I may try this one day due to my roomey not being able to handle beef and pork, and maybe a good option for a vegan, I prefer to add protein though; brown the meat (ground beef or turkey/chicken with ground italian pork sausage/turkey/chicken) with seasonings(garlic salt pepper oregano, basil parsley(or italian seasoning), then adding the veggies(peppers, onions) no need to add oil, but may need to drain some of the fat, prefer to leave half of it there. When the onions start to brown, and the peppers start to soften, add the tomato sauce(homemade or canned), now i like to let it heat up to a simmer then let it slow cook in the pot for 5 hours minimum, at this point all the flavors have really come together, then finally depending on the person or sauce you used, you can add a little sugar, i prefer not to use this due to my sugar free diet seeing as the tomatoes already have tons of it in there, but the acid can be overpowering so i will add something like brown sugar. i want to try and make it with honey next time but this recipe is great for doing sausage peppers and onion or "potluck" (bunch of meats prepped and thrown together). sauce is touchy because its all about the flavors you add to it. always taste your work and watch it carefully.

The paprika I used was sweet smoked, not spicy at all, it adds a beautiful smoky flavor :) much love
