Well it seems like a lot of work, but I think I would really like it, maybe I could get someone else to make it for me. Now with the crust, since butter is already an ingredient, what can I use for solid vegetable fat? I don't care for lard.

@@panatypical in the US there is a product that is like lard but made from vegetables, the brand name is Crisco but you should never buy the brand name of anything in the US because there is only one factory per product for everything and they only change the packaging, so always get the cheaper version

I’ve taken your advice and turned on the notifications (only site I do). Since I have neither the pastry cutter or tins that size any hints on using muffin (or mini) tins? Thanks for another recipe I’ve got to try!
Note that he used an Indian bay leaf, not a laurel bay leaf (common in the US). They are very different and if you don't have Indian bay a substitute could be a small pinch of cinnamon or a single clove. Great trick using the spoon handle to cut the fats into the flour! It looked like the perfect texture.
I KNOW this one will be a winner because as I was watching it with my wife, she suddenly said, "Those really DO look yummy...." When you get that from HER, it's a HIT!! We'll be trying these, to be sure. 😊😊😊

@@LucyKelly-of6cu Apparently, that depends on where you're from - a fact I didn't know until watching this video.
It seems that the word "corn" originally meant "chunky granules" - so one might see talk of corns of barley, wheat or salt (salt being where we get the term "corned beef.") This use is still quite common outside Canada, the United States and Australia. Over there, they often call corn (the stuff from the cob) "maize" - which, ironically, was the term used by one of the indigenous peoples of North America (the Taino) before we started calling it "corn." I used the term "maize" so as not to confuse things.
Here in North America (and maybe Australia?) the dried and powdered flour made from whole maize kernels is called "corn flour." Elsewhere, it's called "cornmeal." ("Meal" just being something that's finely ground.)
Elsewhere in the world, dried and powdered maize endosperm is called "cornflour." Here in North America, we call it "corn starch."
Previous to this video, I knew about the maize/corn division, but not the dual use of "corn flour/cornflour." If I had used what *I* call corn flour (what the Brits and this presenter call cornmeal), I would have been rather disappointed. 😅
I worked in the Pharmacy in Bellingham, near Keilder forest, late 1995 - mid 1996.
There was a pie shop next door, which fed most of the village late on Friday & Saturday nights, after everyone had stumbled out of the local pubs.
Amazing pies, and I was passing through Bellingham last Summer & very little has changed. Lovely wee place.

Erm, I might have been infamous in Bellingham back then.
I was a locum pharmacist at the Chemist shop. Fresh faced & not long qualified.
One Friday, I was a bit late up in the morning, after a few shandies in the pubs on the Thursday night, so I went to the shop wearing my glasses, and took my contact lenses & contact lens solutions with me to work.
After I got back to my lodgings at the end of the day, I realised I'd left all my contact lens stuff and my glasses in the pharmacy.
Not a problem. I was going past there out on the beer later on.
- At the end of the evening's refreshments, after a couple of pies, I went into the pharmacy to retrieve my belongings.
Next thing I knew, I had two coppers from Hexham Police station sat on my back, arresting me for breaking into the shop.
- With the keys. As you do.
The local piss artists who were outside, between the pharmacy & the pie shop were trying to talk to the coppers, "What are you doing? He's the pharmacist."
Then followed a fun trip to Hexham nick, and on the way there they threatened to beat the shit out of me, (I was cuffed), because I was trying to explain to them that I had to have the pharmacy open at 9am the next morning.
"Shut up, or we'll shut you up."
Etc.
- Plus they didn't know if they had actually locked the shop after they nicked me, so the locals could have cleared the place out.
They told me that I could "fucking walk back to Bellingham" until, after a couple of hours in a cell at Hexham Police station, the desk sergeant realised that they had made a massive cock up, and then they were more than happy to give me a lift back to Bellingham.
"Let's say no more about it, eh?"
Etc.
The shop was rather busy on the Saturday morning, as everyone and their dog came in to find out what happened, and see all the bruising on my arms and face after I was knocked to the floor and had a cop sat on my back.
Ahh, salad days.
29 years ago.
Not that the experience still bothers me.
Oh, I'm from Northern Ireland, so that's probably why the Police offered to give me a good kicking.
10 yrs ago I spent some time working as a farmhand in the UK after completing mandatory army service in my home country.
One of the highlights of the day for me, was to go down to the local pub after all the work on the farm was done, and have some wonderfull savoury pies that they served.
These bring back those memories and I will deffinetly try them out.

Well theres always the Banquet meat pies in the frozen section, been a favorite of mine since childhood here in the US.

We have some very nice chicken pot pies in the US. Ham pot pies too. In fact, I am thinking of making a steak & ale pot pie after watching this. I might modify the recipe a little bit with some roasted red pepper, and maybe a little rosemary.

I work in a pub as a member of the bar staff. The ladies in the kitchen never cease to amaze me with how good the food is especially the steak and ale pie. Coming in early I see them getting the first pull on our Johns and Guinness in a big jug for it. We get through quite a lot of smooth in the pub but it helps us make sure the Guinness is rotated and fresh. Id definitely recommend adding a can of Guinness if anyones thinking of doubling this recipe up. I always get a portion of pie with chips peas and gravy.
Hi John. Being old and lazy I’ve almost always used shop bought pastry. I still do for puff pastry. Or a make a crumble. I now make your hot water crust pastry for all savoury pies. It’s easy to make. Easy to work providing you keep it in the fn the fridge until using. I Thank you for making these videos I’m sure I coukd buy a semi decent pie in the shop. The satisfaction of doing it yourself is immense

I think my many times great auntie made these when I was very little. I know my great grand uncle did before he died as well. I'm pretty sure my Uncle Lawrence did as well for some of the family gatherings before his death in the late 90s. I know some of my cousins did but it's been about two decades since I've had them. So thanks for bringing this back for me. I'm hoping to make them soon. You've made several here that I think my family used to make all the time before life and circumstances changed that. when you cut the vents into the crust, I was immediately reminded that we recently found my grandmother's old ceramic pie birds in an old cedar chest this past winter. They're far too big for a single serve project like these, but the memory put a smile on my face.

I lived in England for a few years about twenty years ago.
I stopped in a pub on my way to my new home from the airport and I learned two things.
I learned that beer is offered in full pints and half pints, and I learned that I absolutely love steak and ale pies.

Well that’s another master class in how to make a beautiful pie. Got to say that the pastry is the easiest & most forgiving of all pastries to make( this I learnt from John). I bake for the shear enjoyment of producing something wholesome from scratch. There’s is always surplus which I give to work colleagues and some of my customers. Loaves, buns,biscuits,and of course pies, and they always get a good rap and a request for more soon please. My response is get yourself on to TH-cam and have a go yourself by watching John Kirkwood, you’ll not be disappointed. Great video as always JK, keep up the good work my friend 😊

I sometimes use a tbl spoon of porridge oats as a thickening agent instead of corn starch.

The willingness of the English to throw together a quick dough for pies and whatnot is truly admirable. Across the pond, we’re afraid of using flour and the oven in our day to day cooking
It's a shame the US has all but lost the savory pie traditions. Just a few regional ones around now. The PA Dutch still like savory pies.
@@kaelhooten8468 as household that cooks a fair amount of bread items and homemade breakfast breads, my wife would probably defer to instacan of dough to make these. Since I know it’s simply onion and meat w gravy I’d probably cheat the time involved and make double batch and extra gravy and eat with biscuits and butter on the side. I know that isn’t the whole flavor package the pie gives you but work work work not much time. 😄
Speak for yourself. I’m American and I use my oven daily. I make dough at least three times a week. Maybe you’re just lazy 😂

Hello! I finally got around to making your butter. Watched video and did it. Turned out amazing! Have made few times already. Not only got a full pound of butter with using one litre of heavy cream, but also got exactly 2 cups of buttermilk from it. It freezes beautifully and freezes well. Thank you for sharing that video. The freezing tip you gave at 12:14 is really great. I do the same thing with uncooked dumplings and baozi and they're basically the same as fresh when steamed from frozen. I'll definitely be freezing these when I make them.

Looks like a fabulous recipe that I will have to try. Oh, and by the way, the oven gloves I ordered work very well and I have stopped burning my arms. The mini egg-beater is something I use a lot and the sourdough starter took right off. I will be ordering the rolling pin in the future along with the pie tins. I’m from the US and I love to cook. I’ve just found your channel. I don’t think the comfort food in the UK is highlighted enough. There are some wonderful recipes. I’ve been trying to find a Leek bacon and mushroom pie recipe or something similar. Great channel sir !
