There’s a sense of self-worth that comes up within a person that comes with bringing food from the soil to the dinner plate. When I look in your eyes as you talk about your life, your garden, your recipes.... I can see the soft contentment that comes with the life you create. @@WhippoorwillHoller. I’ll send you some when we harvest this July. We grow Hard, Red, Winter-Wheat... so more of an all-purpose flour rather than what you have. This makes for more of a dense bread. Also, I have millet growing each year so I mix both millet and wheat flour for my bread. But, to tell you the truth, I’d trade my wheat fields here in Colorado, for the whippoorwills you have there in Arkansas.

I wish I could mill berries but those mills are outrageously priced.. I actually just looked on Amazon and found a great grinder that is electric and only 1200 watts so I can use it on my solar system if grid down, and its only $50.00. It grinds in smaller batches but that is fine with me!😊
This was SO interesting! Not to mention thorough! You really are The Little Red Hen of TH-cam, Miss Lorie -- you do it ALL! Bread baking is a passion for me, and flour varieties really do make a difference. I would bet you a good portion of the farm that aforementioned difference is even greater when you grind your own wheat. I purchased a Wondermill Jr. Deluxe two weeks ago. It is hand cranked and can be adapted to be powered by a bicycle or motor. It can also do nutbutters and Masa... I gotta say I have made the best tamales I have ever tasted. Thank you for showing your bread making.. I do LOVE the bread mixer.
Hello! I started making bread about 1 1/2 years ago. I purchased my wheatberries, Nutrimill grinder and my Bosch blender. I use one of your recipes once a week and I turn out 2 loaves and one pan of rolls! I have substituted one cup of water with one cup of Sourdough. Along with yeast. I have been supplementing with grocery store Organic hard white wheat. If I use 100% fresh ground wheat, I don’t get the rise I do as with half and half. I’m going to try soaking my flour like you did in this video.

Miss Lori, I can’t thank you enough for showing folks how you measure your flour; scoop the miled flour into the measuring cup, then level it off. I hate seeing people scooping the flour directly into the cup. Amount of flour is completely different. Can’t wait to see how this bread comes out. I am going to start using my hand crank flour mill soon. I completely forgot I had it!!! I’m also going to try baking with Einkorn grains. I bought about 30 lbs. when we moved here, to Mexico City. I’m still having trouble with the 7,300+ feet above sea level cooking. It’s so difficult. One last thought, I learned early in my bread baking adventures that if the loaf is not to your liking in looks, they make pretty darn good croutons, or bread crumbs. Nothing needs to go to waste😉.
I have the Nutrimill Harvest… love it! It’s a stone burr so I can do dent corn as well. They’re out of stock too but should be back in stock in a week or two. 💚

Getting ready to make for the third time. Last time I made 6 hamburger buns and rolled out 4 pieces into rectangles. Rolled up a 1/4# hot dog in each. Pinched them closed and baked for the same amount of time. OMGOODNESS!!! They were so delicious Rachel 😊 you're the best ❤
I've been milling wheat berries for almost 30yrs, the new thing now is to soak the berries/ nuts and some seeds to get whatever is naturally in the husk that causes problems to our system, soak 8 to 12 hrs, then dehydrate at 115 for 12hrs or so

I use Sue Becker's recipe for the perfect loaf. 1 1/2 cups hot water 1/3 cup oil 1/3 cup honey 2 tsp. salt 1 egg (optional) 2 Tbs. Lecithin 1 tsp. gluten (optional) 4 - 4 1/2 cups freshly milled flour 1/2 cup flax seed, ground in blender (optional) 1 Tbs. Yeast Combine water, oil, honey, salt, and egg. Add lecithin, gluten, half of flour, and ground flax seed. Mix thoroughly. Add yeast and enough flour to make a soft dough. Knead until smooth and elastic (about 5-6 minutes). Let rise until double. Shape as desired and let rise again until double. For 2 - 1 lb. loaves bake at 350F for 25-30 minutes. For a double recipe, knead 8 minutes. For a triple or quadruple recipe, knead 12 minutes

Mrs. Lori, thank you for the recipe. I made it with hard red wheat today and baked it in the Pullman loaf pan. I had to use quite a bit more flour because it didn’t soak up all the water. Next time I give it more than two hours or even overnight. And like you said, the conditions in our kitchens are different. However, the bread turned out light and fluffy, it has a great flavor and this will be my to go to recipe in the future. Thank you.
I have recently started grinding my own grains. I have made lots of muffins. Looking forward to baking bread too. I understand that the nutrients start to decrease from the time the grains are ground. I usually just grind with I’m going to use that same day.
That bread looks great. I like the flat top bread bcuz with a sandwich the meat is usually square so I don't need that hump of crowned bread with no goodies at the top.

Lori, where or how would you suggest I find the best place to get a hand mill & the hard white wheat berries? I've looked it up & there are so many options I'm not sure of the best way to narrow it down. I make all my own bread and would like to try grinding my own flour. I doubt if I would do it for each batch I make (I also struggle with arthritis in my hands and do have to mix it by hand) but know I'd love to learn the most tasty & healthy options! I'm glad you mentioned the way the weather affects bread. That is the first thing I taught my girls with bread. I try not to make it on a humid day if possible because it affects the rise so much. I'm tempted to try your sweet dough but haven't yet. I have always made my cinnamon rolls with my basic bread dough. With all of the goodies I put inside of the rolls everyone I've baked for has always loved the rolls. Isn't it neat the way we all get used to certain ways we have always made something? I've always hand shaped my own loaves too. The only way I roll it out is when I'm making cinnamon or Cinnamon Raisin bread. I started baking bread when I still had to be on a chair & at first with Momma's hands around mine literally guiding them. I have never lost the love for making it.
I love to mill wheat and make cream of wheat. It is so much better than what you buy in a box! I get my grain from Azure Standard and the Mennonite store and I got my mills from Pleasant Hill Grains.
I have been looking into buying an electric and a manuel backup grain mill. Just need to figure out how much I can spend on one, I love home made bread. I eat very little store bought bread,

I have recently started grinding my own grains. I have made lots of muffins. Looking forward to baking bread too. I understand that the nutrients start to decrease from the time the grains are ground. I usually just grind with I’m going to use that same day.

That bread looks great. I like the flat top bread bcuz with a sandwich the meat is usually square so I don't need that hump of crowned bread with no goodies at the top.
Mrs. Lori I am so thankful you take some of your time to teach us how to do these things! I really dont know if my husband and I woild of ever started making bread if we hadn't of found your videos! My husband is a pastor and he is home alot more through the week than I am and he loves to make bread! We have been talking about getting wheat berries and a mill. Times are tough right now but we know how important it is to get the things we really need.
Thank you for this recipe Miss Lori! Made it up today, but, instead of adding the additional 1 cup of flour, I had to add almost 2 cups. Guess it was more humid than I thought 🤔.
My husband will only eat white bread, but he loved it! Told me if I can continue making bread this good, he'll switch to it. SCORE!!! ❤

Lori, where or how would you suggest I find the best place to get a hand mill & the hard white wheat berries? I've looked it up & there are so many options I'm not sure of the best way to narrow it down. I make all my own bread and would like to try grinding my own flour. I doubt if I would do it for each batch I make (I also struggle with arthritis in my hands and do have to mix it by hand) but know I'd love to learn the most tasty & healthy options! I'm glad you mentioned the way the weather affects bread. That is the first thing I taught my girls with bread. I try not to make it on a humid day if possible because it affects the rise so much. I'm tempted to try your sweet dough but haven't yet. I have always made my cinnamon rolls with my basic bread dough. With all of the goodies I put inside of the rolls everyone I've baked for has always loved the rolls. Isn't it neat the way we all get used to certain ways we have always made something? I've always hand shaped my own loaves too. The only way I roll it out is when I'm making cinnamon or Cinnamon Raisin bread. I started baking bread when I still had to be on a chair & at first with Momma's hands around mine literally guiding them. I have never lost the love for making it.

I love to mill wheat and make cream of wheat. It is so much better than what you buy in a box! I get my grain from Azure Standard and the Mennonite store and I got my mills from Pleasant Hill Grains.
I have some freeze dried put back .I'm sure fresh is better. 🙏🙏
I have been looking into buying an electric and a manuel backup grain mill. Just need to figure out how much I can spend on one, I love home made bread. I eat very little store bought bread,
