You can also do a lower temp an cook longer. My cast iron also has a small gap, so stream escapes. If you don't have that issue, you will not need to add water as often. Feel free to add butterbeans the last 30-45 min of cook time.

I pay $15 a pound. After seeing this video and sharing it with my granddaughter who lives in SC. We definitely going to be buying beef shanks. Thank you for sharing

Man this is a great idea. I make oxtails once per year for my late father's birthday. And every year it hurts cuz I can hear his voice saying "that dont' make no sense how expensive them oxtails are lol". I'm gonna try these shanks!
I wish he was still with you to try these beef shank in place of ox tail! He would be asking it more than once a year for sure! Bless you! Sound like you had a great dad! 🙏🥰
Looks so delicious. I love oxtails. I’m 76 and remember buying them when they were just a few dollars for a huge pack. Well, those were the good old days. Those cooking networks sure killed the low prices when they took all the cheap cuts and turned them into gourmet meals. So sad! I’m going to make your recipe for sure. Let’s hope those tv chefs don’t catch onto the beef shanks 😅 thank you!
Don't be fooled they do not taste like oxtails
Greetings my dear,
Your grandfather is right because back 200 years ago oxtails was what the slave master gave the slaves to eat black people have been eating it for years even at one point of time in a meat market they will give it our free because it was considered waste. I have some age on me and I remember my grandmother sent me into The meat market and the man will give it to us free because they consider it as waste big shanks is the legs of the cow 🐮 any steel beef. But when a certain nationality realize that Africans and African Americans eat them on a daily basis they begin putting them into fine dining and charging a large price for them shooting the market value up on them. Beef shanks are delicious I have been eating them for years. It started out being wasted and given to the slaves,, then it became free at meat markets,, then they start charging inexpensive prices because it was waste, then the price went up due to the volume of people purchasing it. Just enjoy the beef shanks while they're inexpensive because the market is going to get in wind of people eating beef shanks and prices will be driven up on them. In the event God forbid it happened just purchased you an inexpensive pot roast cut it up in pieces and put your vegetables in it and make a stew😊✌🏽😍🙏🏽
How do you know@@irvinmartin4936
In Pilipino cuisine , oxtails are a must have cut in a special dish , our version of " curry " using peanut sauce. We supplement that lack of meat by using beef shank , tendons and beef trotters for its collagen , plus tripe .
So thank you for showcasing beef shank.
I like how she sanitize everything ❤❤❤
“A teaspoon from your spirit” is what I’m going to call that from now on. I felt that in my soul
OMG - this is probably one of the most delicious meals I have ever prepared. Thank you!!!!
Awesome!!
I came across these in an international store and decided to give these a try. I put them in my crockpot with my seasonings and babbbyyy!!! These hit the spot with some white rice and steamed vegetables. Give these a try. If you cook them right, you will be delighted in the taste and the meatiness of these shanks. And the cost is wonderfully cheaper than Oxtails.
Looked so delish!! 😋👍👍
Uh, uh. It's about to be a run at the store on beef shanks.😂
Beef shanks are my meat for my homemade soup.
I thought these were my secret!😂 Like v j cooper, I use my crock pot and they are "bite your fingers" good! Now what's our substitute for chitterlings that are some places 35 dollars for the red bucket and some of the other cleaned ones aren't really clean so you end up with a handful.😢
This looks delicious!! Funny how Oxtails was considered low income meat years ago. Now you’re paying an arm and a leg for 2 big pieces and 4 pieces of the cartilage bone. Thank you for providing an alternative, this looks very tasty and hearty. I will do this and add potatoes.
Thanks to Emerald. The secret got out and it has never been the same.
Crawfish, too. They used to cost next to nothing, but now people act like they're miniature lobsters. What's next, chicken thighs?🤣
Chicken wings was once the throw away of the chicken. Now they cost about the same as the breast. You used to get hammocks for next to nothing. Saw Bobby Flay buying some a few years back and now they're expensive.
Black folks demand caused it to become expensive
@@larpsim Nope, I haven't seen so many white folks come and order or ask about oxtail. They ask about 3 things: bone broth (Korean specifically), pho, beef patty. They always mention some "fancy to them" way they had it at a restaurant or some viral video. However, of course everyone is to blame though not just one demographic. The demand is up across the board. When I saw it being the meat of choice for pizza toppings a while back, I knew things had gotten out of hand.
😫🤣😤🤣
That looks so yummy! I like beef neckbones as a replacement as well. Nice and cheap, but meaty and the benefits of the bone.
Absolutely!! Beef neck bones!!!
Isn't crazy what happened with ox tails? Ten years ago it was just a "butchers cut", saved for the butcher, as people didn't want it. It was the scraps people thought were horrible. Next thing we know the people on the cooking channel started using it and then boom... and I do mean BOOM! As it went from $2 a pound to $12 a pound! It's just not worth it anymore. I love how you did such a classic simple beef shanks braise. I'll admit I do like the pressure cooker method these days, but I still sometimes go old school and throw the whole thing into the over too. Either way, it always makes for an incredible dinner.
I grew up eating ox tail in the 70’s and 80’s I’m sure beach bones etc…
We can't have nothing. THEY took kale that I hated as a child & made it into a salad cause THEY couldn't wait & couldn't get the flavor we did & the price went UP!!! Chicken wings are on the stock market now & even sent a woman to jail for 9 yrs. Now if you want Oxtails you have to find some that "fell off the back of a truck" or take out a loan.
The other reason why oxtails went up in price was all that talk about eating collagen to improve skin and delay wrinkles. I don't know if that is true or not, but all that talk drove up the price of oxtails.
Oxtails were gentrified and gourmet chefs drove up the prices😢
Pretty much all of our food!! Add ground turkey also!!
I’ve done this and you are absolutely right, no one noticed at all and they were ❤️🔥❤️🔥❤️🔥
You are one of the mature adult programs on TH-cam that I am proud of proud to be a subscriber.
Hey Camirra 🤗 The prices for Oxtails are ridiculous. I guess its a delicacy now that’s why it is sooo expensive! Beef Shank? Honestly I don’t think I’ve ever seen it in the grocery stores. I will look closely the next time I go.
Yours looked 😍. I definitely like Jasmine rice with Oxtail but mashed potatoes will do too or cheesy Au Gratin potatoes 😋.

I started using beef shanks years ago. Growing up my grandfather had a cafe in Albuquerque, NM called Fin & Feather. One of his highlight meals was oxtails. Oxtails was a "cheap" meat at that time and was what he made money from. We grew up having oxtail stew on the regular. When oxtails started being featured on the food channels and started going up in price I started thinking of alternatives. Beef shanks.....so good and you will find the best prices and always on sale at your local mexican market. Also after braising put in crockpot on low for 6 hours....Super tender.
We call this beef shin in the UK and it's the best meat for stews PERIOD. If you know anyone who hunts, venison shank is also delicious and not as prone to drying out as most venison cuts. Love your channel and would love to see more Caribbean/fusion dishes especially some of the Indian-influenced dishes like Trini pelau.
i know how to make Trini Pelau! I'll have to show that recipe! Love mine with chicken
Who ‘hunts’ venison in the UK?
@@nicolad8822😅 Believe it or not, they still hunt in the UK. You probably visualizing the city but they have wooded areas with venison and other game just like the U. S. and Canada
Facts!
Same here! Not from the UK but we also call it shin.
Omg! It’s not a good idea to watch this type of food when you’re hungry. . . . . This is absolutely marvelous!!!
Yesss, less fat and more meat too! Have been recommending shanks as a substitute for ox tails for years!! Ox tail prices are tooo high. Now, if we could just find a substitute for chicken wings.😊 Chicken wings were really cheap before the Buffalo wing craze...
Haha, "Baby, that marrow is a flavour shot" This is the Best description ever!
This is very similar to how I make my oxtails. I’ve been looking for alternatives since oxtail prices have skyrocketed. Perfect
You are absolutely correct! About a year ago I sent my son to get me some Oxtails. I was a little pissed when he brought me back beef shanks instead. But once I cooked them....I was like damn! 😋😋I should have been buying them a long time ago!!!
Your son said he wanted some meat.
@@Abena_Goddess87 🤣🤣 Actually he's Pescatarian and doesn't even eat it. (More for me)!
Apologise to your son coz I know you were giving him hell for it. 👀
I'm from the Caribbean, and this meal gets 10/10 for me. However I prefer to eat beef with ground provision like sweet potatoes or cassava stir fried..👍🍻
I'm a gay Lithuanian man and while on holiday in Thailand I met a guy from Indonesia and he talked about cassava being a staple food in his country. He said cassava is good for men who suffer from impotence and it's known to restore ones virility.
I am not from the Caribbean, but I do agree that sweet potatoes and cassava is a good match for beef.
I've been making Osso Bucco, beef shanks, soup for years. Good price, good flavor. Makes a good stew, or vegetable beef soup and beef barley soup.
A year or more ago I made curry chicken with a couple of scotch bonnets, I messed around and lost two of them. I and my son who hates spicy food found them. Pray for my household is what I’m trying to say. lol great recipe thank you for sharing.
Growing up my mother always used beef shank for beef soup, the meat was delicious
This is what I use for my soups. Beef shanks
I saw those oxtail prices and was about to walk out until I saw the shanks. Came home and ran to ur channel hoping that u had a recipe (the only TH-camr I trust blindly when it comes to flavor) and you just posted this! It was meant to be. I will be making this tomorrow with purple cabbage and rice. I plan to follow ur steps but have a nice onion gravy instead! Thank you!

There is purple and orange too!
My mom uses beef shancks in her beef and veggie soup. I've never thought about baking them in a oven..I might try it now that I've watched your video.😊
Mom used used beef shanks all the time. I use mine in my vegetable beef soup, and as the meat for my Hungarian goulash. I let it braise for a while to get them tender then take the meat off the bone and and cut it up for my Goulash. Serve over mashed potatoes and the thickened gravy.
As my Mom did, I've only used beef shank for soup. This was a great video and I'm giving this a try.
Myelinated Beef Shanks …. I Love it 😂🤣😂
One of the ladies at work told me that she remember they used to get oxtails like 10 cents a pound but now that it’s all the rave it has gotten so expensive she said she remember days when people did really eat oxtails except if you were poor. Like how fish eggs are now caviar and where as lobster was poor man’s food now you can barely even Looks at it let alone purchase Funny how times change. So delicious thanks for sharing
A clean oven. A must to enjoy that goodness.
WOW... Looks so delicious.

I never thought about beef shank...
So Excited about doing this.
Beautiful. I’m going to make this meal when I move into my new place in 2 weeks.
I’m in the middle of your tutorial, and I LOVE IT!!
My advice, don’t say ‘blood’. The red liquid is not blood. It’s just enzymes breaking down and will turn brown when exposed to oxygen. It is still safe to consume. Just cook it low and slow for pot roast. You can even brine and slow cook all at once.
Amen, it drives me crazy when people keep referring to myoglobin as "blood", when it very much is not...I see the same nonsense when people cook steaks smh 🤦🏾♂️
Thank you for pointing this out.
Osso Bucco is a dish I make that I found online from an Italian Cooking chef. Osso Bucco means HOLE IN BONE. The Hard Rock Casino had a new Italian Restaurant and offered it on the menu. It was priced at $39.00. I made mine the way the Italian Chef showed me and it was as tender as could be. Served with a mushroom risotto and brussel sprouts. It was delish. Oxtail went sky high. I like that too but too expensive at this time.
You are the REAL MVP on today!
Never thought of this. Thanks to you and Ron! 💙
Holy crap! Yr the first person I’ve seen use Maggi and Browning!
The price of shank will double. Because of these videos.😊

@@krystalking4902 So are you saying is not really much cheaper than oxtails?
for beef, $6-7 lb isnt bad. so no i dont think shank is high. esp since its mostly meat and not bone.
My mouth is watering. Man that lookss delicious.
You can buy little muslin drawstring bags for the spices you need to pull out before serving. They are cheap and can be reused a few times.
thanks for the tip!
Girl that looked good not a big beef eater but here in Texas they want to give you beef or pork I’ll stick with the beef and try your recipe ❤
I think beef neck bones should taste even closer to oxtail..the meat would have the same texture. Those cuts look great👌👌
I agree. Love meaty neckbones. I do different color gravies depending on the sides [brown, 🍅 red and curry]. With the shanks I only do a dark gravy.
I cooked this yesterday but I cooked the meat and then cut it up and made beef vegetable soup. It was really good
Yes, beef neck bones are off the chain, too. I cooked some & my sister asked me what they were. I boiled the pot of neck bones for 30 mins., took them out of the pot, put them in a pan with bar-b-q sauce for a little over an hr. and Lord,Jesus. 😊

I tried riding the oxtail craze but mines didn't turn out that good. I didn't have any experience in making oxtails and that science project just rendered greasy meat. Hence, I walked away from that experience thinking Oxtails are highly overrated and something I don't necessarily have to have in my life. I will try your recipe cuz when I spend my limited income on meats, I'd like more options. I never knew about purple cauliflower and it will be on the look-up list. I like the gravy. My kids like potato with it. They be knocked out! Got to have the wine! The alcohol will be cooked out but it adds nice flavor. For those who still don't like it aged balsamic vinegar is a good substitute.
Peas and carrots or string beans are a good veggie to accompany.
Oxtails got high because the Jamaicans made it popular. I didn't hear about it until i went to a jamaican restaurant and lived in a Caribbean neighborhood
The price jumped because the stores decided to gouge us, same as chicken wings.
@@ndn1958CORRECT. And it wasn't Jamaicans or any other Black folk that drove up the prices...wings, oxtail etc were SLAVE foods. We been eating these cuts and other cuts LONG TIME because that was what was given to us. THEN white folk found out how good it was and took over, driving up the prices.
@@ndn1958thank you! I keep seeing people blame certain cultures for rise in prices. The average person doesn't control distribution and vast farms of animals. If prices change, it's because the corporations and suppliers of all these meats decided to suddenly raise prices, not coincidentally after some celebrity starts using certain cuts!

Great!! I got so hungry watching this! I love that you are not afraid to use store-bought mixes instead of creating them all yourself. I am a cook and until a few years ago I made all these mixes - roasted, smoked, mixed, even raised the herbs and spices. In the real world no one cares that it's a homemade spice. Great idea for the shank. I'm a huge fan of oxtail but the amount of meat is skimpy. Thanks a lot. (My wife said, "I wish you wouldn't watch that before preparing dinner because we have all these leftovers in the fridge." lol)
Oh yes ppl care
The taste is incredible
Store bought are tasteless/terrible
Flavorings make or break a dish or a sauce (and sauce makes or breaks the dish)
Now her msg stuff she adds (this vid and others), just leave out

So many commenters here have stated that beef shanks are indeed great substitutes for ox tail. So big thanks to Camirra for bringing this to my attention.
Lamb shanks are delicious but expensive also. I used to be able to afford them about 22 years ago. Meat has become so expensive that I can barely afford chicken or turkey now. I have been eating beef shanks for 29 years now and it does have a similar texture to ox tails. If you shop at Sam's Club, look for beef cheeks if you like gelatinous grissles and very tender meat
