Thank you so much for sharing. I moved from Arizona to New Jersey 5 years ago and we cannot get good Mexican food here. Also it's difficult to get the ingredients. My mother passed away when I was in my early 20's and unfortunately I didn't get the chance to learn all I wanted to from her, especially when it came to our traditional Mexican recipes. My brother learned from my bis-abueulita and he walks me through some of the recipes. You and Cloud just make me miss home and all my crazy cousins (since I don't have sisters, but you know they are my sisters). You have so much fun and your recipes are delicious. I know you were feeling a little down recently don't let the haters get to you. You are beautifully and wonderfully made by God and so many more appreciate you than the few that just have negativity to share. Keep up the great job!! Some time ago when he had only been gone a short time I was explaining to a friend how we had been missing how he made his special dish what he called Swedish meat balls it was just a meat ball dish prepared with either rice or potatoes and a gravy made from a combination of cream of mushroom and onion soup and my friend had prepared the whole thing and brought it to us so it brought memories back to us and so when I watched your video of the poblano casserole dish that your mama used to make and you were emotional as it brought back my memories I was emotional along with you💜💜

Its really been sooo long! My mom used to make this. 25 yrs gone now. I have never made this for myself. I usually make chile colorado for a party or crowd. And then I save a little and make my own tacos. So it is time! And you made a small amount and that is perfect for me. Thank you. I now am sure it was chuck. My dad really enjoyed this. I have learned so many cool tricks and techniques from you ladies! I had some left over pork cubes, threw them in some water on the stove, put in onions, garlic and two (crinkly peppers) I had laying around (took out the 'shakers') and simmered it for a few hours. took the meat out, whizzed up the peppers and onions in the blender, put it back over the now shredded pork (making it comfortable for my family)....put together some mexican rice in the Insta pot (perfetly cooked! thank you Steph).....and I had a delicious dinner. the rice had the sauce on it from the peppers and. pork. I don't know what I'd call it all.....but I NEVER would have known the 'technique' for doing this without your wonderful lessons. Gracias Amigos, Gracias!!!!!!

When I re-hydrated it, it brought back the flavors that had caramelized at the bottom. That’s when I realized that’s what I was doing wrong all along. Apparently I didn’t watch my mom’s cooking close enough. Sure enough she also cooks her pork this way. Thank you! ❤️

My entire life has been a lie! This dish is absolutely incredible!, thankyou so much for sharing it! The English Chille con carnes we had growing up were pretty much packet mixes and a not even a very poor imiation of this dish. so far removed from the simple, yet wholesome flavours in this dish I used to dread chilli day.. Not any more!! The dish is simple to make, yet amazingly complex in flavour, heart warming, meaty and filling, The smell is divine and I want more! I can imagine myself sitting in the wilderness under the starry sky with my bowl of Chilli con Colorado, just as nature intended! For anyone in the UK there are importers that bring in Mexican produce in regulary and at a fair price. Thanks again for bringing this recipe to us!

The English Chille con carnes we had growing up were pretty much packet mixes and a not even a very poor imiation of this dish. so far removed from the simple, yet wholesome flavours in this dish I used to dread chilli day..
Not any more!!
The dish is simple to make, yet amazingly complex in flavour, heart warming, meaty and filling, The smell is divine and I want more!
I can imagine myself sitting in the wilderness under the starry sky with my bowl of Chilli con Colorado, just as nature intended!
For anyone in the UK there are importers that bring in Mexican produce in regulary and at a fair price.
