Albert, I have 3rd stage kidney disease and am diabetic. YT pushed some of your videos my way as I began searching for creative recipes for chickpeas. I have to forego meat altogether per my nephrology dietician to save my kidneys, and coming from a hard core clan of carnivores I was having some difficulty with plant based meal prep. You have NO idea what a difference your recipes have made to my health and labwork! You have NO idea what a difference you have made to my family. Now we enjoy your delicious plant-based recipes 4 to 5 days a week. I prepared this delicious Spanish Gypsy Stew this evening and my family raved about it. What a wonderful new variety of flavors and combinations you have shared with us, and they are EXACTLY as you describe: "an explosion of flavors and so easy to prepare"! Heartfelt thanks. I'm sharing your videos with everyone I can! 💖👩🌾👩🍳👏
I am a dialysis patient, diabetic too. Been looking for ways to incorporate more veg in my diet. The soups and stews this guy brings out for us look really good and I can't wait to try! Good luck to you in taking care of yourself.
YESSS! My parents taught/forced us children to cook! 60 years ago. I can make this drunk or in my sleep. And have something WONDERFUL. Just like our grand mother used to make. Thanks for the Trip Down Memory Lane. This I will make for Saturday.
Im out of pumpkin so I used the last of my buternut squash. An easy substitution for those of us who wont see a pumpkin until fall. Our daughter is a celiac so I use gluten-free bread and that works too. Cant wait to make this again.
i love this type of food, how you don't use anything hard to find, how it is so similar to what a person does at home. As a vegan,i thank you so very much for your nutritious, well made and explained dishes
I hate it when people tell you how great something turned out when they replace all the ingredients, but I did not have spinach for the broth. It still turned out great and was easy. I replaced the pear in the soup (no pears), and I used hot papricka instead of sweet (we like a kick). However everything else I followed to a "T". It is great! We are vegetarians, and it's hard to find tasty, filling food that is not full of fat and cheese. Thank you!
My grandma used to make the “Olla Gitana” from Murcia and it tasted soooo good! I have completed forgot about this recipe. Gracias Albert por tracer me buenos recuerdos!
Awesome!!!! I never had pear, pumpkin, mint, saffron, almond, toasty/crusty bread into a stew and I'm 70 years old. Thank you for sharing this fantastic savory/sweet, healthy/hearty flavor combination stew!!!! All the Best!!!! Grow and Prosper!!!!
This was absolutely epic. I lived in Murcia for 9 years and (although I saw it on menus, I'm ashamed now to say) I never tried it. Can't wait to cook it again. Thank you so much.
Albert, another sensational recipe, I know it was good because my wife got up and helped herself to a 2nd bowl without me even asking. Wow those flavours really come together, thank you. Lots of love.
I am impressed with your English, you cannot find an accent! The recipes I have seen so far, I am so excited to try them all. Beautiful dishes and narrative. You got a new subscriber. Greetings from Michigan, USA

Oh my goodness! I just made the stew and I'm eating it as I type. Delicious! I did add one more ingredient that I felt was missing, 5 minutes before I served, I added fresh orange zest. Fantastic! You try! I love your channel!
When I (largely) gave up meat and dairy a few months back, my one worry was finding tasty pulse based stews and broths in addition to the ones I already make. This channel and the one on Ikarian cooking have been real life savers! 😉👍
Just made this. I used butternut squash and didn't have mint or parsley and it was still wonderful! I've been cooking from your recipes regularly lately and they've all been amazing! Thank you!
I'm a very picky eater (and have a lot of dietary restrictions) but your recipes look so good. It is usually easy to find a substitute for an item that I dislike. I really appreciate how so many of your recipes are based on fresh ingredients put together simply and quickly (and deliciously).
Wow. This stew is so interesting! One bite has a sweetness to it, the next is bright and fresh, the next rich and savory. Full disclosure, I chose to use butternut squash instead of pumpkin and I didn't have any almonds. The fried bread/garlic mix at the end smelled incredible. As always, I love the basic, simple ingredients that amount to so much more than you expect. Thanks, Albert, sorry I'm so late giving this a try! I'm certain I will crave this as the weather cools!
I’ve lived here in Murcia for 18 years and this is a very different version of Gypsy Stew to the one I make where the main ingredients are pork, sweet potato and lots of cumin. But this looks delicious too so I’ll give it a go!
@@Cantetinza17 ....usually lean pork loin. White beans are always used. A North African influence is the use of cumin but, as no pork is eaten in Morocco, Tunisia etc then lamb would be the meat of choice. In any case it is a cheap “peasant” dish where all the ingredients are cheap, easily available, and nourishing. Always a good combination.
I'm in Morocco and this looks Moroccan. I can definitely get all these ingredients! Even saw fresh pumpkin and wanted a recipe to use it. Perfect. I can't wait to try it!
Delicious! I'm going to try this three ways: 1) Stand alone as you have cooked it. 2) With a Greek Kotopoulo Souvlaki. (Chicken marinated in garlic & lemon, skewered & flame grilled.) 3) With lamb chops & baked potato. Your recipes are fantastic!

Interesting comment about not detecting an accent in the young mans English
I speak English with an Australian Accent any you Carina would probably have an American accent to your English
There are so many different accents in the English language depending where you live in the world if British English is not your primary language
My son in law speaks English with a mixture of Irish and London accents as there is where he learnt the language
My older sister and brother both had Italian accents in their English as they were teenagers when the family immigrated to Australia
My other brother was three years old and I was twelve months old so we both don’t have Italian Accents but Australian as here is where we learned
I also speak Italian and the language of my region in Italy and by the way understand a little Spanish as it is also a Latin based language
Anyway, languages have always been interesting to me
