used to give them away for free because no one wanted them, just like soup bones. I love the way you did your video, no talking just to talk, music not too loud, and you said worcheshire just like we do in NC. Can't wait to make this!
The grocery store we go to has oxtail but very pricey, I can never figure out why.. I have to start trying to venture out to other grocery stores I guess.
@@sezell6677 @Maria Loftin when chefs discovered it and started putting the meat in highend restaurants the price increased. When the purpose was that of passing off the unwanted parts of meat to po'folk it was cheap, when "other" discovered it, then it became a commodity.
Totally agree with you. I used to buy oxtail, plantains, tripe, you name it for a dime a dozen here in the SF Bay Area. Not anymore. Our foods are going mainstream and the grocery stores are cashing in.
The best way to remove oil and fat from your dish is to refrigerate it overnight. The next day, it will have formed a hardened shell on top, making it easier to remove. 👍🏽
Yes! I discovered that years ago and I never enjoyed the spooning grease removal method as something was cooking, stewing etc.. Refrigerate...hardened grease on top...scrape off with large spoon. Easy peasy.
Fat is good for us. They are lying when they say it causes strokes and heart attacks. It is sugar that does that. They knew since the beginning it that it was always sugar. But there are sugar lobbyists stepped in and got it moved to fats. Our brain is mostly fat and water. By depriving your brain if fat you bring on Alzheimer’s. A point to prove this is the introduction of statin drugs. These fight cholesterol. There has been a 1 to 1 relationship between its introduction. And the rise in cases of Alzheimer’s. Remove a patient from their statin drugs that are presenting with early Alzheimer’s and put them in a high fat diet they will reverse the damage done and resolve their Alzheimer’s. I am a medical professional of some 25 years. After much research I have come to realize allopathy medicine Is a terrible form of medicine and leads to 100,000 deaths per year. Trust no one. Research everything. Including what I just wrote.
nkaujhmoobvwj I think that’s a genius idea! I personally don’t have Time to refrigerate my freshly cooked dinner in the fridge till the next day to get the oil off I wanna eat it NOW😂
That recipe was amazing! After prepping the ingredients and browning the meat yesterday evening, everything went into the slow cooker at 8:30 pm. 2:30 am Sunday morning, dinner was done and the kitchen was smelling delicious! Placed over some dirty rice along with some corn muffins.... talking about bone sucking, finger licking good...wow! I am going to look forward to more of your recipes!
Bernie Brown Don't you love the smell of Ox'Tail's when they cook over night an that smell lingers throughout the house and seduces you when you wake up in the morning? Yes Godt my mouth just watered!😂
In South Africa as a social occasion, we cook a stew outdoors in 3 legged ironware pots, over a charcoal open fire. It’s called a “potjie” and oxtail is one of the more favored ingredients. I’m definitely going to give this a try, it seems like it’ll be a nice twist on our traditional recipes. Looks amazing. Thank you

In Jamaica we fix oxtail a totally different way and we season it and let sit over night and we add no sugar, but I am all up for a different way nuff respect from Jamaica
B Russell yes! in the caribbean we cook different from Americans .I think she has some caribbean roots or caribbean friends because she brown her meat like some of us caribbean people....if there's no browning available we do use sugar for browning, but my oxtail would be more brown than hers.
My uncle is a full blooded Jamaican man born in St. Ann Browns Town & he put sugar in his Oxtails & Brown Stew Chicken. Infact he was the first person I have ever seen to do so.....

Hi NyreeFlo, your cooking was definitely on point. You were clean and precise in handling your oxtails.I love all the fine ingredients you had incorporated into the oxtails, and the method in which you demonstrated how to cook oxtails with southern twist. Just some key notes to try in the future : 1) wash with lemon, lime and red vinegar well overnight to get unwanted stuff then wash the oxtails thoroughly in the morning and cut some of the fat as well, not all for the favor. 2) instead of using 2 cups of water; if you like can use red cooking wine instead, it gives it a nice favour as well. 3) You can use a crockpot after brown your oxtails with your additional seasonings to lock in your wonderful medley of seasoning for ultimate cuisine. 4). Have you ever try to incorporated Goya Butter beans with your oxtails, it gives a nice thick and yummy texture to the meal. I hope you did not mind some of ideas and suggestions. This is not criticism, because I definitely love your style of cooking one my favour dishes. It was a amazing! Thank you again for the demonstration 🙏🏾👍🏽

I always put as much garlic as I think I need - and then I add more! Garlic is one of God's gifts to taste buds! I have never used the jar stuff. I usually buy huge nets to hang up in my kitchen
@@HeyitsBri_ I usually buy them by the kilo from farmer's markets and buy the mesh hanging nets separately. I hang my onions too. Add to this I also grow herbs in my kitchen.
The one tthing I've noticed when using jarred minced garlic is this. One has to use a lot more than versus freshly minced garlic. It has lost most of its potency in both flavor and aroma.
I learned about adobo some years ago from some Latino friends and promptly added it to my soul food recipes. There's nothing like it and the right colored wine to bring out the flavors in meats and seafood.
Dish is so colorful is what got my attention from the start!!! I'm sure it tasted WONDERFUL, omg 💯 wish I was there! Thanks for nice video and all the details...

I'm from Ireland so I had to get a little creative with some of the seasoning but wow, this was incredible... I can hear the leftovers whispering to me from the fridge. Many thanks!
@@tierra3200 Hey 😊 Where the spice mix and dry herbs are used I replaced it with 4-6tbsp of a Jerk style dry rub I make. I am so glad to see you rinse off the ox tails. I see so many chefs/cooks (Martha Stewart, Pioneer Woman, Barefoot Contessa...) on t.v. or on videos who don't. 👏 👏 Great recipe.👍
@sam simon ... there's a black lady on food channel I dnt watch at all bc the 1st time I saw here she dnt clean her meat or vegetables.. I always call her sunshine bt that's not her name.... I was told they clean everything b4 their sets....
I don’t think I have ever seen oxtail cooked so nicely. The colors and the fresh vegetables, awesome. I have some in the freezer and I will be following this recipe.
Loved the recipe! It looked delish. In my culture, we are extra with cleaning and we are conscious about too much fat on meat. To help you with fat-put in a pot of boiling water first for a few minutes, then drain. In my culture, this helps to soften the thick fatty pieces and we remove them. It will won’t affect any other steps you followed. Might I suggest limes for the cleaning? Cut them up and use to scrub the oxtails really well to get rid of the grime after they cool from the hot water scalding and unwanted fat removed . Your vinegar and rinsing techniques will soon follow with multiple rinses just as you showed. This will make for less froth. For my paysannes -relax -scalding before properly cleaning is the exception for oxtails only to aid in the removal of fat. Try it! I will borrow your sugar technique and try your sofrito as opposed to mine. Also a spoon does the trick for peeling ginger. You are as obsessed as I am with hand washing and cleaning. Love it and now I’m hungry 💕

I am Japanese married to Antiguan with 4 daughters. My ex-mother-in-law from Brooklyn who is African-American tonight me how to make oxtail. She also uses soy sauce and Worcestershire sauce!! I thought it was just me and her uses those sauce!!
Great to see you wash your meat before cooking; and the way you prepared it, so clean and tidy, all credit to you. My mother taught me too, to brown sugar in a touch of oil, first, then add the meat or chicken, for a nice stew. Your cooking ingredients are similar to what I add, when cooking oxtail, lovely!
My granny and my biologial father would make amazing oxtail... Everyone makes it different.. but as long as its tender, and the seasoning is on point! I'm there!! 😁
My beastie from Trini taught me how to cook them. They tasted so good and they were falling off the bones... after cooking all day but it was worth it! The gravy naturally made itself. I don't remember adding tomato or brown sugar in mine but to each their own. I'm sure the seasoning and ingredients she used made it taste good.
I can’t wait to try this recipe. The young lady that I knew made oxtail for us one time about 10 years ago and I really liked it a lot. It was the first and only time I’ve ever had oxtail she did make it different though. It seems like she used coconut milk. She was from Nicaragua. She said that you have to constantly boil them and change the water. I will definitely try this recipe at sometime or another..
The voice is nice the music is nice and you don’t talk that much about everything that’s why I like the video and the food is really good keep up the good work up
I’m following this recipe today, although in England we don’t have the same seasoning but I’m improvising. My oxtail has been marinating in the veggies overnight in the fridge though. I’m going to try the sugar caramelisation way - I’ve never seen that before and it looks amazing. Thanks for the great video!

Yes a lot of ppl have been telling me about this way. And some even mentioned putting them in the oven and letting the fat melt of this way. Thank you for your Feedback 😊
Sweetheart that looks absolutely delicious, but if I may give you one recipe, instead of adding water, just add cooking wine and the flavor will be amazing, what the wine does is tenderize it even more, and of course the flavor is amazing ,thank you for your recipe.
@@karynvon195 any kind will do as far as cooking wine but what I use is a brand called el mundo cooking wine you can usually find it in this Spanish section in most grocery stores you will be surprised of how much flavor it brings out of the oxtail and you're welcome
Outstanding recipe, you nailed it. I followed your instructions and these oxtails flavor and tenderness beat out restaurant purchased oxtails. Paired very good with white rice due to the amazing flavor of the oxtail gravy.
I loved this video, you cook clean and clearly with lots of love. This took me right back to 1984, growing up in the South Bronx. The smell of Caribbean food filling the hallways of our building; oxtails, platanos and arros con gandules (rice&peas). I can almost taste it already, I will be trying your recipe this weekend.

I followed your recipe with the exception of cooking them on the stove. After i seared them, i put them in the oven because it's just more convenient for me. They came out delicious and my family loved them. Thank you for sharing!
I just want to say that you are especially kind to all of the critical people in your comments. If you don't agree with something, just move on..thanks for sharing "your way" it looks good!
@Lisa Lee I concur, as long as people are respectful. There is no need to be mean with someone simply sharing her recipe for the world to see. That is very kind and generous of her.
I was introduced to ox tail and rice at the age of 50 a Jamaican friend of mine kept telling me he was going to cook this for me and he finally came through. This dish went into my Top 5 of all Time behind My mother's Lima beans and fresh pork neck bones
This was an education for me, I've never seen this way of doing oxtails I'm from the Jamaican school but it really looks interesting and I dare say yes what a lovely colour when you caramelise the sugar. But I agree with another viewer who suggested the cooking wine instead of the water, I can taste how that would make it tastier and help the oxtail tenderise you also would not need much ketchup if any after the wine was added. Gonna give this a try. Keep cooking sweetheart.
D'Nae Lewis I did that when I was 10 🤦🏾♀️🤦🏾♀️🤦🏾♀️🤦🏾♀️ my mom was like “Girl, where’s the juice from the meat?!!” Lol 😂 I was so scared I didn’t know what to say or which way to 🏃🏾♀️

nancy rosado that’s exactly what I was thinking. I’m Jamaican & Puerto Rican but was raised by a step mom from the south. I’m definitely going to make this!
nancy rosado let me know how it comes out and anything extra you did to make it any better if it needs anything extra cause it look amazing the way she made it. I’d just add more garlic and marinate the oxtails over night.
I’ve never had the courage to eat Oxtail Soup. I would make and eat this. Love the music. A well done video. Your soft sweet and friendly voice is so soothing, like talking to a best friend and mentor. The only suggestion I would make is an ingredient list at the beginning. God bless you.
Courage? It literally tastes like beef. If you enjoy steak, ribs, hamburgers... you'll enjoy oxtails. They have LOTS of fat but there are lots of ways to reduce the grease factor. Cooking them takes forever but don't be afraid to eat em. You'll love em!
Yes food preparation and presentation is everything. And you succeeded with that. The whole video is great! Thanks, i will try oxtails for the first time in my life. And i will be using your recipe.

I used your recipe to make ox tails for dinner today. I used my slow cooker. I put them to cook last night at 8 p.m., i set the temperature on high. When I left to work this morning at 5:30 a.m. I changed the temperature to low. The meat is falling of the bone. I changed a few ingredients from your recipe based on what I have used before. Your recipe has been the best one I have used so far. Thank you for your video and clear instructions. I will use your recipe for years to come. Wishing you the best.

A good cook makes do and knows what makes other foods taste good together. There is some science to it, but that can be learned along the way.
I know I’m not the only one that was lulled to sleep by that music and the sound of your voice. That’s a great looking pot of food you got there, great job.
Yes there a correct way to cook oxtail. All that sugar salt and vegetables over do.Oxtail is very hard to cook. You have to use a pressure cooker or let it cook for a long until its tender. That almost look like gumbo.

everyone keeps saying Jamaicans are being negative but I haven't seen it, but as a Jamaican I think this is an innovative way of doing it and I will be trying this recipe!!!!
Facts ! Looks delicious
you do it? how was it?
That's the way oxtail is cooked in the leeward Islands.. We burn the sugar and add the meat along with all the other ingredients then we add liquid and seasonings...
I was just going to ask if she was Jamaican because this isnt how I remember my Jamaican mother-in-law cooking oxtails.
@Curtis Williams that's the dumbest thing I've ever heard in my life.
I'm polish, and oxtails were a huge part of my childhood, gizzards also. Old polish neighborhoods in Wisconsin eat them everyweek😊
I love your feedback 😊 thank you ☺️
The grocery store we go to has oxtail but very pricey, I can never figure out why.. I have to start trying to venture out to other grocery stores I guess.
You are right , when they know We are buying it the price increases..
Easy peasy.
or ice a medal spoon to get it off. lol.
Yeap. That's the best way.
Trust no one. nkaujhmoobvwj I think that’s a genius idea!

Bernie Brown Hello friend merry Christmas 🎄 have a great day ❤️
In South Africa as a social occasion, we cook a stew outdoors in 3 legged ironware pots, over a charcoal open fire.
It’s called a “potjie” and oxtail is one of the more favored ingredients.
I’m definitely going to give this a try, it seems like it’ll be a nice twist on our traditional recipes.
Looks amazing.
Thank you
All I have to say is I’m sure everyone have there own way of cooking for all you Jamaican people that’s commenting I’m sure all of you don’t cook the exact same way so please stop the negative comments Jamaican people are not the only people that cook oxtails black Americans go back to slavery days cooking oxtails so please stop it and all black Americans don’t cook the same so respect the way people do things the way they like stop judging just watch the damn video
And shut up
But Jamaicans cook the best oxtail for sure 😁

I see alot of friendly, helpful comments and fresh side recipe ideas here in the comments. But it is so easy to slide to the negative when you are raised to think that **that one way is "the right way."** So I guess I'll take a deep breath and go pour myself a nice tall glass of ice cold, Shut the hell up.
When your a good cook and know what you doing there is no need to measure the ingredients. We never do from the Islands great video loved it job well done
I measure when I bake cakes and stuff otherwise you can screw up the chemistry of it but for regular savory cooking, just taste as ya go!
True, day! I think the best compliments is my da (Happy Birthday). He would always say girl ,(you put your foot in that) you cook like your mama. One reason I was able to cook that down home food. This is going to sound bizarre but peel your ginger with a spoon. You'll be shocked how well it works!
I have heard this for years but never tried it until yesterday. It was the easiest I've ever peeled ginger.
That Ginger just does something that make it taste so good....
Yes!! It is so much easier!
Yup!
Agree. Best way, and quick too. It only removes the skin and leaves ginger intact.
Watching you, listening to your soothing voice and reading through the comments has been "sweet fruit to my soul" Thank you.

In Jamaica we fix oxtail a totally different way and we season it and let sit over night and we add no sugar, but I am all up for a different way nuff respect from Jamaica
Thank you 😊
I actually like a little sweetness to oxtail I think it makes it more savory and the meat more soft.

Where do you get them?
I do too! I love it.
The garlic in the jar is for us lazy folk
@@HeyitsBri_ I usually buy them by the kilo from farmer's markets and buy the mesh hanging nets separately. I hang my onions too. Add to this I also grow herbs in my kitchen.
The one tthing I've noticed when using jarred minced garlic is this. One has to use a lot more than versus freshly minced garlic. It has lost most of its potency in both flavor and aroma.
All I can say is I like how clean she is. I've noticed how clean she is with the food and how often she washes her hands. I do the same thing myself.

Have faith in JESUS CHRIST as LORD and SAVIOR for HE SAVES from hell❗️
*What is the Gospel?*
The true gospel is the good news that God saves sinners. Man is by nature sinful and separated from God with no hope of remedying that situation. But God, by His power, provided the means of man’s redemption in the death, burial, and resurrection of the Savior, Jesus Christ.
Ephesians 2:8-9
For it is by grace you have been saved through faith. And this is not your own doing; it is the gift of GOD, not a result of works, so that no one may boast.
Romans 10:9
9 because, if you confess with your mouth that Jesus is Lord and believe in your heart that God raised him from the dead, you will be saved.

The Jamaican school does not use browning = caramelized sugar

When I left to work this morning at 5:30 a.m. I changed the temperature to low. The meat is falling of the bone. I changed a few ingredients from your recipe based on what I have used before. Mind you I just started cooking over a year ago. I used beef broth instead of water, I used fresh thyme instead and I floured the ox tails before I browned them. Your recipe has been the best one I have used so far. Thank you for your video and clear instructions. I will use your recipe for years to come. Wishing you the best.
Hi Khaleesi 😊 I’m so happy you enjoyed the recipe. That makes me happy.
Totally different from how we cook in Jamaica. Really think you are a master of your art. Enjoyed your presentation. Loved your voice ,soothing. Great choice of background music. ❤❤❤

Yes you really did a great job on this made me really hungry 😋
I learned to cook it another way but I am definitely going to try it this way too!!! Oxtail is just wonderful
I agree 100%
Im a Chef for over 20+ yrs. & Yesss u did a Amazing job. You go Girlfriend🥘🥘?👍👍👍👍I do mine very much like you & I dnt measure shitttt either😂😂😂😂
Chef or not, if you have been cooking long enough you really don't need to measure or have a recipe book. Some of my greatest meals, bread's, sauces have been made by using what I had. A good cook makes do and knows what makes other foods taste good together. There is some science to it, but that can be learned along the way.
Have made this numerous times and it never disappoints. I dont make them any other way anymore. The best oxtails recipe hand down!!! Thanks 😊
So glad you enjoyed it 😊😊😊
I know I’m not the only one that was lulled to sleep by that music and the sound of your voice. That’s a great looking pot of food you got there, great job.
Thank you 😊 Lol no your not the only one... I’m so happy you enjoyed it
Her voice is so inviting and soothing as she explains each step.
There's no one correct way of cooking oxtail. Just do whatever works for your household and taste buds
thats right paul i boil and then bake mines😚😚😚
@Yemi sounds good to me
Yes there a correct way to cook oxtail. All that sugar salt and vegetables over do.Oxtail is very hard to cook. You have to use a pressure cooker or let it cook for a long until its tender. That almost look like gumbo.
Periodt 😏
Right I brown mines and then in the Crock-Pot or now the instant pot
I will be trying this Saturday..
I can't wait, it looks so good
This was so good and flavorful. I ate this with cabbage so good. Thank you delicious

Sweet voice with a sweet dish ,thanks will try very soon 👍🏾😀
Girl, oxtails are bigger, fresher & cheaper at the Mexican stores!
Bet! Which Mexican grocery store? I see your name says California so I’m assuming you live in Cali too.
Where do you look for a Mexican market. Looks yummy, tks
Gotta be careful at those stores... You dont know where they getting that beef from.. Ijs
@@NyreeFlo go to Parks Market on Manchester and Crenshaw or Ranch 99 market in Gardena. They're better than other stores.
That’s good to know! Thank you. The regular grocery store charges too much!
