    সব থালির মধ্যে বাঙালি থালিতেই কমেন্ট বেশি , এর থেকেই বোঝা যায় বাঙালি কতটা খাদ্যরসিক। বাংলায় খাওয়াটা শুধু খাওয়া না, একটা অনন্য শিল্প। সমস্ত ভারতীয় রাজ্যের থালিকে সন্মান জানিয়ে জোর গলায় বলতে পারি বাঙালিদের মতো খাওয়ার এত বিভিন্নতা ও স্বাদ অন্য কোন রান্নায় নাই। সবাই বাংলাতে আসুন ও বাঙালি রান্না উপভোগ করুন।

    I am bengali. But we r not only non veg we have huge no. Of veg items which are totally our own, nd those are totally different from other states. Like Dhokar dalna, Sona mug er daal, Sukto(The 1st item which be surely served in every bengali family), Saak(Notey, Pat, Kolmi) vaja, Ucche chocchori, Chocchori, Khicuri, Palong saak er torkari, Kumro die pui saak, Bora r jhal, Posto die alu vaja. So many things are there!!!!!!

    Can we please appreciate the effort put into this and stop criticizing? Bengal has a million dishes, it is not possible to include everything under one platter...and there is no rule that a 'thali' must comprise of a specific number and variety of dishes. They have tried to represent Bengal and have done a good job. Please stop with all the constant negativity people!

      Do come to Kolkata have some, but good bengali food in restaurants is very expensive in Kolkata. Its not like rajasthani thali or gujarati thali, which can be very affordable and good quality also in any standard restaurant . Like example most iconic fish is called Ilish. One piece of it in any good restrurent cost you 500-1000 which is like crazy.

      Hello you can have variety of veg bengali dishes like basanti pulao , mochar chop , dhokar dalna , khichudi , labra er torkari , echor er dalna , aloo posto , bhaat , shukto , mochar ghonto , potol posto, paanch mishali torkari which is very similar to Gujarati undhiyu variety of Shak chorchori and ofcourse nolen gur sandesh Do come in winter 🙂

    In WB, we are so so much blessed with the nature that, we do have variety of veggies and abundant sweet water fishes 😊😊 and we are the food lover too. So we can't have only one set of "bengali thali", rather many more. Shukto, mochar ghonto, echorer dalna, chapor ghonto, various fish curry, specially shorshe ilish........ Aro koto ki. Last but not the least, nana rokomer chatni aar ogunti types of mishti 😎😎

There are vegans and vegetarians here who often get teased or bullied by those who eat non-veg.     I'm a Bengali who loves cooking. One tip to clarify: As I see in many bengali recipe videos, people put sugar in every dish, which we actually DO NOT put. The main reason I feel they put sugar is for caramelising the onions or any other stuff but trust me, the dishes taste great without the addition of sugar.
    The video had many great elements but there are many more authentic recipes which are families' secret recipes coming through our ancestors. 😋

      Cholar dal is one dish that we put sugar in. The rest not so much unless it is a sweet. My grandmother had the best judgement, I put sugar accordingly.

      @@Mmaulin12 Well, it depends on the dishes. But if you search for the Bengali recipes here in TH-cam, you will see people putting sugar. That's what my inspection was.
      No doubt, grandmothers always have the best judgements!

      Adding a pinch of sugar is 'not' for caramelising onions. Salt is added for that... and only to quicken the process. On the other hand, sugar is added while sauteing the powdered spices to 'enhance' the flavours of those spices in the dish; and that's completely normal even in Bengali cuisine.

    Posto is actually only with potato not potato onion combination, but other cooking of Thali are great, as a Bengali I like the Thali

      Yes there are varities of ' Posto ' onion posto, tomato posto, bhindi posto, even on half karela you can fry with postobata coated with maida, and ofcourse posto bara.

    I can cook 56 bhog in 3hrs,...each bangali dishes in few minutes..south Indian ..each and every states dishes of India, I can also cook Chinese, Japanese, Italian, arab, and many continental foods.... It's one of my hobbies 👍❤😘..and.. .it's a God gift for me ...

    We add little more sugar in malaikari
    Insert one green chilli along with fish in paturi
    We preferred posto without onion
    We are using paanch phoron for tempering the dal

    There's no elaborate platter in this world other than a bengali thali.. although u have missed many items such as shukto,chutney and paneer...but still bengalis enjoy their platter than none other

    A few points:
    1] The Bengali garam masala is very different from the Punjabi garam masala.
    2] Sometimes, grated coconut is also added to aloo posto to enhance the flavours. The dish can also be prepared without potatoes. Then it is simply known as posto bata.
    3] Sometimes, the lentil (masur dal) is also flavoured with a spice mixture known as radhuni or paanch phoron. The Bengali lentil preparation doesn't use garam masala, unlike the other north Indian preparations, and therefore, retains the actual flavours of the pulses.
    Among Indian cuisine, Bengali cuisine is the only one that can qualify as a 4-5 meal course.
    It starts with a bitter shukto, then proceeds to the daal with fries, then 2-3 fish dishes, then luchi and mangsho and finally ends with desserts, chutney, mishti doi, rosogolla, and payesh. In summers, the desserts are white, but in winter they are brown (having been sweetened with date palm molasses - nolen gur).
    I savoured all these dishes during my friend's wedding in Calcutta.
    I surprised him and his wife with Kosha mangsho and luchi when they visited me in Berlin during Christmas.
    Hilsa was unavailable during the winter, so I couldn't serve them illish sorshe bata!

      Yes ..we never add sugar .... And for gravy koi never use coconut milk. I am Bengali. Every Bengali using masala and tomato and onion paste for gravy.

    In Bengali Thali ,there is most important thing is Shukto,shaak ,loochi-aloordum. Mooshur dal with jhirijhiri aloo bhaja& ofcourse shorsheIlish.

      Mam thali is something we eat for lunch.. and aloo r dum r luchi isn't lunch item but more breakfast items..
      Although sukto is one thing that missing but it's fine..

    Three things are missing 1.moong dal 2.basanti polau 3.sorse ilish.also there are luchi, cholar dal and aloor dum ,sukto and obviously misti doi and rasagolla are specialities in Bengali food

    Great efforts by the cook and Sanjeev Sir. I am a great fan of yours. The thali looks awesome and as everyone rightly said that there are many dishes severed everyday in Bengali thali but I missed saag bhaja in the dish coz it's a must have thing as it adds nutritional value to our food. We are blessed with our food and culture. Each and every bengali is a food lover. For us, inviting people at home is like a food festival and guest are expected just after they wake-up😂😂. We Bengalis like to start the day with breakfast -"tiffin" and end with Rater khawar and misti obviously. And also complaint about acidity - what an irony 🤣😂
    Keep sharing such wonderful thalis from various parts of india. 🙏

    Few tips for the viewers- (i) for Begun bhaja (baingan fry) the oil must be mustard oil and smoking hot, or the oil will get very badly absorbed.
    (ii) Aloo Posto when cooked without any phoran (tarka/sambhar) retains the flavour of posto much better. Sugar, if at all to be added, must be done extremely carefully for potatoes have a natural sweetness.
    (iii) for Bhetki paturi it's advisable to dry roast the banana leaves on a tawa first to make it easy to handle.

      That's why they've added sugar in the brinjals while mixing with turmeric... It prevents the brinjals from absorbing excess oil while frying
