I remember him supposedly try to save Little Chef…with SLUG porridge! Yeah of course ordinary people want to stop off at the services, kids complaining they’re hungry, parents are hangry and all tuck into to slop! I think someone at the top wanted to just get rid of the company

I cannot think what rivals the English Pork Pie. My father took making them very seriously and I took them very much for granted, until I left home. I had forgotten about pork pies until today. Thank you for reminding me.
That is absolutely brilliant. Another great use for a muffin tin! I’m retired, but my wife still works and I’m always trying new and creative ways to make lunches for her and these are going to be absolutely perfect. She loves your steak pasties by the way.
You are the male version of me😂 Your wife is spoiled as is my hubby. I just made his crumpets and they turned out perfectly for a first time, pillowy,chewy and crunchy all at once. I paired this breakfast with roasted potatoes, eggs over medium with real maple syrup. This will be a new special staple in our household when loved ones are visiting or I feel like spoiling ourselves. I used my mushroom, tree and blackbird cookie cutters, they turned out adorable to-boot
So, I've been making and enjoying great pork pies the way John taught me @ 4 years ago. I wasn't going to make these pies until I noticed the pork seasoning for these little gems was different from the original. It only took one wonderful bite to realize that I now have a new favorite pork pie. Thank you, John!

Just did a practice run at these. Ive got a new oven so need to adjust the temp as they had soggy bottoms. I popped them out of the tin, turned them upside down and put them in on a tray for 10 mins.....perfection!!!
This is my visit and I enjoyed it! I live in Japan where any kind of meat pie is simply unavailable. I will follow your recipe to make these pork pies. I really have to say, how very respectful you are towards anyone that may be watching your channel. Inviting anyone who doesn't eat pork to replace the meat with any other variety is but one example. Food brings us together and whilst a pork pie isn't a pork pie without pork, there is no reason why there shouldn't be a beef, lamb, chicken or turkey version! Even those of us who eat pork, may prefer a different meat after tasting and comparing! There were many other examples that I could mention and you clearly were brought up well. Food made by someone who with such a gentle character is without a doubt the best food ever.

I just learned what mace is. You teach me new things all of the time. Of course that trail went into sarsparilla, sassafras, anise, and other things. But that is for another day. I can not find mace. Nor do I know how to grow nutmeg myself but I am going to find out.
Years back I was given a Paul Hollywood mini pork pie tin, for making the traditional straight sided pork pies. To be fair, I loved what I made with it but it was SO awkward fitting the pastry into the pie tin I never used it that much. THIS recipe and using a muffin tray is fantastic. Good morning John! We were snowed in yesterday and I thought these would be a nice project for the day, plus the baking would make the house warm & cozy! I only made a half batch as I knew hubby & son wouldn’t have any. I wish I had made the whole batch now to keep some aside for lunch this week!!! I had a last minute inspiration to add a dollop of katsu sauce on the top of the meat before putting on the lids (I was chatting with my other son in Colorado about my chicken katsu sandwiches I made earlier this week). They were so good!!! I ate 2 straight away, and now I’m trying to restrain myself from having the other 2 for breakfast this morning!!! & my mind is swimming with all kinds of meatball ideas to try in this!!!! & the pie crust was nice and flaky!!!! Grandma would be proud!!!!

Yet another great video John. I recently used wild boar mixed with pork, for a pie. The boar meat is too lean on its own. Also added some sage and onion stuffing mix as a layer in the meat ball before throwing into the case. Keep up the good work chef

John, I worked up a version last year using doubles of your hot water crust pastry recipe and using poached chicken and leeks for the filling. My pal likes them so much he went out and both 2x24 muffin pans! Just about the time I sent my grateful thanks'..😁😁They're a regular staple now

You really aren't kidding about how forgiving the pastry is! I'm not much of a baker, and was cursing making the dough the whole way when I made steak pies this weekend for a friend. All I had were muffin tins, and I failed to measure correctly, so I had to do a lot of repair work with my pies... but all my pies came out beautifully, and they tasted incredible! I'll have to give these pork ones a try next.

My only query relates to the quantity of pies in a batch in relation to someone living alone or a small family. Are the pies freezable so that they can be enjoyed over a longer period? If you like meatloaf, make it in muffin tins. For one, it cooks faster, for another, it's not dry. lastly, each muffin is one serving. No need to cut.

I just learned what mace is. You teach me new things all of the time. Of course that trail went into sarsparilla, sassafras, anise, and other things. But that is for another day. I can not find mace. Nor do I know how to grow nutmeg myself but I am going to find out.

Years back I was given a Paul Hollywood mini pork pie tin, for making the traditional straight sided pork pies. To be fair, I loved what I made with it but it was SO awkward fitting the pastry into the pie tin I never used it that much. THIS recipe and using a muffin tray is fantastic. Good morning John! We were snowed in yesterday and I thought these would be a nice project for the day, plus the baking would make the house warm & cozy! I only made a half batch as I knew hubby & son wouldn’t have any. I wish I had made the whole batch now to keep some aside for lunch this week!!! I had a last minute inspiration to add a dollop of katsu sauce on the top of the meat before putting on the lids (I was chatting with my other son in Colorado about my chicken katsu sandwiches I made earlier this week). They were so good!!! I ate 2 straight away, and now I’m trying to restrain myself from having the other 2 for breakfast this morning!!! & my mind is swimming with all kinds of meatball ideas to try in this!!!! & the pie crust was nice and flaky!!!! Grandma would be proud!!!!

OMG....I just made them with some self-provided wild boar meat, and even the lard in the dough is from said boar.....this might be one of the most delicious things I have ever eaten!

Yet another great video John. I recently used wild boar mixed with pork, for a pie. The boar meat is too lean on its own. Also added some sage and onion stuffing mix as a layer in the meat ball before throwing into the case. Keep up the good work chef

John, I worked up a version last year using doubles of your hot water crust pastry recipe and using poached chicken and leeks for the filling. My pal likes them so much he went out and both 2x24 muffin pans! Just about the time I sent my grateful thanks'..😁😁They're a regular staple now

You really aren't kidding about how forgiving the pastry is! I'm not much of a baker, and was cursing making the dough the whole way when I made steak pies this weekend for a friend. All I had were muffin tins, and I failed to measure correctly, so I had to do a lot of repair work with my pies... but all my pies came out beautifully, and they tasted incredible! I'll have to give these pork ones a try next.

Those pies look tasty! I loved your comprehensive presentation, and it feels like something I could manage. My only query relates to the quantity of pies in a batch in relation to someone living alone or a small family. Are the pies freezable so that they can be enjoyed over a longer period? If so, are there any pointers on defrosting? Thanks.
You can freeze them before or after. They still come out delicious. If you do freeze them before make sure they are fully defrosted before baking.
