Lemme tell you, as an aficionado of great oxtails I followed this method to the letter last year (with the exception of some of the powdered seasonings - all high in sodium, some redundant; Flavo-Rice being the best) and gave out batches to friends and family for free since I had about 20+ pounds in the freezer...and I've been dodging all of their efforts to make me make them more...they've even offered to buy them for me to personally prepare and cook for them. I've sent them both a link to this video since then. This method is so simple and such a great improvement over my previous browning and slow cooker method. Only thing I'd say is you don't need ALL of those sodium-based powders...Flavor Rice is great, even the Maggi liquid is salt-based. I'd skip the Lawry's (I did). You definitely don't need a packet of Oxtail seasoning with all the other spices. The first ingredient in all of them is salt; pick one or two which you find great and go with those. You don't need five or six salt-based seasonings to execute this. You WILL however require ketchup. I like a ketchup with no corn syrup for this recipe, save those other ones for your burgers, hot dogs, and fries.

Interesting method. In Grenada we put sugar in the oil to make it caramelize (brown) first, then put our oxtails or whatever meat we're stewing to braise in the browning and get that dark rich color and flavor. Good to see another method of cooking this.

One of the best parts of my trip to Jamaica was the food and the people. We got the same taxi driver for the week n he took us to all the regular Jamaican spots cuz he didn’t want us to go the tourist places. The food was absolutely unreal n the people were amazing. I grew up around a bunch of Jamaicans up here in Canada n I felt at home over on the island. Honestly the last day I was there I straight up cried cuz we were leaving that evening. I would love to live in Jamaica but not in one of the expat neighborhoods. I wanna live with regular Jamaicans. Also people need to know about how most beaches in Jamaica are privately owned n most Jamaicans can’t even enjoy most beaches. Bless up Haile Selassie
