If you tried foods from all over the world in America it’s not the same. You have to actually go to the countries and try them. The quality is usually much better in the original homelands.
My Mom was from Wilson, NC. There is (was) a place there named Parker’s or Perkins, I do not remember. But that was, hands down, the very best barbecue I’ve ever tasted. I’ve had barbecue in various American states, China, Cambodia, and Thailand. NC’s is the best!
Parker's is the best. We'd always go as a big family and get the family style meal. YOu get all you can eat fried chicken, barbecue, potatoes, slaw, brunswick stew and corn sticks. If Parker's ever closes, you know the world must be ending.

Yep when I was little kid and my grandpa was still alive he took me to a lot of the good bbq places around here, C's bbq, and other little older wooden BBQ place in mocksville, couple places in wilkesboro, hickory, and Salisbury, but out of all the places Lexington BBQ was his favorite, and the best in his opinion.

You're eating the wrong bbq. PLEASE trust me. Drive 1-2 hours out of larger cities, stop at one of the 'Mom n Pop' shops along the road, and give it a try. Its unbelievable. I wont even pretend to know what they do to the meat.

My family has been in the Deep South for around 400 yrs, Alabama, Tennessee, S Carolina, and Georgia ALSO have a very rich and varied BBQ history. Brunswick Stew, from Brunswick GA for one. Alabama white BBQ sauce, for another. Seafood BBQ from the Gulf, etc. I love all of the variety of meats and sauces from around the country, not just one style.

Alabama needs their own BBQ Trail like North Carolina. Some of the best BBQ places I’ve been to have been down in Alabama. Rusty’s BBQ in Leeds, Bob Sykes BBQ in Bessemer, Tim’s Walk Hard BBQ in Leesburg, and The Brick Pit in Mobile.
I am a duel certified BBQ judge. I went on a BBQ trail through NC myself a few years back. I am tried to pick the best out of 6 samples, it isn't the one that I like the best, there is a big difference. One of the BBQ joints that I did go to in this video was 12 Bones. Highly recommended, but TO ME, it was a big disappointment, but that is my opinion. For BBQ, it was average, just average. It could have been a bad day, who knows. They were very busy, so it was at the right time, we had to wait in line. The sides were also disappointing. I would go back only to verify those thoughts. Believe it or not, the best BBQ on my BBQ trail through NC was Haywood Smokehouse 403 Haywood Rd, Dillsboro NC 28725. It was the best of the best BBQ that I have ever judged to had ever eaten. I live in Atlanta, GA, and I would drive there just for a dinner meal, it was that good. They have three locations now, I have only been to two of them, both the exact same, the best. The review that I did was without sauce because the meats did not need it, no need to cover up the true flavors with sauces. By the way, this is a very good video. Thanks for sharing.

I'm FROM Goldsboro and to be honest: we like to say the best BBQ is at the church revival fundraiser where the local volunteer fire department fires up THEIR pits and cooks up four hogs and the meat falls out of the carcass when they slam them down onto the choppin' block counters. You'll have every family there bringin' the sides: The wife and I made the sweet tea and the hush puppies. Tea was Luzianne with real lemons. And sugar. Lots and lots of...TOO MUCH sugar mmm-hmmm. Hush puppies in lard in a wash tub. I saw some WHITE people messin' around the pits on this video. Can't trust it. They wasn't even fat. You gotta have yourself a big ol' fat black man in bib overall's and a raggedly ol' trucker's cap, sweatin' like a stuck pig - looks like he can't be bothered to hurry nothin'. You could set his tail on fire and he aint movin' fast even then. And you know that pit's HIS n SURE haint your'un. You can take your white scrawny tail over by the cole slaw or somethin' now GIT! BBQ means whole hog. OAK coals. slow cooked. Made by that fat black man. there used to be this little hole in the wall bbq joint that was just amazing. they got all their wood for free delivered had a simple arrangement with one of the small logging crews. crew got lunch free anytime they wanted they dropped off a few trees a week cut into small rounds.
Make sure Franklin BBQ in Austin is one of your stops. The brisket there is the best thing I've ever eaten and I've been to some of the best BBQ joints in the country
I would like a gas grill for the convenience. Of course, grilling and barbecuing are two very different things. I would be fine using propane for stuff like wings and burgers and hotdogs, but I will sometimes do a makeshift smoker with my Weber Jumbo Jim and put some wood chunks on the charcoal and do an indirect heat cooking method with a cast iron pan. Smoked a whole young chicken that way and it was damn tasty.

I got the ribs finishing in oven right now!!!!! Yes I said finishing in the oven. I don't do a full smoke in a wood smoker. I'll do half way done in smoker, and then either finish in oven or on a charcoal grill. Just mine and my families preferred way of doing it. After an hour you don't really get anymore smoke flavor in the meat anyway. As far as I can tell and many others. I've ran numerous tests on this. But I like going half way because I like the slow cook. Then the finish in the oven. When its 20 or 30 minutes done on ribs or poultry i put my sauce on. Then back in oven. For that little bit extra crisp. Anything else is served with sauce on side as it should be in my opinion. Bbqing gets in your blood. You might get to be legendary at it nation wide. You might be a statewide hero. Or hometown legend. Or maybe just the bbq master for parties and special occasions. Ive seen backyard bbquers that put resteraunts bbq to shame. Just because you don't have a resteraunt don't mean you can't get a trash can smoker or build a cinder block pit in your yard, or bury a whole hog in a hole dug by a backhoe or by a few beered up friends. Point is, bbq is all about love of bbquing. As long as man or woman doing it is satisfied with the end product that's all that matters really. Were not all pitmaster. But we who choose this should be masters of OUR pits. Happy barbecuing
Moved to Asheville 7 years ago...have never been to or even heard of 12 Bones until I watched this video. If I want good BBQ, I go to Luella's; you don't need any sauce at all because they smoke it right. I've had just about everything they make there (chicken, turkey, kielbasa) and loved every bite. Also, Smoking Gun BBQ in Marion is pretty good.

You should come and try the BBQ at The Brushy Mtn Smokehouse and Creamery in North Wilkesboro ,NC it is on point and the quality is always to perfection . Amazing homemade ice cream and waffle cones as well.

The premise of traveling around NC and finding these establishments along with their unique history would certainly be entertaining and interesting. Maybe these guys have stumbled onto something. My advise to them would be sell this idea to someone else though. Nothing personal, not everyone makes a host.
To me it's like anything else there are certain times to use sauce and times not to use it, I personally like sauce but if it's a piece that doesn't require it I won't use it. That being said I have cooked stuff just cause I wanted to eat the sauce lol
You should eat BBQ the way you like it. It can be great with a good rub, or with sauce dribbled on it, or drenched in the stuff. Want to try something different? Make your own BBQ and leave some of it with just rub and after you sauce the rest, put it over direct heat (preferably charcoal) and get that sauce bubbling. If you're going to sauce the meat, at least caramelize it.

nobody "upgrades" to a gas grill
I would like a gas grill for the convenience. Of course, grilling and barbecuing are two very different things. I would be fine using propane for stuff like wings and burgers and hotdogs, but I will sometimes do a makeshift smoker with my Weber Jumbo Jim and put some wood chunks on the charcoal and do an indirect heat cooking method with a cast iron pan. Smoked a whole young chicken that way and it was damn tasty.

Mac and cheese is a common side with bbq but I hate Mac and cheese so I would never get it

I got the ribs finishing in oven right now!!!!! Yes I said finishing in the oven. I don't do a full smoke in a wood smoker. I'll do half way done in smoker, and then either finish in oven or on a charcoal grill. Just mine and my families preferred way of doing it. After an hour you don't really get anymore smoke flavor in the meat anyway. As far as I can tell and many others. I've ran numerous tests on this. But I like going half way because I like the slow cook. Then the finish in the oven. When its 20 or 30 minutes done on ribs or poultry i put my sauce on. Then back in oven. For that little bit extra crisp. Anything else is served with sauce on side as it should be in my opinion. Bbqing gets in your blood. You might get to be legendary at it nation wide. You might be a statewide hero. Or hometown legend. Or maybe just the bbq master for parties and special occasions. Ive seen backyard bbquers that put resteraunts bbq to shame. Just because you don't have a resteraunt don't mean you can't get a trash can smoker or build a cinder block pit in your yard, or bury a whole hog in a hole dug by a backhoe or by a few beered up friends. Point is, bbq is all about love of bbquing. As long as man or woman doing it is satisfied with the end product that's all that matters really. Were not all pitmaster. But we who choose this should be masters of OUR pits. Happy barbecuing
Moved to Asheville 7 years ago...have never been to or even heard of 12 Bones until I watched this video. If I want good BBQ, I go to Luella's; you don't need any sauce at all because they smoke it right. I've had just about everything they make there (chicken, turkey, kielbasa) and loved every bite. Also, Smoking Gun BBQ in Marion is pretty good.

The premise of traveling around NC and finding these establishments along with their unique history would certainly be entertaining and interesting. Maybe these guys have stumbled onto something. My advise to them would be sell this idea to someone else though. Nothing personal, not everyone makes a host.

You should eat BBQ the way you like it. It can be great with a good rub, or with sauce dribbled on it, or drenched in the stuff. Want to try something different? Make your own BBQ and leave some of it with just rub and after you sauce the rest, put it over direct heat (preferably charcoal) and get that sauce bubbling. If you're going to sauce the meat, at least caramelize it.
