  • Stefano Callegari, master pizza maker and inventor of the famous Trapizzino, opens the doors of the "Tonda" pizzeria to recount his Apulian (or Barese) focaccia.     Excellent basic products, a good oven and a skillful and passionate chef like Stefano Callegari are the ingrediënts for so many Italian classics. That's why I love this country so much. I can't wait to spend another long holiday in Bella Italia and taste all that gastronomic goodness.

    Puoi anche applicare la trasformata di Fourier e passare dal dominio del tempo a quello delle frequenze per poi ritornare nel dominio del tempo durante l'assaggio. Il dominio delle frequenze è indicato durante la cottura, il passaggio di calore e quindi di energia tra gli ingredienti e la massa della teglia. Cmq buona focaccia bravo maestro !

      Bisognerebbe anche analizzare il ciclo di Carnot inverso per vedere quanta potenza elettrica deve assorbire il frigo per far riposare l’impasto

    It's amazing how creamy, wet and pliable his dough is after adding the type 1 flour and fermentation. Was that bowl oiled up for it to fall out like it did without the gluten strands?
    Looks amazing when finished. Must try to add tomatoes to my classic Ligurian focaccia

      He oiled it at an earlier stage however each stage of the video is s different batch of dough. If a gluten network is developed enough, it won’t stick to a slick container like that plastic bowl. There’s a great video by _Baking with Joyride Coffee_ that explores this called “No more sticky dough.”
