Another thing is try adding sliced or chopped onions just before taking it off the heat then cover and leave to simmer for a few minutes. That's the boom. Hmm it's heavenly.

wow, when I was a little girl, we buy Ekuru from food hawkers in Lagos. My Daddy loves the meal but my mother did not know how to cook it. We always look forward to the day my daddy will buy it for us. Although we are not from Ekiti, Ekuru is a very nice delicacy.

In Cameroon 🇨🇲 we put palm oil in Ekuru, with a bit of salt and blind it with peper: it’s call KOKI and we it it with right plantain. Delicious 🤤

If you don't have a food processor like me, you can blend and use a hand or stand mixer to whip it up until it's double in size and light and fluffy

We crumble ours in my home town (Ila Orangun) and mix with cooked chunky okro slices. We then eat it with Eko. It’s so good!

Ekuru is an Igbomina food. And that is why non-Igbomina will not crumble theirs before munching it. Am an Igbomina boy from Oro- Ago in Kwara state.
