The Most Underrated Decent Espresso DE1 Profile (Default)

  • I'll be covering a lot of profiles on the Decent Espresso DE1 starting with my favorite ones. I thought a great way to start everything off would be to talk about the Default profile. I go over the Default profile, pull 2 shots of Default, then compare it to Londinium and Gentle & Sweet. This is a massively underrated profile that oftentimes gets skipped over in favor of popular profiles such as Londinium or Blooming! Default is an incredibly versatile profile because you can get amazing results regardless of what type of grinder you have and get a great representation of what the coffee should taste like. I like to think of Default as that "clean slate" good profile no matter what coffee or setup I'm running. Once you taste a Default shot you will know what profile to pick next.
    Default allows me to figure out what a coffee tastes like under high pressures (intensity), higher flow rates (clarity in the notes), and under a lever style shot (body/texture). I get a great baseline of how the coffee tastes under these three key variables and then I decide what type of profile to use next! I use Default now to dial in my preferences for all coffees. In my case, I have a slower-flowing grinder (Niche) and I will pull a shot of Default and taste. I'll then determine which of those 3 key variables I want to try out next and pick a profile from there. Example: If I want more chocolate I will grind finer and use a profile such as Londinium or if I want more sweetness I will run Gentle & Sweet.
    Your results will vary depending on what roast level of coffee you're using and what grinder you are running so I suggest you try each profile out and have fun! Default is just the most versatile regardless of what your grinder situation is and will always provide a competent shot.
    IMO There are no bad profiles on the Decent. I suggest you try Default, Londinium, and Gentle & Sweet. You'll most likely enjoy shots coming out of all of them but Default in my opinion gives you great flexibility in determining what direction to head in. If you have a slow-flowing grinder (conical) Default shots can bring out nice fruit while Londinium shots will be massive chocolate. This is because Londinium requires you to grind finer (20-30 microns) and has a longer PI hold. Londinium on slower flowing grinders can result in massive chocolate with good clarity. On the other hand, if you have a fast-flowing grinder (large flat burr) you may find Londinium shots become bitter (chocolate notes extracting too much) due to the longer PI hold. This is where Default comes in where there's a shorter PI hold and you will end up getting that chocolate back while also getting great clarity/fruit.
    Thank you Joe D. for providing me notes on slow vs. fast-flowing grinders.
    There is also a thread and an answer by Charles in Diaspora about why LRv3 is not the Default profile! I'll be adding in this later when I can find it.

    Great video. I appreciate this as an owner of the Flair 58. I have been recreating some of these profiles and I especially like the blooming profile. I use it as my default profile nowadays because I drink almost exclusively light roasts and it's delicious every time.

    I really liked this video! Would love to see similar content. In particular, I was interested to hear that you can expect more sweetness from the “gentle & sweet” profile because of the 9 to 6 bar change. I pull shots on a Flair so it gives me ideas to try to replicate manually, even if all the real-time data I have is pressure and grams out.

    Playing on La Pavoni with little knowledge on modern espresso that I’m attempting to learn. Looking forward to future videos and applying those ideas to my own shots! I have a faster flowing grinder, and feel like I’ve been taking a somewhat misguided approach. This really cleared it up for me, and I’ll probably do some lower pressure shots to get more sweetness!

    what a great tip about faster flowing grinders. I like Londinium as a default with my Flair Pro2/Eureka silenzio, and with my fave brighter blend I just kept it down to 6 bar and wow it really tamed the acidity! and let the chocolate notes stand out instead of the pink lady apple notes commanding all the attn. maybe I'll experiment with longer pre infusion next since mine is about half the time as yours

      Yes! Hey, I was wondering… i have a Baratza Vario grinder which does well with an Appartamento but I’ve seen John mention Baratza grinders aren’t great with Decents. I’m going to start with it to get a good baseline but when I do eventually upgrade do you think the Niche would yield much better results or would I be better off stepping up to something like a p64 or Acaia Lunar?

    I think Default is a great all-rounder, which performs well (but not necessarily great) across all beans. Specialised profiles give you more special flavours, but Default is such a great starting point

    • @MrTimitus
      @MrTimitus 3 ปีที่แล้ว +1

      Btw, are you going to do a video on the parameters of the Default? What happens if you elongate PI, hold pressure longer, higher/lower peak/end pressure..?

  • @ssjcell
    @ssjcell 3 ปีที่แล้ว

    just a side note, i have a conical and you can still have a lot of success with turbo shots. you will get a comparable fruit forward taste like allonge. However, the fruit is usually more mixed (less clarity separation).

    Brian, a good video idea might be exploring body in espresso using the Decent. A good amount of people are on the fence about it because of the original Home Barista review that stated that the DE1 couldn’t replicate the same body and mouthfeel he got from his LaSpaziale Mini Vivaldi 2. I know that review is old and many things may have changed so I’m wondering if you could share your experience or insight. I love full-bodied syrupy shots.

    • @ssjcell
      @ssjcell 3 ปีที่แล้ว

      IMO, that still holds, even with the new versions of the machine with less headspace. you have to do a bit of overdosing and spacer/bplus screen use if you want to get a full body syrup. I would love to know how to replicate it on a decent 1 to 1, but I dont think the machine is best for that style of shot. Its great for flavor separation and light roasts IMO (which i love). If Brian knows a better way it would be a great video too.

    So I’m a newbie on the decent….. does it control both the flow of water and separately how much pressure is in the portafilter?

    • @robtheknob7791
      @robtheknob7791 3 ปีที่แล้ว +1

      Grind size determines resistance in the puck which allows for pressure to accumulate in the portafilter.

    • @JoeyVaracalli
      @JoeyVaracalli 3 ปีที่แล้ว

      @@robtheknob7791 yes I understand that…. My question is if it can change pressure without changing water flow especially releasing pressure

    • @robtheknob7791
      @robtheknob7791 3 ปีที่แล้ว

      @@JoeyVaracalli no that’s not how it functions.

    • @robtheknob7791
      @robtheknob7791 3 ปีที่แล้ว

      The decent machine has parameters that you can customize. It will adjust the flow of water to regulate how much pressure it senses in the portafilter. Regulating flow is the only way it can regulate pressure.

    • @gcw52youtubification
      @gcw52youtubification 2 ปีที่แล้ว

      Flow is the dependent variable and is determined by a combination of puck resistance to flow and the applied pressure. Zero pressure results in no flow. Infinite resistance results in no flow (more or less). The Decent machine controls only pressure and with that it indirectly controls flow rate. A flow limiter can be set in a profile which, if exceeded, will automatically reduce pressure to limit the flow rate.
