packed meals to take to uni or work! super easy vegan recipes

tofu scramble breakfast sandwich
a serving of your favourite tofu scramble (mine is this one: www.amandaduck...)
bread/toast of choice
vegan mayo
cucumber slices
pickled red onions
lettuce
*notes: making the scramble extra thick prevents the bread from getting soggy; wrapping up the sandwiches in parchment paper helps them stay put together in the box and makes eating a lot less messy
spiced apple overnight oats
2 apples + 2 tbsp maple syrup, cinnamon, cardamom and salt to taste
bake at 200°C for 20 minutes
1 cup (100g) oats, pinch of salt, 1 tbsp flax seeds
1 container (400g) soy yogurt, 2 tbsp almond butter, 1 1/2 cups (375ml) soy milk
*notes: works just as well with pears instead of apples, any syrup of choice, and any other nut butter
tofu & rice bowl
1 block of tofu + 1 tbsp soy sauce, 1 tbsp rice vinegar, black pepper, grated ginger; fried in olive oil until crispy
basmati rice
cucumber, radishes, fresh parsley, sesame seeds
*notes: the tofu can also be baked, but I find baked tofu to get dry quite quickly when stored, so I prefer the pan-fried way
corn pasta salad
cooked pasta of choice
chickpeas
fresh corn
cherry tomatoes
fresh basil
red pesto
arugula
lemon, for squeezing on top
*notes: also works great with lentils, green pesto and baby spinach
curried cauliflower with rice & lentils
cauliflower and yellow onion + olive oil, salt, 1/2 tsp curry paste (or curry powder)
baked at 200°C for 20 minutes
yellow rice and lentils (rice, lentils, salt, turmeric, water)
roasted beets
apricot chutney
tahini (on the side)
*cauliflower can be subbed for carrots, bell pepper, zucchini; instead of the chutney, a yogurt-based dressing would also be delicious
falafel salad
pan-fried falafels
curried quinoa: quinoa, cooked with 1 tbsp tomato paste, 1/2 tsp curry paste and salt
mixed with bell pepper and red onion
soy yogurt + fresh parsley, garlic, lemon juice, salt, pepper
tahini (on the side)
*notes: the falafel can also be baked, but I find baked falafel to get dry quite quickly when stored, so I prefer the pan-fried way
veggie noodle stir fry
instant noodles
carrot, ginger, garlic, cabbage; fried on high heat until crispy
edamame
fresh parsley
sauce: 2 tbsp hoisin sauce, 1 tbsp soy sauce, black pepper, 1 tbsp water
*notes: rice noodles also work (or regular pasta, of course); edamame can be swapped for tofu; you could also keep the components separate in the lunch box and shake or stir before eating
