I’ve never seen eggs deep fried like that, but I’m going to have to try this recipe because it looks delicious! I think I would rather mix the dressing in a separate bowl before pouring it over the salad though. Thank you Mama Noi for another winner!

In Southeast Asia (I'm from Singapore) it is commonplace to have your sunny side up entirely soaked in oil. I love it because the egg white gets bubbly, crispy and brown, which is more exciting than a flaccid one.

When I was in Spain I finally saw how a fried egg should be done - in a large cast iron pan filled with olive oil. I was absolutely mesmerized. Mama Noi is absolutely right - don't fear the oil!
