My best friend's mom emigrated from Germany to the US and introduced me to 'pancake soup' which was basically crepes cut into strips in beef broth. I haven't had them in years due to trying to avoid gluten and carbs, but now you've given me a way to make pancake soup again in honor of this wonderful woman who recently passed away.
Of all the things I have missed and not found a suitable replacement for: noodles are at the top of the list. I tried these tonight and made a keto alfredo lasagna with them. There was no taste of egg or other problem with them. I am absolutely thrilled with this recipe. Thank you.
@@infernus6278 that taste comes from two things from my experience: 1. Too much yolk 2. Overcooking Also, the gelatin likely changes the texture and dilutes any remaining flavor to some degree. 🤔 Hope that makes sense!
I was thinking you could use a mandolin on an ultra thin setting after freezing...if you didn't have a good enough knife or proper knife skills. Ignore the haters lol.
Totally Awesome! So, 69 yr old man, working on getting seed oils out of my life and reducing carbs. This recipe is sooooo easy! I bought an 11" pan on Temu for $20, should have paid attention and got the 10"😮. Only had 1 1/2 tbsp of gelatin and too lazy to go to the store. So, cut 1 egg white out and even with the larger pan made 1 3/4 crepes. Took like 5-10 min start to finish. They came out beautifully and flavor was not exactly the same as flour noodles, but comparable. I'd rate this recipe a 10 all day long! Thank you sooo much😂
If you put the raw egg in a tea strainer for a second, it will drain that watery stuff. This was a tip in making poached eggs, too. Just let the egg sit in the strainer for a second until the runny white is gone. The thicker white will remain with the yolk. I finally was able to make poached eggs this way with no runny whites in the water.

I love these, have used them in so many ways. My fave snack is to cut them thin, put them in my countertop oven to dry them out a bit and then put into a hot skillet with pork belly grease and fry them crispy, sprinkle lots of salt / jalapeno cheese porking good seasoning on them and eat them like a shoestring fry. Even a sprinkling of parm cheese. omg I'm getting hungry now just thinking about them, LOL
I had a medical procedure done today and therefore wanted something easy, but comforting to eat. I made these noodles and dropped them into some chicken broth…. Heaven! I’ve made these three nights in a row now!! 🤩 First I did beef stroganoff with xanthan gum to thicken it, then I served the noodles with melted butter alongside chicken thighs. Tonight I used them for lasagna. I added some herbs and garlic powder to jazz them up a bit. Yum!! This recipe is basically foolproof, and you really don’t need any special tools. I do have the same crepe pan so I used that, but to flip them I just slid a spatula handle under there and it worked fine. Even a clean ruler or other long, thin piece of plastic would work. Everyone-make these ASAP!!
This is a game changer. I could hug you. I almost didn't try making them cuz I thought oh I can just cut up the egglife wraps and that's usually what I do. I'm so glad I tried these because these out surpassed the egg wraps by tons they have more of a texture like an actual flour noodle. One thing I miss so much is chicken and noodles like me and my grandma used to make. it's my favorite memory of her. And making these made me feel like I was eating my Grandma's homemade flour noodles with chicken. I found that cutting them with a kitchen scissor I can get them much thinner

THESE CREPES. I CANNOT SAY ENOUGH HOW WONDERFUL THEY ARE NILI LOL. I batch cook them on my days off and freeze them. I LIVE ON THEM. THEY ARE DELICIOUS !!! I will be making clam sauce this weekend which is one of my favorites. YUM. Folks, these are so much better than Egglife in my opinion.
@@corieddings5713 No just let them cool on the counter, stack them up, put a paper towel on the top and bottom of the stack and slide into a large zip lock bag. Keep some air in the bag so they don't smash. Easy peasy. Don't stack more that ten because they get heavy. I have four bags in there right now. They thaw out in fridge and you can't even tell they've been frozen.

Very cool to see you doing a video of these! I've made them for years now...using only whole eggs. But I've used them for, as you say, pasta noodles, lasagne noodles, crepes, tortilla replacements, etc. They are amazing! And I've never seen anyone else do them. Both savory and sweet applications. I love the idea of adding gelatin! I will definitely do that! By the way, we are from Oregon (Salem/Beaverton/Forest Grove) but recently relocated to NE Texas. Very nice. Will be trying your recipe. I've used other no-carb/low-carb noodles and I really like adding them to an Asian stir-fry it's great because fried rice includes egg, so the flavors work together nicely with the egg based noodles added to the meat, veg and seasoning you would use for fried rice. Add the noodles at the very end because trying to stir fry them makes them fall apart.

These are delicious! I made them with two whole eggs, and did not notice an eggy taste. I made them a bit smaller and had two on the side with some hamburger meat. These are a nice change of pace! And they do taste a lot like unsweetened pancakes. Very yummy. Thank you for sharing this recipe. 👍
I thought the recipe used powdered egg whites or something, but Im pleasantly surprised you use real eggs. Will test this! Edit: I tested it now; 1 egg, 1 egg white (=0,5 cup), pinch of salt, 1 Tbs gelatine powder. Tasted a bit eggy, but still nice. Will try only egg whites as well to check the difference. Such a simple recipe. LOVE recipes with both real and few ingredience!

These are wonderful noodle substitutes. I started making ones much like these last year - keto twins did iirc ketogenic woman's recipe (3 eggs, 4 tbsp cr ch, 1 tbsp parm ch, 3 tbsp pork rind dust, blend, pour out on big rectangular baking sheet (sil. mat) - bake 6-7 min at 350) - cool, roll, slice). I don't know why you make them as crepes - maybe you like this or find it easy. I have done your other carn. pasta recipe (well this basic one) and poured it out on a rect. baking sheet - just like the others (also on a sil. mat on the sheet) - baked at 350 6-7 min - and cooled, rolled, sliced. It was - for me - far easier than frying them as crepes and worked great. I don't mean to sound critical when I say "I don't know why" - I am a fan. It's more that I want to know if there is a reason. If they are better fried as crepes (more fat??) pls let me know. But the baking method worked great for me. Thanks.
I'm a gal of 72 years and I've been making German crepes since I was 9. I'm very allergic to egg whites. Many folks are and are unaware. I don't like the taste,for me I think the whites are too eggs, and the yolks are buttery. As long as you don't eat lots of yolks Too often. They're good for you,full of balanced nutrition. Especially vitamin E which helps to break down the cholesterol. And I raise my own hens and feed them the healthiest ingredients, and they free range. Wish all were able to do that, anyway I put a little egg replacer in it, potatoes starch.,arrowroot powder,or agar..and...I've also made these noodles, mom was a German chef ,I don't have a channel, don't know how. Hi Indigo, I just made these carnivore noodles and they taste delicious and I’m putting them with some chicken broth and chicken for one meal and then tomorrow a carnivore chicken Alfredo! 😋 They taste delicious thank you very very much. This was so easy and I didn’t have a crate pan so I used nonstick skillet and aspatula and another spatula. First time for everything I never made anything like a crêpe before. And I used one and 3/4 of egg whites that contain three egg yolks and it came out good thank you so very very much.👏💪🥚🧈🥩🥓❤️👏👏
I added several table spoons of almond flour with arrow root flour and 1/4 teaspoon of xanthan gum just because I think noodles have a flour or they are just eggs. They were great , thanks for the inspiration !!!
Thanks, Nili... I made these for the first time tonight... mine folded up when I turned them, but my stove isn't level & I figured it wouldn't affect the taste much. I made kind of a stroganoff with ground beef, broth, cream cheese & a little cheddar along with some mushrooms, onions & a touch of xanthan gum to thicken... my noodles are thick, but taste great, a nice addition! Just have to practice to get the crepe correctly turned..lol. Yum
I just made these. They came out very good for my first attempt. I’m eating them either a creamy chicken. My beef gluten seamed to all sink to the bottom. Next time I will stir the batter just before pouring.
I buy pork skin which is cut into 1/8 inch strips like a vermicelli noodle. I get them at the Asian grocery store. Also if you're on a keto diet glass noodles for sweet potato noodles are really low in carbohydrate. They are 17 grams per serving. There are other brands that have higher carbs so watch out for those. You get those at the Asian grocery store as well
Today I goofed. I made these with an egg and dry egg whites and a little water to help them blend (gelatin and salt)...... But they are almost perfect Pizza crust (they lack the flavor of wheat) but the texture is just right. wohoo pizza at last!

I couldn't wait. lol While I didn't have the ingredients for the soup, I did go ahead and make these wraps. For those curious, it's a very light, almost flavorless burrito wrap that holds together beautifully! I didn't get 1.5 C out of 1 egg plus 3 whites though...and consequently, I guess I added too much gelatin because mine puffed up a bit. Not a problem - they fell after I took them out of the pan - but, when I tried to fry them as chips, they also puffed up and didn't get very crunchy (again, probably because my gelatin ratio was off) but still tasted good! I'll definitely try again today! Thank you, thank you, Indigo! :) This is amazing!! Now.....how about figuring out how to make those wild chicken protein chips at home?? They're so expensive and they have to be easy to make - the ingredients listed on the bag is chicken breast, some oil, bone broth, egg whites and they use some tapioca starch. I'm thinking maybe they use egg whites as a base (whipped maybe?) and add some dehydrated chicken breast powder to it (hence why they need the broth to add moisture)? I love the lighter crunch in the manufactured product than just simply dehydrating chicken breast, which can be ultra dry, and more of a jerky than a chip.
I'm thinking if this works it will be the one thing (next to finding an actual delicious keto carnivore bread recipe) that will be life-changing for me. I can't wait to try it. Thank you.

Does it matter if you use pork gelatin instead of beef gelatin? Has anyone ever tried to bake the mixture in the oven instead of cooking it on the stovetop with a crepe pan? I have several silicone baking mats and it just seems easier to cook everything in one go instead of in batches. I’m even thinking about using my Ninja Foodi Grill to make it.

To get finer noodles just roll them up, put them in the freezer, then slice on a meat slicer.

I have always used a cast iron pan, seasoned of course, for crepes. Works great.
I’m concerned about aluminum coated pans .
Non stick cookware is made with toxic chemicals. I quit using non stick decades ago.

So yummy! I spiced them up with salt, garlic, onion, parsley and italian seasoning and grated jalepeno cheese.

Very cool to see you doing a video of these! I've made them for years now...using only whole eggs. But I've used them for, as you say, pasta noodles, lasagne noodles, crepes, tortilla replacements, etc. They are amazing! And I've never seen anyone else do them. Both savory and sweet applications. I love the idea of adding gelatin! I will definitely do that! By the way, we are from Oregon (Salem/Beaverton/Forest Grove) but recently relocated to NE Texas. It's fun to see you posting from such a familiar place! I'm enjoying your videos. Thanks for sharing! ;)

Very nice. Will be trying your recipe. I've used other no-carb/low-carb noodles and I really like adding them to an Asian stir-fry it's great because fried rice includes egg, so the flavors work together nicely with the egg based noodles added to the meat, veg and seasoning you would use for fried rice. Add the noodles at the very end because trying to stir fry them makes them fall apart.
I used a smaller crêpe pan so I got 5 instead of 3- worked perfectly from first to last

These are delicious! I made them with two whole eggs, and did not notice an eggy taste. I made them a bit smaller and had two on the side with some hamburger meat. These are a nice change of pace! And they do taste a lot like unsweetened pancakes. Very yummy. Thank you for sharing this recipe. 👍

I thought the recipe used powdered egg whites or something, but Im pleasantly surprised you use real eggs. Will test this!
Edit: I tested it now; 1 egg, 1 egg white (=0,5 cup), pinch of salt, 1 Tbs gelatine powder. Tasted a bit eggy, but still nice. Will try only egg whites as well to check the difference. Such a simple recipe. LOVE recipes with both real and few ingredience!

Those look great and I can get all those ingredients in the UK, there are so many things we can’t get such as allulose, butter powder etc it’s very frustrating when the bread etc looks so good but we can’t make it, thanks for all the effort you put in ❤️

just began putting 2x eggyolk and butter in my coffee, so creamy and delicious. now i have something to use the eggwhites for (which i kinda find disgusting, which sounds kind of weird for someone who gobbles down near raw beef by the fistfull)

These are wonderful noodle substitutes. I started making ones much like these last year - keto twins did iirc ketogenic woman's recipe (3 eggs, 4 tbsp cr ch, 1 tbsp parm ch, 3 tbsp pork rind dust, blend, pour out on big rectangular baking sheet (sil. mat) - bake 6-7 min at 350) - cool, roll, slice).
I don't know why you make them as crepes - maybe you like this or find it easy. I have done your other carn. pasta recipe (well this basic one) and poured it out on a rect. baking sheet - just like the others (also on a sil. mat on the sheet) - baked at 350 6-7 min - and cooled, rolled, sliced. It was - for me - far easier than frying them as crepes and worked great. I don't mean to sound critical when I say "I don't know why" - I am a fan. It's more that I want to know if there is a reason. If they are better fried as crepes (more fat??) pls let me know. But the baking method worked great for me. Thanks.

I'm a gal of 72 years and I've been making German crepes since I was 9. I'm very allergic to egg whites. Many folks are and are unaware. I don't like the taste,for me I think the whites are too eggs, and the yolks are buttery. As long as you don't eat lots of yolks
Too often. They're good for you,full of balanced nutrition. Especially vitamin E which helps to break down the cholesterol. And I raise my own hens and feed them the healthiest ingredients, and they free range. Wish all were able to do that, anyway I put a little egg replacer in it, potatoes starch.,arrowroot powder,or agar..and...I've also made these noodles, mom was a German chef ,I don't have a channel, don't know how. I love this recipe, I've made several wraps using gelatin and cartons egg whites, and instead of gelatin I am now using Xanthum gum. Thank you for this recipe! I'll try the noodles as well. 😊

Hi Indigo, I just made these carnivore noodles and they taste delicious and I’m putting them with some chicken broth and chicken for one meal and then tomorrow a carnivore chicken Alfredo! 😋
They taste delicious thank you very very much. This was so easy and I didn’t have a crate pan so I used nonstick skillet and aspatula and another spatula. First time for everything I never made anything like a crêpe before. And I used one and 3/4 of egg whites that contain three egg yolks and it came out good thank you so very very much.👏💪🥚🧈🥩🥓❤️👏👏
I added several table spoons of almond flour with arrow root flour and 1/4 teaspoon of xanthan gum just because I think noodles have a flour or they are just eggs. They were great , thanks for the inspiration !!!

Thanks, Nili... I made these for the first time tonight... mine folded up when I turned them, but my stove isn't level & I figured it wouldn't affect the taste much. I made kind of a stroganoff with ground beef, broth, cream cheese & a little cheddar along with some mushrooms, onions & a touch of xanthan gum to thicken... my noodles are thick, but taste great, a nice addition! Just have to practice to get the crepe correctly turned..lol. Yum

They came out very good for my first attempt. I’m eating them either a creamy chicken.
My beef gluten seamed to all sink to the bottom. Next time I will stir the batter just before pouring.
I buy pork skin which is cut into 1/8 inch strips like a vermicelli noodle. I get them at the Asian grocery store. Also if you're on a keto diet glass noodles for sweet potato noodles are really low in carbohydrate. They are 17 grams per serving. There are other brands that have higher carbs so watch out for those. You get those at the Asian grocery store as well
So they are just eggs cut in strips? How does that make them noodles? Isn't it just like eating scrambled eggs? I don't get it.

I like you can make these in the pan rather than the oven. My trials in the oven with Anita’s have not been great, found out my oven is not level.
Today I goofed. I made these with an egg and dry egg whites and a little water to help them blend (gelatin and salt)...... But they are almost perfect Pizza crust (they lack the flavor of wheat) but the texture is just right. wohoo pizza at last!

I couldn't wait. lol While I didn't have the ingredients for the soup, I did go ahead and make these wraps. For those curious, it's a very light, almost flavorless burrito wrap that holds together beautifully! I didn't get 1.5 C out of 1 egg plus 3 whites though...and consequently, I guess I added too much gelatin because mine puffed up a bit. Not a problem - they fell after I took them out of the pan - but, when I tried to fry them as chips, they also puffed up and didn't get very crunchy (again, probably because my gelatin ratio was off) but still tasted good! I'll definitely try again today! Thank you, thank you, Indigo! :) This is amazing!!
Now.....how about figuring out how to make those wild chicken protein chips at home?? They're so expensive and they have to be easy to make - the ingredients listed on the bag is chicken breast, some oil, bone broth, egg whites and they use some tapioca starch. I'm thinking maybe they use egg whites as a base (whipped maybe?) and add some dehydrated chicken breast powder to it (hence why they need the broth to add moisture)? I love the lighter crunch in the manufactured product than just simply dehydrating chicken breast, which can be ultra dry, and more of a jerky than a chip.
I'm thinking if this works it will be the one thing (next to finding an actual delicious keto carnivore bread recipe) that will be life-changing for me. I can't wait to try it. Thank you.

Has anyone ever tried to bake the mixture in the oven instead of cooking it on the stovetop with a crepe pan?
I have several silicone baking mats and it just seems easier to cook everything in one go instead of in batches. I’m even thinking about using my Ninja Foodi Grill to make it.
