  • Waakye has become popular in Ghana in recent times. Majority of people cook it with sorghum leaves or waakye leaves as it is called. Although the sorghum leaves have it health benefit, It is locally prepared without the leaves. The original recipe includes beans, rice and saltpetre or bio carbonate of soda. The perfect ratio of rice to beans is 50/50 however, you can adjust to your taste.

After watching this video, I now want to give it a go. Please could you tell me exactly how and when to use the bicarbonate of soda to get that colour and the quantity please? I want to make it on valentines day for hubby. I've told him and he's looking forward to it so I really hope you reply my message early enough. Thank you.

Hi, I’m a new follower and would love to make some waakye for my partner so I’m really happy to find a recipe that doesn’t involve the leaves. I just have a question about the bicarbonate of soda.. yours looks like a rock form all I have seen is the powder form that you would find in the supermarkets- will this have the same effect or do I need to try to source the solid form? Thanks :)
