  • Description: Takes only 30 mins, and makes six good size cakes. Yep, you can have seafood during the week. Can be a nice substitute for fish friday!
    Recipe:
    1 box Stove Top cornbread stuffing mix
    1 cup boiling water
    3 eggs, beaten
    2 can (6oz) crab meat, drained & flaked
    ¼ cup oil or butter (for frying)
    1 lemon, cut into 6 wedges
    Directions:
    1. Add boiling water to stuffing mix. Stir just until moistened. Let stand 5 mins.
    2. Mix eggs and crab meat in a medium bowl until blended. Add stuffing, mix lightly. Shape into 6 patties.
    3. Add oil or butter to skillet on medium heat. Add patties, cook 5 mins on each side or until heated through and lightly browned on both sides. Serve with lemon wedges.

    Canned crab here in Canada is about $10 a can. So that's not very economical. So I used canned salmon ($3.99 a can on sale). They were still delish. I'll definitely make them again.

      You can use fresh or canned! Some of us can't get fresh. Also, you can try this with different types of fishes too. Thanks for viewing.

      I've used canned mackerel. You may have to remove skin and bones if you like but the bones are very soft and add calcium and the skin adds omega 3. My mom always made salmon patties and I didn't mind the skin and bones.

      to think that some restaurants could possibly pulling a fast one and selling (non-crab) crab cakes.
      some of you experts may disagree and hopefully that's true (that you CAN tell the difference.)

    SO I COOKED THE CRAB CAKES LAST NIGHT, I MADE 7 PATTIES, THERE WAS TOO MUCH TO MAKE A SECOND BATCH, IF I WAS STILL HUNGRY, I WOULD COOK ONLY WHAT I COULD EAT. 7 WAS ENOUGH, SO IM COOKING THE OTHER 7 RIGHT NOW. THEY WERE GREAT. I NOW HAVE SOMETHING ELSE IN MY PERSONAL MENU TO COOK. WITH THIS, I CAN COOK FISH, SHRIMP, LOBSTER, SHRIMP, CHICKEN, ETC. SO NOW I WILL NOT HAVE TO COOK SO MUCH. THANKS FOR THE TIP.

    This looks like something I would like to try…only I think it needs some seasoning in the crab mixture…at least seafood seasoning & lemon juice…thanks for the recipe idea!

    For eggless cakes, I tried 1-1/2 tablespoons vegetable oil mixed with 1-1/2 tablespoons water and 1 teaspoon baking powder per egg. Came out great.

    TODAY I WENT OUT AND BOUGHT EVERYTHING I NEED TIMES TWO. IM A BIG HUNGRY MAN. I LIVE HERE IN HAWAII, AND EACH CAN OF FOUR CANS COST ME: $4.00 A CAN. I WILL MAKE THEM TONIGHT THEN LET YOU KNOW HOW IT TURNED OUT. I LIKE THIS RECIPE BECAUSE I CAN USE SHRIMP, TUNA, SALMON, LOBSTER, ETC.

      Those are good ideas you had. I like to be able to use pantry stuff. You can't always get fresh items sometimes. I live in the upper peninsula Michigan, and we have tons of snow 6 months of the year.
