I go in and out of keto because I am diabetic. I have been craving anything that is forbidden! LOL But, today I found your Chocolate Mug Cake. Oh dear Lord! I had all ingredients in my kitchen, so I made one. I am in heaven! 5 minutes from start to eating. I dropped a few of Lily's dark chocolate chips on top with about 1tbsp crushed pecans. For those who don't have almond flour, you can make it flourless; just beat the egg whites to stiff peaks, mix the yolks with any artificial sweetener, vanilla, butter, and cocoa powder until a thick mixture and fold it with the egg whites, this is going to the oven at mid heat for 15 minutes or so (I just do it by feel) and that's it, it's definitely amazing for not having carbs at all.
the recipe works really well, but it's dry. On my second try, I added 1 tablespoon of coconut oil and coconut milk to it, which came out perfect and moist!

The first time I made it I added almond milk cause batter looked a little thick and added some peppermint extract, crushed walnuts and a little bit of dark chocolate chips in the batter. Before it baked completely I added very little chocolate chips and walnuts again, as garnishment. I always have fun trying out recipes and manipulating them to my liking. Gotta be careful with the peppermint extract, even 1/4 tsp is waaaaaay too much.

Guys who use erythrit powder you should add more as it’s less sweet than swerve. I also added 10g of unsweetened chocolate chips and it’s amazing! Can also add chopped nuts. Thank you Joe for a cool recipe!
@X Y it will not be metabolized in your upper gut and be left for your lower gut. could cause diarrhea, bloating, gas, maybe vomiting if taken in huge (really excessive) quantities.
TIP: add 2 tablespoons of water to the recipe, it’ll make the cake much less drier SO much more tasty! I make this recipe almost every morning and eat it with peanut butter
I thought you were a madman for not adding butter. I've always added butter to my mugcakes. Let me just say, you've changed my viewpoint! Decided to try it this way, and wow, does it cook better without butter! Love it!

I just made this (it's still hot) and it TASTES LIKE HEAVEN!!! However, I DID use coconut flour. The trick is, I only used 1 teaspoon, and that's it. The final cake looks just like yours, and as I said, it's my new favorite cheat day snack.

This cake was great but my mom made it first and it was very dry so I added one tablespoon of butter and and extra teaspoon of the fake sugar and it really helped
Fake sugar? What is fake sugar? I would skip the swerve all together and use allulose you will need more of it but it doesn't have the cooling effect nor the stomach issues. But skip all fake sugar

I just made this and it's light, airy and beautiful. Without frosting on top, I just put sugar-free chocolate chips and perfected it =) My microwave only took 60 seconds. Thank you, Joe!

I made these years ago and I added 2 eggs and then iced them with cream cheese mixed with a few drops of lemon juice and artificial sweetener. Spread it on warm cake and was so good
Thanks much for the recipe, I didn’t have confectioners on hand but was motivated to succeed. I substituted granulated monkfruit while it probably was not as sweet as it should be was still very satisfying.
I bought the needed ingredients and made it. I did not heap the tablespoon of swerve enough. It could have been a little sweeter but it was soooooo good. I added a few Lilly's chocolate chips and melted them in and that fixed the problem. Thank you.

Pour in 1/2 the batter,.. quietly slip in a very small chunk of semi sweet choc, small butter pad, tiny bit of Peanut butter, pour in the rest of the batter.. Super surprise cake.
Two thumbs up- I did add one tablespoon of coconut oil as suggested by one of your commenters and I also added a dollop of frozen whipped cream that I make myself and freeze ahead of time - so I did add a carb- but worth it!

maybe try a little oil,avocado oil goes great with chocolate and will give you a little more moistness just like normal cake.Butter solidifies as it sits which will make your cake dry
After suffering sticker shock at the cost of almond flour, I bought it anyway ... and made this. It was really good. The texture takes a little getting used to but overall, a great alternative to the real deal. Thanks for sharing.

I used the same amount of black sesame seed flour (i.e., finely ground sesame seeds, readily available in Asian stores) instead of the almond flour (almonds give me knee pain). Also added 15g of chocolate chips. 50 sec in a 1,000-watt microwave oven (1 min produced a dry cake in my microwave). Came out perfect! Thank you for this great recipe!
@@ElenaLopez-jk7dq me :) I used stevia for 3 years (pure one - hard to buy) and it made me feeling sweet taste much much stronger and stronger and now I am unable to eat sweets from shop and use sugar cause it would make me vomit :) But stevia is not good for keto as dr Fife says (because once your brain recognises sweet taste in your mouth insulin is produced by your pancreas what we don't want to happen, right?). You can use coconut oil as it reduces sugar cravings and as far as I remember chromium tablets work as well. cheers.
Joe - new subscriber. I'm in a men's group at my church and one of the guys is type 1 diabetic. We often bring donuts or other sweet concoctions without remembering his condition but tomorrow I'm hopeful this mug cake will make everyone else jealous. I just made this cake. I added 1 tblsp of chocolate chips, and a drop of olive oil, and I also added 2 tblsp of almond milk. It was amazing, really delicious almost like a brownie.. top it with a little whipped cream.. thanks for sharing this
Third time I mande this. First time left 12 minutes in the toaster oven. Came out dry. Second time set toaster oven at 350 for 9 minutes. Came out really great. Third time doubled the amount recommended. I look forward to my desert. I am on a low carb diet. Thank u!
I just tried this and it came out great. The texture was perfect. I’m not a fan of the way mug cakes come out in my microwave, so I baked it in the oven, and it took about 30 minutes or so to bake. The next time I’m going to try it with a monk fruit/erythritol mixture to see if I can get it to be just a tad bit sweeter.

He's got great recipes. But when I do anything he does that's chocolate, my stuff comes out SO dry! Everything else is fine; but if it's chocolate, it's dry and chalky. Kind of frustrating, as I'm wasting so many ingredients.

Just made this and my take away is like most said, it was a bit dry and spongey. I added vanilla extract just bc I love vanilla in everything and I used Swerves Granulated sugar bc that’s what I had. I’d say add something for a more moist cake and if your doing granulated sugar add a bit more. But for cake in a minute... this hits the spot! Thank you!!!

Coconut flour you would use way less because it absorbs so much liquids and its way higher in carbs. You could probably use some and cut down on almond flour. Also coconut flour will make it taste like coconut
Great recipe. I added some sugar free chocolate chips to the top and microwaved for another 15 seconds. Then I added a teaspoon of powered swerve and a tablespoon of cocoa to a half cup of whipped cream and used a milk frother to make icing!!!!

stevia can be a bit bitter when used in large quantities but you can always try it. Just google using stevia in place of swerve and you should be able to find out how much to use

I just made this and it's yummy! Someone on this thread suggested 1tbsp of mayo so I did and it was moist a cake. My mistake was using too much Stevia. I didn't have Swerve. Stevia has a very strong taste. I used two tsps and would cut that by 1.5 next time. I'm loving all these Keto desserts. I also made your chocolate ice cream!! Sooo goood! Thank you!

In all honesty I was super skeptical making this because I thought that it would taste like trash But ITS SO GOOD!!!!! In Canada we don’t sell confections swerve at our bulk barn stores so I substituted it with Monk fruit sweetener which is also keto friendly I also added some unsweetened chocolate chips to the center and oh my God it literally taste like chocolate cake !!!!! I’ve tried recipes from other people for like protein donuts and all that crap and they are not enjoyable whatsoever but this is a game changer !!!

Pour in 1/2 the batter,.. quietly slip in a very small chunk of semi sweet choc, small butter pad, tiny bit of Peanut butter, pour in the rest of the batter.. Super surprise cake.

Two thumbs up- I did add one tablespoon of coconut oil as suggested by one of your commenters and I also added a dollop of frozen whipped cream that I make myself and freeze ahead of time - so I did add a carb- but worth it!
It was good, a little dry for my taste. Will add either more butter or coconut oil to mix next time.

maybe try a little oil,avocado oil goes great with chocolate and will give you a little more moistness just like normal cake.Butter solidifies as it sits which will make your cake dry
Does it have to be blanched almond flour. Only have non blanched.
After suffering sticker shock at the cost of almond flour, I bought it anyway ... and made this. It was really good. The texture takes a little getting used to but overall, a great alternative to the real deal. Thanks for sharing.

I used the same amount of black sesame seed flour (i.e., finely ground sesame seeds, readily available in Asian stores) instead of the almond flour (almonds give me knee pain). Also added 15g of chocolate chips. 50 sec in a 1,000-watt microwave oven (1 min produced a dry cake in my microwave). Came out perfect! Thank you for this great recipe!

@@ElenaLopez-jk7dq me :) I used stevia for 3 years (pure one - hard to buy) and it made me feeling sweet taste much much stronger and stronger and now I am unable to eat sweets from shop and use sugar cause it would make me vomit :) But stevia is not good for keto as dr Fife says (because once your brain recognises sweet taste in your mouth insulin is produced by your pancreas what we don't want to happen, right?). You can use coconut oil as it reduces sugar cravings and as far as I remember chromium tablets work as well. cheers.
Joe - new subscriber. I'm in a men's group at my church and one of the guys is type 1 diabetic. We often bring donuts or other sweet concoctions without remembering his condition but tomorrow I'm hopeful this mug cake will make everyone else jealous. Hey Joe!! Love your personality and all videos!! You may be able to use 2 tablespoons coconut flour for the almond flour! My recipes are 100% coconut flour.
I just made this cake. I added 1 tblsp of chocolate chips, and a drop of olive oil, and I also added 2 tblsp of almond milk.
It was amazing, really delicious almost like a brownie.. top it with a little whipped cream.. thanks for sharing this

Third time I mande this. First time left 12 minutes in the toaster oven. Came out dry. Second time set toaster oven at 350 for 9 minutes. Came out really great. Third time doubled the amount recommended. I look forward to my desert. I am on a low carb diet. Thank u!

I just tried this and it came out great. The texture was perfect. I’m not a fan of the way mug cakes come out in my microwave, so I baked it in the oven, and it took about 30 minutes or so to bake. The next time I’m going to try it with a monk fruit/erythritol mixture to see if I can get it to be just a tad bit sweeter.

He's got great recipes. But when I do anything he does that's chocolate, my stuff comes out SO dry! Everything else is fine; but if it's chocolate, it's dry and chalky. Kind of frustrating, as I'm wasting so many ingredients.

Would adding in more of the swerve change the result? Just made it for the first time and everything was spot on but not sweet at all to me.

Just made this and my take away is like most said, it was a bit dry and spongey. I added vanilla extract just bc I love vanilla in everything and I used Swerves Granulated sugar bc that’s what I had. I’d say add something for a more moist cake and if your doing granulated sugar add a bit more. But for cake in a minute... this hits the spot! Thank you!!!

You can sub the sweetener and cocoa with a scoop of your fav flavored protein powder and add a tablespoon of butter or coconut oil.
Why can’t we substitute almond flour with coconut flour
Coconut flour you would use way less because it absorbs so much liquids and its way higher in carbs. You could probably use some and cut down on almond flour. Also coconut flour will make it taste like coconut

Great recipe. I added some sugar free chocolate chips to the top and microwaved for another 15 seconds. Then I added a teaspoon of powered swerve and a tablespoon of cocoa to a half cup of whipped cream and used a milk frother to make icing!!!!

stevia-based sweeteners don’t work great when chocolate is involved as the aftertaste is accentuated!

I believe coconut flour soaks up liquid more than almond flour and it would be too dry. Almond flour has more natural oil

Used a powdered monk fruit sweetener, sliced in half, spread some nuti-light chocolate hazelnut spread between the halves as a filling - oh wow!
Can i use another zero cap sweetener powder like stevia? It's what I have
stevia can be a bit bitter when used in large quantities but you can always try it. Just google using stevia in place of swerve and you should be able to find out how much to use

Swerve is a brand of erythritol.
Google it for specifics.
It's a non-GMO product.
Swerve is mostly erythritol, with some inulin and stevia added.

I just made this and it's yummy! Someone on this thread suggested 1tbsp of mayo so I did and it was moist a cake. My mistake was using too much Stevia. I didn't have Swerve. Stevia has a very strong taste. I used two tsps and would cut that by 1.5 next time. I'm loving all these Keto desserts. I also made your chocolate ice cream!! Sooo goood! Thank you!

In all honesty I was super skeptical making this because I thought that it would taste like trash But ITS SO GOOD!!!!! In Canada we don’t sell confections swerve at our bulk barn stores so I substituted it with Monk fruit sweetener which is also keto friendly I also added some unsweetened chocolate chips to the center and oh my God it literally taste like chocolate cake !!!!!
I’ve tried recipes from other people for like protein donuts and all that crap and they are not enjoyable whatsoever but this is a game changer !!!
