The Sprover (Espresso Machine Pour Over Style Coffee)

  • Today I'm showing off an interesting profile that I love called the Sprover. The Sprover / Spro-over is a fast flowing long ratio profile that allows you to create a filter style drink using your espresso machine. I go over the profile parameters and pull an example sprover and discuss the differences between the sprover and other types of drinks in this video. Just keep in mind the machine, roast level, grinder, and temperature you pull at. Overall a super fun way to get into pour-over-style coffee (an actual drink lol, clarity, filter coffee). If you like this style of drink you will like pour-overs.
    General Sprover Parameters:
    Light roast coffee
    1:12+
    Coarse grind size (depending on headspace, but you can go SUPER coarse like v60 even)
    40-60 seconds
    Fast flow rate (I like 4.5ml/s)
    Drop temp if needed
    Keep pressure under 1.5 bar
    I urge you to experiment and play around with this profile. It's super fun to pull this drink!

    2 ideas for modifications:
    Adding a filter paper on the bottom.
    Adding a blooming stage, just like a blooming espresso.

    The sprouted basket makes more sense for this style to avoid any potential mess because of the faster flow rate.

    Would you say the texture and body of the sprover is similar to using a cloth filter for a pour over? Seems like the lack of a paper filter in the sprover would make a big difference in these things compared to a pour over.
    I tend to like the pour over because of the clarity and clean profile I get in the cup, but compared to the 1:5 Allonges or the 1:3 turbo shot Americanos I make on the Decent, the body and clarity is super different.
    Would using a larger ratio for a sprover make the difference in the clarity and clean cup I'm used to on a v60 for example?

    Very inteesting Brian. I would love to try this but my GCP would not be able to do it.
    I can only dream to have a Decent DE1.

      I did it with de GCP, 6.5 bar Spring, and the poor man preinfusion full time.

    It makes sense that you have texture because you didn't use a paper filter at the bottom of the portfilter basket (or you didn't mention if you did) so you're probably going to have fines sized 300 microns and less in the cup.

    Did you have the decent/lunar stop the pull at 216 (18*12) grams ~ 216ml? The math does not seem to add up (4.5 ml/sec at 60 sec =270 ml or ~1:15)

    How would you say the sprover compares to a moka pot? I'm getting the idea that they are very similar. Percolation, usually 1:10 on moka pot (close to 1:12 of sprover), metal filtered.

    2:31 i have the ssp mp, what do you mean by adjust flow rate and ratio? should it be faster or slower flow, longer or shorter ratio? im struggling to make sprovers taste good :(

    Did you use a filter on top of the coffee puck? If so, what type did you use?
