  • After many episodes dedicated to Neapolitan pizza, for the release of his brand new book Davide Civitiello shares with us the recipe of the baking trey pizza. Starting from an 80% hydration dough with a "biga" (indirect method), the master pizza maker creates two crispy and colorful pizzas designed for the home oven: a classic and delicious white pizza, and the "baciata" (kissed) one, made up of two overlapping doughs, ideal to be stuffed, typical of Rome.
    INGREDIENTS
    X 1 baciata + 1 teglia
    Sheet-pan 40x30cm
    For the biga
    Strong flour 500 g
    Water 250 ml
    Active dry yeast 5 g (fresh brewer's yeast 10g)
    Per l’impasto
    All the biga
    Strong flour 500 g
    Salt 25 g
    Acqua 550 ml
    Active dry yeast 5 g (optional)
    EVO Oil 50 ml

      Video fantastico come tutti gli altri! Italia Squisita canale di qualità seguito anche all'estero, sono un vostro grande fan ed ho visto tutti i video! Mi rattrista che abbiate "solo" 700000 iscritti ma sono sicuro che cresceranno! Solo una domanda: La traccia ad inizio video mi suscita un ricordo di quand ero bambino con il mio nonno napoletano che non c è più.. Sapreste dirmi il titolo?     Non mi è chiaro però se fai lievitare sia la massa che i panetti poi a t.a. oppure a temperatura controllata! E se a t.a. quanti gradi più o meno perché chiaramente in inverno e l'estate è cmq diversa la temperatura che abbiamo in casa.Spero che nel libro sia specificato. Grazie mille per tutte le tue lezioni sei il migliore secondo me per come spieghi e per la bravura.

    “Just One Bite Please” has a Detroit pizza style recipe that is wonderful..several resting periods and an overnight biga make a fantastic crust, but as you say, the home oven can use olive oil in the pan to create a fried crust with its own special crunch..and fluffy, moist, light interior..so..so delicious!

    Great home ciabatta recipe by Brian Lagerstrom online, I finally learned exactly what you are saying..the high hydration needs a much higher speed and more time..it’s amazing to watch the gluten start to strengthen, then the dough starts to ball, then climb, then finally clear the bottom and slap around. Best ciabatta I’ve ever eaten, much less made! It’s so wet at first, you think “there’s no way this will form a smooth dough!” but like magic, it does!

    “Se si vuole un prodotto pronto per essere utilizzato in 3 ore, aggiungere 5 g di lievito all’impasto. Se si hanno a disposizione almeno 8 ore di lievitazione, è possibile NON aggiungere il lievito e far lavorare solo il prefermento”.
    (Cit. La pizza fatta in casa, Italia Squisita, pag 60)
    P.s:
    Nel bel libro “La pizza fatta in casa” Davide Civitiello spiega ed illustra molto bene come realizzare focacce e Pizza in Teglia: normale, baciata, romana e senza glutine, da pag 60 a pag 75 📕 con impasto sia diretto che con Biga o Polish.

    One thing I think would help is a video in the definition of what can be called a pizza to italians. Sometimes, for us, non italians (and honestly italians as well) something that some would call a focaccia is a pizza, other times a flatbread, just like this one, others say a pizza must have the cornicione

      this is a pizza in a pan often the cornice must not be too high but if you like it you can always do it! !

      Being Italian, I can tell you that what you are asking is something that many Italians struggle to understand as well. The reason is that many Italians have the stupid and ignorant thought that the real Pizza is only the one from Naples/Napoli, but that's really really wrong.
      Pizza evolved through time and there is no more a "real pizza", but there are many different kind of Pizza, all different from each other.
      Making you some example:
      - Neapolitan/Naple traditional Pizza = Soft and is absolutely NOT crunchy and has a medium size crust. (not flat but not even super big)
      - Roman Pizza = Contrary to the traditional Naples' one, which is stretched out using hands, the Roman one is stretched out using a rolling ping. The pizza will be flat but super crunchy and not soft at all.
      - Pizza in teglia (big pizza cooked in a baking tray) = This is a big pizza cooked in a baking tray and made in a way that will be crunchy outside and soft inside (therefore a mix)
      - Pizza fritta/fried = Pretty much the same dough of the Naples Pizza, but the crust will be a little bit smaller in height, that is friend and then you put what you wants above (like Ricotta)
      - Pizza a canotto (canotto is an inflatable water veichle), which has the same dough of the traditional one but the curst is really really big.
      - Special degustation pizza, created with special dough and cooked in special way OR seasoned in special way to go out of the tradition and experiment (some people cook a single pizza in 3 different ways at the same time, like steam -> then fry -> then finish in oven, super hard to do but super special and tasty)
      There are then some Pizza-Non-Pizza dough, such as:
      - Calzone, which is a Pizza with a dough (similar but not the same) to the traditional one and that is seasoned/filled with ingredients and folded in half (there is no crust since it's pressed to make sure the pizza stay closed and what's put inside remain inside) and cooked in oven OR friend (can be both, based on what you prefer)
      - Pizza bread/Panuozzo, pretty much a special dough that will incorporate a lot of air and therefore will be really soft and is used as a bread to be filled with ingredients like a "sandwich" ( imgur.com/fAuxLhk )
      - Etc
      We could continued for HOURS and there would be many other kind.
      New York Pizza or Chicago Pizza are as well kind of Pizza, just developed with a non-italian mentality and approached in a totally different ways, but that does not mean they can't be called Pizza. If you see any italian telling "REAL PIZZA IS ONLY in X PLACE" they are just ignorants who think our country is the best in the world in either everything or cooking, but that's just cause they have not travelled outside their own house in their whole life.

      Pizza napoletana soft round and a little crust
      Pizza napoletana contemporanea same as before but big round crust both cooked at over 450 degrees
      Pizza tonda romana crunchy thin round pizza
      Pizza in teglia romana is pizza in a tray it is high water content dough that is crunchy at top and bottom but soft and airy very alveolated inside it could be 1cm high up to 3cm/
      Pizza alla pala same as pizza in teglia romana but cooked directly on a refractory stone
      In the end focaccia is a low water content dough cooked in a tray, very soft and with little compacted alveoli. Then you can make variation of those and there is everything in between but those are the 6 main categories. You can have different ways of making the dough like biga poolish or direct mixing and it changes something in the product, it’s all pizza you have to add something after pizza

      Puoi fare in entrambi i modi dipende se la vuoi più croccante o morbida la mozzarella meglio qualche minuto dalla fine

    Ciao stasera ho fatto il tuo impasto perfetto tutto dall'impasto alla lievitazione ma nel forno la baciata si è ritirata leggermente mi chiedevo che tipo di errore posso aver fatto.Premetto che ho inserito una parte di tipo 2 e non ho usato farina Caputo non sono riuscita a trovarla.😊 bellissimo il libro secondo me uno dei migliori e ne ho letti già qualcuno.

    In un impasto che differenza c'è nel cominciare a impastare partendo dalla farina aggiungendo acqua; oppure cominciare dall acqua e aggiungere farina. Grazie

      Se devi fare impasti con alta idratazione consigliato partire dalla farina in modo che assorbe gradualmente, invece impasto tipo pizza napoletana 60% 65% di idratazione puoi anche partire dal acqua !
