    That whole hog guy... Everybody loving his food, working like crazy and serving the food with a proud smile, and stil looking a bit insecure when the reporter takes hit first bite. "is he gonna like my food?"... Thats humility right there:)

  • @sgaldis
    @sgaldis 3 ปีที่แล้ว +312

    That was the realest shit ever when the whole hog guy was talking about why he keeps that style. He'd rather not cook BBQ at all if he's not doing it in the method traditional to his family and home town. Living in the deep South myself, the stubbornness of people on other issues can be frustrating, but when it's applied to something like this: a craft honoring history and tradition, it can be so beautiful.

    • @ArturoGarzaID
      @ArturoGarzaID 2 ปีที่แล้ว +4

      Natives are the ones who pioneered it. Mexicans and blacks just copied them. The name “barbecue” comes from the native word “barbacoa” which is how the natives used to cook meat really slowly by digging a hole in the ground and covering it with cactus leaves. And it started in Texas that’s why it’s called Texas barbecue.

My grandfather would get up early start the fires wake my brother up and I for breakfast and either a fishing or hunting trip whenever we visited our grandparents for an extended visit from our hometown of DC. This clip really moved me to tears . There is something to be said about Mrs Helen style of cooking . It will have you crying not only from the smoke and heat index in the smoke room but from the soul and taste and feeling of the food itself . I'm from West Tennessee, born and raised, and this video made me missed home, and Tennessee BBQ. Moved to Georgia a while back and the BBQ isn't the same. BBQ is such a big part of West TN culture, especially in the Black Community. There was always a BBQ option in most mom and pop restaurants. If you couldn't make up your mind on what to eat BBQ would be the next option since it was always ready. Every time we go visit family we make sure to bring back loads of BBQ with us.
    It also made me realize that i missed TN heavy accents. lol

    • @Averyofthemain
      @Averyofthemain 8 ปีที่แล้ว +142

      Well, they don't give credit because it really isn't true, the spanish and the Indians coined the term for cooking over green wood called barbacoa, here, this from the Smithsonian:
      The first indigenous tribes Christopher Columbus encountered on
      the island he named Hispaniola had developed a unique method for cooking
      meat over an indirect flame, created using green wood to keep the food
      (and wood) from burning. Reports indicate that the Spanish referred to this new style of cooking as barbacoa:
      the original barbecue. As the Spanish explorers who followed Columbus
      turned their expeditions north, they brought the cooking technique with
      them. In 1540, close to present-day Tupelo, Mississippi, the Chicksaw
      tribe, in the presence of explorer Hernando de Soto, cooked a feast of pork over the barbacoa. Eventually, the technique made its way to the colonies, traveling as far north as Virginia.
      And here's the whole article: www.smithsonianmag.com/arts-culture/the-evolution-of-american-barbecue-13770775/?no-ist

    • @Averyofthemain
      @Averyofthemain 8 ปีที่แล้ว +54

      *****
      My retarded article is from the smithsonian, there's literally no better source, if you don't care about it, you never cared about the truth in the first place, which is endemic of a professional black victim. Chris columbus did indeed discover america, of course everybody knew once he arrived that they weren't the first on the land, the king of spain knew it, the sailors knew it, however he did discover it, because the Indians didn't know where they were, didn't know what the world looked like, they had no context--the vikings were in america before columbus yet they didn't discover it, why? Because they didn't place it in context. Context. Placement in the big picture...that's discovery.

    As a previous Traeger+ user, I have to say my switch to Asmoke was a game changer. The precision in temperature control that Asmoke offers has made my BBQ experiences so much more enjoyable. I love the fact that Asmoke uses wood pellets which not only gives a unique smoky flavor to my food but are also environmentally friendly. The battery life is surprisingly long and the fast charging feature is incredibly convenient for long BBQ sessions. The portability of Asmoke has changed the way I BBQ on my road trips, especially my recent one to Tennessee. I can now grill wherever and whenever I want. Plus, the app support in multiple languages is a bonus! Asmoke, you've earned a fan! #Asmoke

    Friend, you should have traveled the whole state. Tennessee is a melting pot of different styles. I grew up East of Nashville in Mt. Juliet. The Masonic Lodge BBQed every Independence Day as a fund raiser. We cooked shoulders over hickory coals. Covered with cardboard. Stabbed the meat with long knifes and rubbed salt into the cuts and on the surface. About 18 hours on the pit. Different sauces different years. Sometimes vinegar based, sometimes ketchup based. One year we even had a crazy black sauce with fine-chopped onions in it. I believe that’s a Kentucky thing.

    Dude to everyone saying the guy at the end is somehow racist , they are paid employees. I used to serve for a high volume restaurant, If they're covering 3500 people in a night, those servers are probably making at the bare minimum $600-$700 on a given busy day probably more most nights. Plus whatever hourly wage he's paying them. That's over $50/hour after taxes and thats if they arent just pocketing cash every night. You can make a career out of that pretty easily especially in the south where cost of living is cheap. If you have a 100k corporate job you're making roughly $500/day. He's given those lucrative jobs to black people, not white ones. How tf is that racist..

    • @0Sirk0
      @0Sirk0 5 ปีที่แล้ว +7

      i was about to say i didn't see any uncle tom references. Although reverse racism does say that his hiring mostly black people is a cover for his racism, but there's also alot of black people in the south- who knew! So of course he's going to have people of color working for him( this is an agreement and affirmation). And as an aside; I'm a white guy, more pinkish beige, but I've never seen European-America on a map, and I'm also not Caucasian because i find that term in bad taste, the classification being product of white supremacist eugenic "research". Its weird to think that if you're born here as a white person, you're white, but if you're anything else you are considered an ethnic american. Compared to Native indians( people who live between the earth and sky), we're all ethnic.

      I didn't see anything racist about what the last guy said. I've watched a lot of these types of videos and you rarely see any white pit masters or restaurant owners acknowledge the contribution of African Americans.

    I live in rural west Tennessee (Henderson). If you get BBQ here (Lexington, Henderson, Jacks Creek, Jackson) it WILL BE whole hog. If someone tried to just do shoulders or butts, they would go out of business. I saw some TV show that said Dothan, Alabama was the BBQ capital of the world because they had one BBQ place for every 9,000 people. Hell, Henderson has about 3,500 people and there are six BBQ places and EVERY ONE of them does whole hog. Some of them will cook over twenty whole hogs on a big holiday weekend, like the 4th of July. The BBQ capital of the world is Henderson or Lexington, Tennessee. You could spend two weeks in this part of the world and go to a different whole hog BBQ joint every night.
