    Shortened version of Pozole Rojo Recipe- • How to Make POZOLE ROJ...
    Cook time 2 to 2 1/2 Hours
    Don’t overcook the pork feet. We want them to keep on the bone until served.
    Ingredients
    Enough water to cover your pork in the pot
    10-12 Pounds of Pork
    1 Large Can of Hominy
    1 Large Onion
    2 Garlic Bulbs
    10-15 Bay leaves
    10-15 Guajillos or California Chilies
    1/2 Teaspoon Salt
    3 1/3 Tablespoons Chicken Bouillon
    1 1/2 Tablespoons Mexican Oregano
    Topping Ingredients
    Finely Chopped Cabbage
    Finely Chopped Onion
    Finely Chopped Cilantro
    Lime to taste
    Red Radishes
    Salsa for Pozole
    Handfull of Puya Chiles (Remove Stems Keep seeds)
    1 Garlic Bulb From Pozole
    1/2 Tablespoon Mexican Oregano
    1 Teaspoon Salt (Adjust to taste)
    Enough broth from Pozole to Blend
    For thicker Salsa add some Hominy
    Pork Cuts used
    Pork Feet/ Patitas de Puerto
    Neckbone/ Espinazo
    Pork Leg /Pierna de Puerco
    Tip for Salt
    Adjust salt as mentioned in the video
    Start with 1/2 Tablespoon salt, boil for 30 minutes and adjust to taste
    To thicken broth:
    You can use 1 Cup of hominy, 2 Tablespoons of Maseca (Instant corn masa), Or 2 Corn tortillas
    Blend your choice of thicker with chiles and broth

      Gurrll, my grandma passed years ago, and my mom well...I just got done watching your tortilla vid, thank you so much!! Too bad I couldn't comment there because of some pinche pero!! Anyhow, we never used no baking powder in our tortillas either! I could never pinch the dough balls, and my tortillas always ended up looking like Texas, lol my grandma used to laugh and say it's cuz of my German side, haha

    Omg I’m 32, Mexican and I’m still learning how to cook authentic Mexican food. I was never taught how to cook. I got married and my husband is Mexican and loves authentic Mexican food so I’ve been learning by watching videos. Today I followed this recipe and not only did it come out so tasty, I live far from my family so I enjoyed listening to you and Cloud - it felt like I had a house full of good company!       Erica Hernandez, I make both types of meats in pozole, depends what we are in the mood for and I also use sweet basil and thyme in my pozole, it taste so good when it's done and we add chicken bouillon to the broth add it to your pozole until you get the right flavor, I make a huge pot of pozole each time so I use 6 to 8 cubes of pozole and a little salt.

    I'm from NM. I live between Hatch and El Paso. I live on raise on a Chile, jalapeños, Chile guerilla, tomatoes, corn, squash, melons, etc. My grandparents had a farm. So l know NM Chile. Sandia Chile is what I use it's hot but not as hot as 2XX or triple XXX. So NM Chile is the best. 🥰

    I love when you taste test. You and your sister remind me of my sister and I, I miss her so much since she moved far away :( I already have a good pozole recipe but i learned some good tips i want to tryout to improve on my recipe :). Looking forward to try out that salsa. Keep up the great job. Growing up in the 90's in a mostly white city, I felt i had to suppress/hide my heritage and culture because it was looked down upon, but you and my girls (children) are so proud and out it inspires me to also embrace my Mexican roots.

    Well I found you now I cannot leave! My husband is from South Texas and loves authentic Mexican food. He also has a Wonderful Aunt from Mexico. But I am from N.Y. and never even had a taco until I was in my 30's. I can't wait to make this for him.

    This taste really similar to mine.... only 2 things I do differently are..... 1. I add 1/4 of a piece of abuelita chocolate to the gaullio chilles when I blend them ( helps counteract any bitterness from the Chile and no worries, it won't taste like chocolate at all.) And 2. When my broth is done... before I add the hominy I strain the broth into another pot and de- bone all the meat so nobody has to worry about accidentally biting into a piece of bone... it's an annoying and time consuming step but I think it's worth it...... I did love your addition of the crema and Puya salsa and will now incorporate this to our recipe. Very delicious. Thank you for your time in making these videos ❤️

    Hi Steph, just to let you know, I put the dry hominy beans in a crock pot over night with salt and use it in my pozole. Can't get easier than that! I especially like the texture in using dry hominy. It's almost meaty in itself.

    I’ve never used the feet in my pozole before. I’ve seen it done in menudo tho. Interesting idea but I don’t think I’ll be adopting it :)
    I find small cuts of pork loin along with some pork ribs (for bone flavor) are easier. Everyone’s got their own way of doing it lol...cool.
