Enhance the flavour by NOT MOVING the meat for at least 2-3mins once it hits the pan. Let it brown on one side and get some good colour, then start mixing it up and adding the veggies. This will allow the malliard reaction to take place on that initial surface of the meat, and REALLY ENHANCE the flavour of the meat. Honestly, this does not 'look' appetizing... But it'll taste pretty good. 3 days ago i made a similar mix, just without the (disgusting tasting) refried beans, and poured the meat mix onto Nachos. Spectacular! The tortillas are a good idea to morph this into a Mexi-Lasagne. Will try that next time.
I already use the bigger low carb tortillas of the same brand...I will use those but less of them in the recipe. 🤓 Looks like I'm replacing Taco Tuesday with this so I can meal prep the leftovers😂(if there are any)
Best recipe channel ever!

I make this almost same dish with corn bread mix on top in a cast iron instead of the refried beans & tortillas.
