    Honestly the instant frozen-to-heated water bath method changed my life! I've been doing this with a sous vide for pasta sauces and curries for years, never have to worry about food going off or having to defrost in advance anymore. With the sous vide, you can set it and come back to it whenever you're ready! Awesome that it works for fried rice so well too!

      Only downside is contamination from micro plastics by heating the food in plastic bags. But if you don't mind the health risk it's def a good method.

      ​@@EwMuva No, it's okay to be concerned about the increasing realistic understanding we're having regarding the pervasivness of microplastics, the problems that microplastics can possibly cause (eg, in your poop tubes), and reduce putting them into ourselves if we'd like.
      Different problems. No need for appeals about comparative danger in different societies. You don't have to worry about them if you don't want to. Some people see some current research, and _would_ like to.¯\_(ツ)_/¯

    Thank you for started a healthy meals series! My son has been overweight for a long time and has finally decided he wants to be healthier, he started going to the gym and I'm trying to do my best to make healthier meals that taste really good.     Pro tip for the breakfast burritos: If you wrap them individually with baking paper instead (The one's you put in your over to bake something on) cut them to size, wrap them up in those and freeze 'em? It makes them microwave/oven friendly. You can just pop 'em into the microwave whenever needed to heat them up and not worry about the plastic wrap.

      I wrap mine in foil then cryovac mine, freeze them, then sous vide them at 75 degrees Celsius for about an hour. Nice and hot all the way through, the wrap is soft with no overly hard bits from freezer burn.

      I wrap mine in nothing. Just stacked together in some tupperware. They break apart very easily once frozen. Pop it in the microwave for a minute, then grill on a pan.

      Wrapping in (baking) paper drastically reduced shelf life (or in this case freezer life). Although that isn't a problem if you eat them anyway

    as a former worker at one of the mentioned restaurants, yeah this is exactly how all of the soups and mac n' cheese were prepped. Big freeze bags that were semi-boiled to readiness. Some people would be disappointed if they heard that their food was frozen, but it still tasted pretty dang close to fresh!

      I worked at corner bakery cafe and that’s how we heated our soups lol but ppl loved them, I’m just like if only you knew😂. The chili was actually pretty good surprisingly.

      I also worked there and remember once an entire bag of broccoli Cheddar burst somehow in the thermalizer and all of the water was disgusting and took forever to clean 😮 traumatized

    Another way to use the freezer is to prep ingredients and then use them from frozen when cooking. As an example- I keep pre-chopped veg in the freezer (celery, onions, bell pepper, zucchini, carrots, spinach, etc, as well as store-bought options like green beans, broccoli, and peas). Then, many dinners have a significant amount of chopping reduced, making them much faster to cook.

      I do this too! I group certain things together to make my meals even easier when it comes to soups or simple sides for a meal. Such a time saver🫶🏽

      I do this with celery and carrots. They are such a pain in the ass to chop that I just chop tons at a time and throw the excess in the freezer. Takes like 70% of the effort out of making bolognese.

      @@kamanda9886 Glad to help. Also its really convenient since celery is a right pain in the ass to chop. That way you can prepare the celery for maybe 2 or 3 batches of bolognese all at once and just grab it out of the freezer. You can do the same to carrots as well obviously.

    Love this series man. I’ve really enjoyed sharing your more elaborate recipes with my wife, kids, family, etc. over the years. I’ve learned a lot about cooking and knocked the socks off of folks several times using techniques you’ve taught me.     I used coconut milk for your tikka massala recipe and it turned out perfect. It's a great alternative if you don't like classic cream (or don't have it on hand).

    It’s funny, with only two in my household I always make full size meals and have developed this technique years ago. Food waste in my house is insanely low and I am forever pulling something out of the freezer that was well thought out before I froze it. Everything is always really good and almost always indistinguishable from fresh. One thing I did invest in a few years ago is a Chamber Vac, it really upped my freezer game.

    If you dont have a chamber vac then you can do the immersion method to get the air out of a ziplock. FIll a pot or sink,. whatever.. needs to be deep enough to submerse the bag. Close the zip lock bag untilk there is just a small corner open, dunk the rest of the bag up until its juuuuuust below the opening you left, then you can seal it. AIr gone as the water pressure pushes it out,

    I just was gonna start cleaning out the freezer section in my fridge, luckely we have a separate freezer in the shed... For me meal prepping is an essential thing to do witch I don't do much sadly. Time to turn the table and get going with it, in a family of 5 an occasionly 7 people to feed I finally accept the fact that it saves a ton of time.

    I survive mainly on freezer meals. I make three dishes, 6-8 servings per dish for a whole month. One potato, one pasta and one rice dish. So around 24 dishes, 3 separate cooking days (I tried cooking them all in one day and it was too overwhelming). And to break the monotony, we have ingredients for wraps as a staple, refreshing our stock of greens in the fridge or I’d feel up to cooking one day (and feel the need to use up perishable ingredients) and whip up something else. Frozen pizzas or the occasional takeaway food helps too.
    Came for the ideas and it seems like I am doing something right! 😊🎉

    @10:40 - You can get a very cheap machine for around $10 (from France) and sealer bags with blue dots on them. You use the vacuum machine on the blue dots and it sucks all of the air out same as what you use but the bags are heavy duty, somewhat easily opened, and is very cheap to buy. Extra bags are sold separately. Good video though.

    I don't know why it never occured to me to freeze fried rice...When you just put leftovers in the fridge to have them the next day the rice is usually dry as the dessert. Definetly will give this a try :D

    I just started meal prepping breakfast burritos... best thing I ever started doing hands down. Bec, sec, chorizo egg and cheese. And made some biscuits as well. I love it condensed the whole hungry with kids thing into 5 minutes instead of 20 to 30 cooking

    Delving into Asian cuisine did wonders for my healthy dinner lineup! Stir fries, curries, there's so many great flavors and it's easy to load up on veggies and still feel satisfied. I made teriyaki chicken and a veg stir fry last night that was THE BOMB and very reasonable in macros.

    I really appreciate you taking the time for healthier opinions. My wife is a celiac so it makes it harder to prepare foods. The gluten free breads, pastas, and other options are not that good. Could you please make a video on how to make gluten free options for cheap that actually taste good. Instead of the store brands that taste stale.

    Been a fan of yours for a while. I'm currently focusing on following the MIND diet (Mediterranean/DASH combo), and one of my biggest issues is overthinking meal prep. I've followed a few different recipe accounts on IG and TH-cam, but all the recipes are mostly chicken or beef (red meat is seriously frowned upon on this diet) and that gets really boring really quickly.
    Long story short, I'm glad you're putting a focus on healthy meal prep, because your recipe vids are always super helpful for making quick, tasty, and most importantly, adventurous meals.

    I seldom comment but here it is. I’ve been through the whole deal of meal prep and weight loss journey some years ago when I was studying and really fell off the whole diet thing in the last couple of years. These meals are similar in many ways to what I used to do.
    For longevity I find the best thing is to try and incorporate variety. Say two different lunches and two different dinners a week, Sundays were cheat days/whatever I was craving days. These four options are ideal for this exact thing! If you make a healthy meal prep book I 100% would buy without a doubt these look great 👏👏👏

    These all look so bomb, going to try this out for sure! Toasted Pine Nuts blended into the pesto would add tons of vitamins and increase your energy levels for getting those gains!! Also it helps thicken the sauce.

    Another perspective for the ground turkey patty - you can go for the cufte/kufte route. Mix in carrots/onions + any other veg you like with your meat/spices. I recommend sweating the veg it and then mixing it though. For the baking, it is so convenient to just spread it on a baking sheet and chuck it in the oven.
    Heck, I have had (some more extreme) friends use this as a bread replacement in a sandwich :D

    Have you considered putting gelatin powder in the ground turkey so that it doesn't wind up so dry? Chef steps uses gelatin in their smash burger recipe. America's test kitchen recommends using baking soda to help brown ground beef and Kenji talks about how great it is for chicken skin. Could small amounts of gelatin and or baking soda make a meaningful difference without adding too many calories or affecting taste?

    Never realized you were dieting/cutting! One thing that helped me lean out was keeping track of your sodium, and having a fairly protein based diet. For sodium, I would try to keep a 1:1 ratio with your daily caloric intake, e.g. 2k calories/day should be no more than 2000mg sodium/day (less is better but 1:1 is also good). For your macros, my diet was centered around protein, with the amount of protein being a 1:1 ratio with your target bodyweight, e.g. 165lb. target bodyweight = 165g protein/day. Depending on how much of your macros that equals, your carbs/fats were 50/50 off of that remaining amount e.g. if your protein ended up being 40% of your macros, you'd do 40p/30c/30f or try to keep it somewhat close to that. I honestly never sweated the carbs/fats cause I couldn't cook well enough to meet a perfect split, I'd often settle for maintaining the 1:1 ratio between sodium/calorie and protein/target BW. I also always had one cheat day week, where I'd eat out with friends/family or order an entire bucket of KFC for the day, which nearly doubled what my daily caloric/sodium intake, but at a once a week interval, it hardly made a difference in my progress, and kept me motivated, as something to look forward to throughout the week. All of this is subjective though since everyone's bodies work differently, and not everyone may be on the same type of diet, but it could be some things to keep in mind when coming up with new healthy recipes!       ​@Steve Sherman nothing crazy at all with this diet, it's fairly popular amongst powerlifters/bodybuilders to do low sodium/high protein intake diets, and I'm already aware not everyone diet should be the same, it's just things that helped me out during my cut, and anyone on this video scrolling thru the comments could possibly apply some of the info to their own diets/cooking.

      100 grams of rice is 130 calories. A single serving size is 60 grams, which is less than 80 calories per serving of rice.

    Nice to have 10 plastic bags as waste for a week... People, remember there are reuseable containers to put stuff in the freezer. A tip is also to reuse empty Butter-Tubs or similar. If you get the 500g ones, they will easily fit 2 portions of sauce/Curry.

    Thanks for a very practical video! Bought a food vac sealer 2 years ago and been using it for freezer storing bulk packs of meat and fish as smaller portions (yeah, we had half a cow in the ice chest). It will get even more use to store prepared foods. Can't wait to explore more dishes from your awesome cookbook!

    I love this idea of gourmet freezer meals. Can someone with credentials weigh in on the safety of heating up food in plastic? The last time I checked, it causes the plastic to release chemicals that were cause for concern. Thanks!

    Frozen breakfast burritos in the airfryer are the easiest meal. Set it to 6 minutes and go get ready, once the 6 minutes is done it continues to heat through and creates a crispy outside.

    Josh, I would be very interested in a series based on common allergies. Most of your dishes are delicious but not all people can have them. To tackle meals that people with allergies could enjoy, would be both a challenge to you and a help to those lost in how to cook while avoiding said allergens.

    Just made the breakfast burritos (minus the red bell pepper) and it tasted Amazing! The seasoning on the turkey has lots of flavor and with a little bit of salsa on the side this burrito was perfect.

    Hey brother, love your channel. Just wanted to say (more for viewers' benefit, I'm sure you know this already) but one of the great things about a chamber vacuum sealer is that you don't need special foodsaver type bags like you show here, simple 3-6mil plastic bags (about 1/10th the price) work perfect for this. Again, that's only the chamber vacuum sealers as they don't rely on the air channels to remove air. Cheers!
