Take it with the proverbial grain of salt and consider the context. He's saying that these recipes are simple and quick compared to more elaborate dishes, and they don't require much skill. They also contain fewer ingredients, but that doesn't mean that he won't add a few special ingredients that are more expensive. If you want to make food that is outstanding, then you have to invest in your ingredients. What I find to be annoying is that every time a chef puts out a video like this, tons of people bitch and complain about how they can't afford to buy the ingredients, they don't have the time, blah, blah, blahhhhhhhhh. It's like, if you're incapable of making these recipes, then just stick to pb&j or pasta with marinara and stop complaining! But the rest of us wanna learn.
I also would like to point out his use of the Wusthof knives. Incredibly sharps knives that hold an edge. The biggest problem home cooks encounter with their cutlery is a dull knife.
I made the sausage and rice recipe but opted for a sweet Italian sausage and it came out delicious. It was super simple to follow. Not too many ingredients at all.
The thing is, that "only syths deal in absolutes". What I mean by that is, the dish ingridients are not set in stone. You can always remove or add something yourself. From that perspective cooking is more akin to learning the language. You can convey the message regularly or you can say the same thing much fancier.
I made a few already lol and the meatball one honestly for any mexican it looks alot like caldo de albondigas which is basically a meatball soup and inside you can put a boiled egg or with rice inside but it's more of a soup because its spicy af and delicious lol
Using instinct is better than following the recipe blindly. No chef will tell you that. Observe how the things look like and try to mirror the same. It will make things much better

@Stephen Martin Gordon was using chicken stock yeah but beef stock works fine. It's really up to whether you want it to taste like a stew or soup. Beef stock always has a very distinct stew taste that is hard to mask with seasoning. While chicken stock is really easy to hide and absorbs into rice a lot better.

So impressed he did not use an egg for binding. Egg in meatballs makes them rubbery. Lovely binding of breadcrumbs and milk (make sure your breadcrumbs are home made), I use about a tablespoon of all purpose flour, blends very well instead of breadcrumbs and milk. Both modes work well. I prepare a fresh tomato sauce and add the meatballs, no frying involved. Slow and gentle heat for a couple of hours, really worth the time. Gordon, wonderful as usual.

I want to see him do a pantry tour and explain the best ways to keep essentials on you and fresh!! I want to be able to do all of these recipes but I don’t ever want to go out and buy a bunch of items and not know how many recipes I can use them for or how long they’ll keep
most things keep for a long time unless it's a vegetable. You should always have rice, spices, beans, pasta, canned tomatoes, etc in the pantry so that when you want it you have it. Then shop for veggies/meat once a week or every other week (or just go to the store for a single piece of meat when you want it). Boom, you can make anything you want whenever you want.
@@shipuuga Exactly, keep dry pantry goods on hand at all times. I make a meal plan before I go shopping once a week, and buy all the vegetables and meats I need for all the meals that week. Takes a little bit of planning, but... That way, I never lack an ingredient and never buy something I am not going to use (and goes bad).
To each their own, some people that have been cooking a long time just eyeball it. I dont usually measure things out i eyeball it because sometimes i use less/more than the recipe says, just depends upon how good you are at cooking or if youre someone who follows the recipe exactly.

Take it with the proverbial grain of salt and consider the context. He's saying that these recipes are simple and quick compared to more elaborate dishes, and they don't require much skill. They also contain fewer ingredients, but that doesn't mean that he won't add a few special ingredients that are more expensive. If you want to make food that is outstanding, then you have to invest in your ingredients.
What I find to be annoying is that every time a chef puts out a video like this, tons of people bitch and complain about how they can't afford to buy the ingredients, they don't have the time, blah, blah, blahhhhhhhhh. It's like, if you're incapable of making these recipes, then just stick to pb&j or pasta with marinara and stop complaining! But the rest of us wanna learn.
I also would like to point out his use of the Wusthof knives. Incredibly sharps knives that hold an edge. The biggest problem home cooks encounter with their cutlery is a dull knife.

The thing is, that "only syths deal in absolutes". What I mean by that is, the dish ingridients are not set in stone. You can always remove or add something yourself. From that perspective cooking is more akin to learning the language. You can convey the message regularly or you can say the same thing much fancier.

@Stephen Martin Gordon was using chicken stock yeah but beef stock works fine. It's really up to whether you want it to taste like a stew or soup. Beef stock always has a very distinct stew taste that is hard to mask with seasoning. While chicken stock is really easy to hide and absorbs into rice a lot better.
@@7177faith You don't really want to use water unless the rice is undercooked. The rice is going to cook in the stock. If you use water the rice will be way overcooked or you'll have a super soupy dish

Ingredients:
Onions
Garlic cloves
Olive oil
Salt
Pepper
Minced beef
Dried chili flakes

So impressed he did not use an egg for binding. Egg in meatballs makes them rubbery. Lovely binding of breadcrumbs and milk (make sure your breadcrumbs are home made), I use about a tablespoon of all purpose flour, blends very well instead of breadcrumbs and milk. Both modes work well. I prepare a fresh tomato sauce and add the meatballs, no frying involved. Slow and gentle heat for a couple of hours, really worth the time. Gordon, wonderful as usual.

most things keep for a long time unless it's a vegetable. You should always have rice, spices, beans, pasta, canned tomatoes, etc in the pantry so that when you want it you have it. Then shop for veggies/meat once a week or every other week (or just go to the store for a single piece of meat when you want it). Boom, you can make anything you want whenever you want.

To each their own, some people that have been cooking a long time just eyeball it. I dont usually measure things out i eyeball it because sometimes i use less/more than the recipe says, just depends upon how good you are at cooking or if youre someone who follows the recipe exactly.
If you cook the same recipe multiple times, you'll probably be able to eyeball it too.
