    We are old white folks who learned of callaloo from the many Caribbean gardeners in our community garden in Boston. Of course, the Jamaicans and the Trinidadians and the Haitians don't really agree what plant it is! :) We have been growing some Jamaican (green) and some Haitian (red) callaloo, or amaranth, and really like your video recipe. However, we like to do our own spices/herbs - not the cube - so we are doing a combo of ground allspice, cumin, thyme (in addition to the thyme sprigs), and mustard. We'd be happy to hear of other additions. We grow habaneros, not scotch bonnets, but they are very close. Also, we sometimes add parsnips with the carrots - a nice sweetness.

I grow it myself in my back yard and cook it my way but l was just thinking of searching Google to search for a video on how to cook Jamaican callaloo and luckily today someone sent me a video on my cell of your version of cooking it. Yours is a much better way of cooking it.

    Here in NC I see at farmers markets and Asian markets "amaranth." It has red in the middle of the leaf similar to chard. Is this the same as callaloo? I've seen something that looks more like this at the farmers market called "amaranth."

      @@ebonypretty1468 The dish is called Callalo, but he said the leaves are spinach. That is not spinach nor even close to spinach. Callalo is obtained mostly from dasheen leaves. But some persons call the leaves that are used for Callolo spinach, when in fact it is not spinach. Spinach does not look like that, and has much softer texture than the leaves shown in this video.

    What is callaloo called here in the united states?? The closest thing i've found is in an asian market but the leaves have red in them, im not sure if it will have the same taste...none of the caribbean markets around me have fresh callaloo, only canned

    Half the video cutting up the callaloo, but didn't really spend time to show the vegetables cut up separately, instead of all in a bowl, that is what seasons your dishes so it is important to show the vegetables you use, still appreciate the video, clean and clear 👍

    I dont see the necessary for the powder seasoning it's an edible ingredient yu only need natural seasoning with your coconut oil and taste, these powdered seasoning is high chemical that causes blood and sugar problems in our health trust me I knw blessed love
