I agree with you on the skellion. I don't use onion anymore. I use shallots. It cost more but you only need a small amount. Try this next time. This is used a lot in Asian cooking.

i had this dish for the first time today, in a jamaican take-away in etobicoke, in a plantain boat. nice simple dish so delicious and satisfying. i love your presentation mrs. debbie and your easy manner on how to prepare these dishes, not demanding unbreakable rules and 'tings like dat' that just stifle the imagination and spoil a good time cooking. its a great feeling to be in your kitchen.

It’s probably best to add the saltfish AFTER you partially steam the callaloo so that it will remain in nice chunky size pieces. It may become minced if added too early 😄

No, its best to add the saltfish to the seasons then add the callaloo. The callaloo shouldnt be cooked for too long, it will destroy the nutrients, taste, and turn brown.
Then the flavor won't be in the fish 😊
