Pancakes for Diabetics - that ACTUALLY TASTE GOOD!

  • In this video Dennis Pollock shares his go-to pancake recipe which a) tastes good, b) is easy to make, and c) barely budges his blood sugar. He reveals several post-meal tests to demonstrate this meal's minimal effect upon blood sugar.
    Coconut Pancake Recipe:
    3 eggs
    3 Tablespoons heavy whipping cream
    3 Tablespoons olive or melted coconut oil
    3 Tablespoons of coconut flour
    1 Tablespoon of almond flour
    1/4 teaspoon salt (or two shakes from a shaker)
    1/4 teaspoon baking powder
    1 packet of stevia
    Blend all ingredients together and use as a pancake mix. Cook the way you would with traditional pancakes, but at a slightly lower temperature, since this recipe has a significant egg content.

    I make pancakes for hamburger buns I use only 1 cup of almond flour, 2 eggs, 1/4 c water and 1/4 tsp of salt and mix and fry like pancakes and I use these pancakes for my hamburger and sandwiches buns. Delicious! Best of all very little spike in blood sugar since I do not put any sugar in this pancake dough.

      Cheers for this, I have been researching "type 2 diabetes food menu" for a while now, and I think this has helped. Ever heard of - Nanadelyn Nenogan Magic - (search on google ) ? Ive heard some extraordinary things about it and my buddy got great success with it.

    I’m gonna try these!!! They look super awesome. I’m not diabetic but I want to reverse my insulin resistance and lose weight. I believe a keto-lifestyle is ideal for this. Thanks for sharing, it looks like a super approachable recipe.

    Recently started eating keto. Was desperately for a “bread like” substitute and fixed this recipe adding cinnamon, nutmeg and vanilla extract. Made one large pancake, ate 1/2 and I’m very satisfied. Thank you👍🏾

    OK I made them. Granted I'm no cook, but I put in all the ingredients and it was more of a paste than pancake batter. One thing I added was strawberry preserves made with Splenda. The taste was OK, but the texture was kind of grainy. So I don't know if I didn't mix it well enough, or didn't cook it enough. I only made one pancake and have some batter left to make another. After one hour blood sugar was 96 up from 83. Update: I made another batch. This time I added more whipping cream and had my wife cook them. Turned out perfect.

    The Pancakes are incredible! My readings actually went down a bit after one hour! I made a small modification by adding a liberal amount of Cinnamon and crushed pecans to the recipe. My numbers are similar to yours and I appreciate you keeping me on track by keeping my numbers in line through your encouragement........ I try to get below 100 before a carb meal (not in the morning); Otherwise it's just a piece of chicken and some veggies like cauliflower, broccoli or brussel sprouts until I can get the number down below 100. This recipe works for me similar to the chicken and veggies. Thanks for all the good information you are providing. It's saving me a lot of experimentation on my own! Over the past 6 months my A1c has dropped from 6.4 to 5.7.. I'm making progress by watching my carbs.

    Awesome, I love pancakes. I also did a giant stack of pancakes and orange juice every Saturday not knowing what it was doing to my blood sugar levels. Looks like I may have pancakes this Saturday. Blessings!!!

    I made these this morning and they are easy and delicious. They were so good I didn’t even put any syrup of any kind on them. Just butter. And the best part is that they didn’t seem to cause a problem with blood sugar. I’ve been working hard to get mine under control again (I know this is wrong but I took a year off from blood sugar while I was dealing with breast cancer). My A1C in March was 6.2 but from what my averages are I think it’s about 5.6 or 5.7 right now. Anyway 1 hour after breakfast of 2 sausage patties and 2 pancakes my blood sugar was 128 (I don’t usually measure at one hour) but it was down to 103 at the 2 hour mark. That’s a good number for me at 2 hours.

    Thanks for this recipe; I made it, but instead of using stevia, I mashed half of a very riped banana, only because I don't use stevia or any kind of sweetners; it was delicious! I also did not use any syrup, but just a bit of butter on my pancakes.

      D Singh Bananas are super high in sugar! Higher than candy bars. Stevia is is all natural and won’t raise blood sugar at all.

      I've had type 2 diabetes for the past 21 years; three years ago I stopped the 2000 mg Glucophage that I took for the past 18 years and I'm controlling it with eating healthy, exercising, and drinking 1+1/2-2 liters of water daily; I'm medication free and it feels great! Thank God. We're not genetically identical; all of us have different genes so things affect us differently.
      I cannot eat mangoes, oranges, apples, and a whole banana or even half by itself, but I can use half of a banana sliced or some blueberries with my yogurt or in pancakes. I also make other cakes and sweeten them with banana or blueberries and I've no problem. By the way, I don't sweeten anything too much.
      I consume lots of salads, steamed vegetables with some kind of seafood like fish, lobster, mussels, and some meat such as chicken and lamb. I will usually season chicken and bake it or make Tandoori and the only way that I love lamb, is seasoned with my choice of herbs and placed under the broiler for 4-5 minutes on each side. I do not eat beef and pork.
      You've to be very determined and know exactly what you're doing to stop your medication! By testing my sugar regularly at first, I knew what spiked my sugar and learned when, and how to eat.
      Pastor Dennis taught me how and when to test my sugar; doctors advised, that I should test my sugar 2 hours after meals which is not good advice, because, by that time, your sugar is already way, way down! Praise God for Pastor Dennis, he's a Godsend 🙏🙏🙏

    I loved having pancakes too and was deeply saddened by their loss from my current diet. I recently purchased a pancake/waffle mix from a company called “Birch Benders” at my local Costco. Much more expensive than regular mixes but for the ability to enjoy the treat so welcome. The ingredients are very similar to yours Dennis. These easy to make breakfast meals with need nothing more needed than water and of course some blueberries certainly add to quality of life.

    I've been diabetic for a very long time but now I'm in my 40's and my a1c is 5.3 and trying so hard and watching what I eat.       @@cozy_king That depends on your own biology. Test yourself after 45 minutes to 1 hour. Have NOTHING else with the pancakes until you can establish what happens with certainty.

      These pancakes are delicious, baked them in the evening for someone with diabetes, in the morning we made the omelet and in the late evening the person tested at 5.2. So that’s a huge improvement, thank you very much for sharing your knowledge. We tried a number of your tips and cut back on oatmeal since probably three weeks.

    I have to tell you that since I started watching you, just a week ago, my sugars run between 90 and 123. It's amazing for me. My doctor said for me to keep the sugar under 180 (after meals). Wow, huh? Thank you!!!!

      I love that maple syrup! Its a little watery, but the taste is there.❤ i use that maple syrup on my plain greek yogurt, quinoa in the morning and as flavoring for chaffles.

    Love your channel and watch many of your videos. Been craving pancakes and waffles, but didn’t know how to beat the carbs. I’m type 2 for 10 years now and Metformin and Oseni just wasn’t keeping my numbers down. I will let myself die before I ever take insulin so I’ve really embraced the Keto diet low to no carb lifestyle. I make healthy meals every day and eat my meals within a 6 hour window fasting for 18 hours each day. My numbers have come down a lot. I was 108 yesterday morning which is very low for me. I’m typically 135 - 180. Thanks

    I make my pancakes with eggs, coconut flour, baking powder, some protein powder with sweetener in it, and some cottage cheese. Absolutely love it. I make them every day if I'm not extremely short on time.

    Been cooking Almond Flour flatbreads. But this looks great and I will give it a go. Been on the intermittent fasting (36hr) fasts for not even a week and from taking 4 tablets a day I can manage very well with 1. Its just unbelievable.

    Thanks. I will try your recipe. I have about 4 LC pancakes and I love them all! Lol. I will start checking after eating, as you do, and may the best pancake win! (I'm leaning towards yours, as that was your goal, and it's high protein).
    Ps I love coconut flavor! I enjoy topping my coffee with 2 T homemade whipped cream! It breaks my fast, with the protein, so I drink as dessert, after lunch. I use a couple drops Stevia in coffee and sprinkle cinnamon on top, pumpkin spice would probably work too. Just use sparingly, as these spices do have bits of carbs (depends on how well you want to control). I was using purchased NF whipped cream that I loved, until I read the ingredients...palm oil, for starters.
    1/2 cup HWC makes 1 cup whipped cream. Make as much as you can use in 3-4 days, or freeze for longer. Stores in fridge, in Tupperware or similar.
    I was using daily, until I decided to limit my caffeine to only weekends. Mini blenders will work, but I don't mind using the whisk for 15 minutes, while my coffee brews, and rests.

    I like this recipe. Almost all the ingredients are in units of 3 so it is easy to increase it to units of 4 and make 4 pancakes. I do substitute melted butter for melted coconut oil because it is easier to measure the butter as the package comes with lines where to cut for each ounce. I have made it less keto friendly as I also add 3 tablespoons of wheat flour and 3 tablespoons of water to improve the consistency when cooking. It has been my experience that eating a keto breakfast with these pancakes and taking "Metformin" is not a good idea as I felt lousy for several hours. I now take the "Metformin" when I have a non-keto breakfast or a non-keto dinner. My waking up meter numbers are gradually dropping over the last month from 187 to 157 with the help of a semi-keto diet, trying to not eat for 12 hours a day, and taking "Metformin".

He is struggling to keep faith and not give up. I watched your video and will ask him in the morning to watch more of your videos with me.     Although I'm not a diabetic I do watch my carb intake and I found a recipe for pancakes that is the best and it's low carb. I tried making them once with coconut flour and I did not like them at all. The recipe I use now uses a small amount of cream cheese melted in the microwave and to that you add almond flour, 2 eggs, heavy whipping cream, a pinch of salt, baking powder, vanilla extract. Finally you add one more ingredient which is the secret ingredient which gives these pancakes they're awesome taste. One teaspoon of Pumpkin Pie Spice. I'm telling you I was absolutely floored when I tasted these pancakes and I use sugar-free syrup as well and usually top them with some blueberries or strawberries.

    For lesser batch, I used 2 eggs so 2/3rds mix volumes (extra "Ground Almond" as I had no almond or coconut flour) - was almost like an omelette, maybe too thick as I am inexperiened with pancakes - will try just one egg and thnner next time - will look harder for Almond and Coconut Flour.
    Very tasty just the same lol.

    Good recipe. Important to check the carbs in coconut flour as some seem to be higher that others even when the label says 100% coconut flour.

    instead of stevia, add cinnamon, it helps to lower blood sugar and also makes it sweet tasting
    and add wet stuff first then dry

      05/17/19 I have a word processor ( typewriter) that I use for typing quick forms/ envelopes. However, I put the recipe on a spindle near my my desktop. I think that it will come in handy with the recommendation for Mrs, Butter-Worth Sugar Free Syrup.

    I'm constantly picking at 200-299 I can get up in the morning and my blood sugar is 160 I can eat a salad that day being the only meal and my blood sugar Spike at 299 if I don't eat nothing for two days and drink nothing but water I Fall to 80 makes me wonder whatever happened to the good old days when I could eat anything I wanted

      Don't worry you will heal. Just focus on your health. You can always have cheat day sometimes.
      Be positive some people have tubes sticking to them because they can not eat anything.. Gratitude and loads of love ❤️

      One thing you absolutely have to get is the fat intake. If you don’t your blood sugar will stay on the high side and weight loss will be difficult.

      One major ingredient to losing glucose is God. Do not accept this condition. Also look into berberine and bit d3 supplements, watch Dr. ROBERT LUSTIG, Dr. Sarah Hallberg, and Dr. Jason Fung online.

    This is more managing diabetes. If you're type two (or even type 1) there's several dietary patterns that help or can even reverse diabetes. I recommend people look into it.
