Moist, Spicy and Delicious Ginger Loaf Cake/Gingerbread | Quick and Easy Recipe

  • This moist and spicy Ginger Loaf Cake/Gingerbread is so delicious that you’ll cook it over and over again. It’s rely quick and easy to make and your house will smell amazing! Serve it warm with ice cream, butter or salted caramel. Great idea for festive season!
    Ingredients:
    150g butter
    375ml (1 ½ cup) milk
    200g (1 packed cup) soft brown sugar
    240g (3/4 cup) golden syrup
    2 tsp vanilla extract
    1 tsp baking soda
    1 egg
    300g (2 cups) self-raising flour
    2 tbsp ground ginger
    1 tbsp mixed spice
    1 tsp ground cinnamon
    ½ cup chopped crystallised ginger (optional)
    If you add crystallised ginger it’s better to chop it thinly, otherwise it will sink.
    Bake in the oven 180C/350F fanbake for about 45 min
    Tin size: 27cmx11cm
    If you don't have self-raising flour you can easily make it at home:
    just add 2 tsp of baking powder into 150g of plain flour. That's all!

    I think I prefer to use molasses instead of the golden syrup. That works too. Very lovely bread.

    I made this! It came out so delicious, soft and squidgy. I used 1.5 your recipe and made it in an air fryer at 140 degrees Celsius, it took over an hour and a half but it was SO worth it! We have heaps of it and eating slices of it everyday! I added way more ginger than you as I love it spicer. YUM!

    Looks good except I have no idea what golden syrup is and what mixed spice is (paprika, mustard and garlic?). It would be nice to present it so that other people can actually understand and make it.

      Golden syrup or light treacle is a thick, amber-coloured form of inverted sugar syrup made by the process of refining sugar cane or sugar beet juice into sugar.
      Mixed spice is a well known product, if you don't have it you can use a mix of: coriander, ginger, nutmeg, cloves, cardamon.

      I googled and found that a substitution for Mixed Spice in the US is Pumpkin Pie Spice. There are lots of substitutions listed for Golden Syrup as well, if you don’t want to order it from Amazon.

      You can add molasses and honey or just one or the other

      You can buy 'mixed spice' but not paprika garlic or mustard

    I find it combines better if you whisk up the egg before adding to wet ingredients...
