    Skip the salt and pepper and use Old Bay Seasoning. Yum!

    Marylanders use Old Bay in their crab cakes and a little touch of mustard.

      J.O spice is good also, but Old Bay is what I grew up with! My grandfather would bring home the crabs, steam them up and my grandmother would pick them to make up the cakes! Old Bay is a Maryland tradition! Don’t like it good! But for my favorite Maryland waterman, it is a Maryland must! As for b4 old Bay? I’m sure they would make it up with similar ingredients! I wasn’t alive before Old Bay!

    Royal Blaque Goddess I'm from Maryland as well, used to live behind Capital Plaza and now all of my family lives on the Eastern Shore in Easton. You can add Old Bay if you want.......I love Old Bay when I'm picking crabs, on fried chicken, potato salad and just about anything else. But when it comes to good crab cakes I like to keep them simple and keep the seasoning minimal so the taste of the crab isn't covered up. Chesapeake Bay Blue Crab meat is the signature flavor in crab cakes, not Old Bay in my opinion. Thanks for watching!

    I live in SC in Charleston which is a big port city on the Atlantic Ocean. We are a seafood loving town and besides shrimp and grits or she crab soup I live for crab cakes. I tried this recipe (even though i did use Old Bay which i have to have in anything involving crab) and it was good. Im trying it today but with bread crumbs instead. People are complaining and haven't even tried it to see if it is worth the recipe you provided. Good work 😊

    We are so lucky on the West Coast. Not sure of the cost of fresh live crab on the East Coast, but during the season out here, November to June, we can buy Dungeness crabs for as low as $5.99 a pound. Yes you have to clean them, but to me it's well worth it. Anyway, thank you for the tutorial and I appreciate you mentioning not to add too many ingredients or over stir the crab.

      There's a reason that the rest of country advertises “Maryland Style” crabcakes! I was born and raised on the Eastern Shore. Their are no better crabs than the crabs from the Wye River. And these people have family secret recipes that are kept a secret. They can only be duplicated if your family is from the area. I have been all over the country. Nothing compares. I live in Colorado now and the crabs are what I miss the most. If you visit Maryland go to the Eastern Shore. The Western Shore gives Maryland a bad name.

    Now THAT is a crab cake! I've had more than my fill of the ones made with so much filler you can't taste the difference between the crab cake and the bun. I have a restaurant here that makes them very much like this. They're just crab, seasoned, and with enough fill to hold them together, and they're great. One trick they do is a thin coating of Panko. It gives them a light crust and helps to seal them.

    no old bay seasoning = no Maryland Crabcake

    • @TheWolfePit
      @TheWolfePit  7 ปีที่แล้ว +11

      Old Bay seasoning doesn't make it Maryland, Chesapeake Bay Maryland Blue Crabs do.... and a GOOD crab cake does not need Old Bay, especially when lump is $25-$30+ lb.

    • @TheWolfePit
      @TheWolfePit  8 ปีที่แล้ว

      +Christian Alzate I usually just combine about 50/50 dill pickle relish and mayo for tartar sauce, just to keep it simple.

    Noooooooo. I love your recipes and chanel. BUT..
    I grew up on the back of a crabbing boat in the Bay and..
    I'm pretty sure I would mysteriously disappear if I ever showed up with crab-in-a-can.
    And no Old Bay??? Sacrilege!!!! Heretic!!!!!! Witch!!!!!!!
    ;-)

    • @TheWolfePit
      @TheWolfePit  7 ปีที่แล้ว +20

      They're fresh pasteurized plastic tubs of crab meat, no different than any other container from Maryland's Eastern Shore. That meat came from the Wye river, don't recall the name of the place. My family lives in Easton and Cordova. I love Old Bay on almost everything, not in a GOOD crab cake. I personally want to taste the sweet crab, not Old Bay. Now if I am picking crabs and drinking beer I can't get enough OB, but keep it OUT of my cakes! That's like putting ketchup on a hot dog, its just WRONG! LOL Thanks for watching!

    • @wxfield
      @wxfield 7 ปีที่แล้ว +5

      Different strokes for different folks I guess? Old Bay in our crab cakes recipes was a short-cut for paprika, mustard powder (for the heat), allspice and cardamon.
      I will admit my grandmother wouldn't use OB in the cakes..rather she used smoked paprika, cloves, bay leaf, cardamon, ancho chili, and I believe some crystalized ginger. She'd roast these in a toaster oven for a few minutes to activate them, then grind them all together in a coffee mill.
      And yeah, ketchup on a hot dog is fine..if you're 7 years old.

      And yeah, ketchup on a hot dog is fine..if you're 7 years old. EXACTLY Same for Old Bay in crab cakes!! LOL Just kidding! Like you said, everyone does them differently, which is how it should be!

      jake jake Comment all you like Jake! I have family out in Easton, Millersville and Pasadena! I haven't seen lump out my way in Bealeton, Va. in a long while. I mean I can find Philips Lump but it's from Thailand and I just can't do it......I can find backfin blends 'special' that are from the Chesapeake Bay in Md and Va, but I just can't find lump from this area. The special is on sale from time to time for $14.99 lb and I'll get that. Thanks again Jake!
