    Thank you for this recipe! We used to have the McVities version all the time when I was younger. I made this cake this evening and my mam (who's not a big cake eater) had a taste and then ate two slices in one go!

    I made this on the weekend and it turned out so well! I'm in Canada so I used molasses, and I couldn't find golden syrup anywhere but found a recipe online and made my own. I also baked my loaf at 325F for 60 minutes and it was done (any longer and it would have been overdone). Hope these tips help others out there!

    I got really, really close to my iPad while I was watching this and I think I could actually smell the ginger. It was glorious. Then my roommate walked in and I did had to try to explain why I was trying to snort my iPad. I don’t think she understood how much I really wanted to smell that cake because she went over to the other side of the room, grabbed her iPad from its stand, and slowly backed out of the room. Oh well, I enjoyed imagining the smell for a minute or two and she’ll get over it. 😂 Great job on the cake, Sally. Thanks for sharing that with us.

    Has anyone noticed when Sally cracks eggs she does it like a Disney princess? This cake looks phenomenal! Can't wait to try it! Am 36 weeks pregnant and baking all the things, I'm calling it nesting haha! All these videos are class!

    I made this and it was lovely. I did do the sticky syrup but to be honest I would prefer icing sugar. It was great buttered and as a pudding with custard

    I made a ginger cake yesterday..( not this one but a family recipe ) the method is almost identical but I add 1/4 teaspoon of cayenne as well as 2 teaspoons of ginger. and allspice as well as the cinnamon.. I used a traybake tin … lovely with custard when it’s a few days old. Or with butter on …I don’t put a glaze on. 😊🇬🇧

    My mum used to get the shop bought kind, slice it in half and fill with cream and bananas wirh lemon juice over them. Top with same.. delicious desert.

    Made this cake and it was the best ginger cake ever. I put some of the syrup over but was cautious in case it was too soapy but I should have put more. We had it with butter and custard. Lovely. I am making it again this weekend. Will try and take a photo but technology may defeat me. Make this cake you will love it

      Actually, molasses is made of the same stuff but it seems to be very different from golden treacle used here.

      Black Treacle and golden syrup (or light treacle)are 2 different sugar products. Treacle is molasses. Golden syrup is a bit tricker, honey or corn syrup can be used but they impart their own unique flavour. Another option is to find a British / Irish food shop in your city or town and get it there or order from your nearest online.

    I found another ginger cake recipe online recently and made it today. Unfortunately, I didn't find it that easy to make. There was too much of it and it filled my loaf tin right up to the brim (in hindsight I shouldn't have poured all of it in). When it was done, I left it on the side, but took it out of the tin too early (it was still quite warm) and the bottom got stuck in the tin because I didn't bother to line it, just generously butter it. It tastes quite nice, but, it's a bit crumbly. It might be better by tomorrow. After seeing your recipe, I thought I would try yours as it seems easier and there is less of it and the mixture appears less sloppy.

      Over the weekend I made a batch of gingerbread cookies (leaning on the soft side) and I'm going to fill them with chocolate ganache. Reminds me of Christmas. In that recipe, which made 45 decent size cookies (think chocolate chip cookie size vs say an Oreo) it only called for 1 tbsp of ginger which was plenty. Can you imagine how ginger forward this loaf is going to be?? Mmmm, 😋

    I have liners that fit perfectly the tin 😅 looks exactly as the mcvitties 😅 just needed the recipe.
    We eat ours hot with cold custard. My partner introduced this to me that way and haven't done any other way 2:51

    Sally could I substitute with gluten free plain flour? Would I need to add xanthum gum ? Also would it alter the cooking time , I always find using gf flour things take longer to cook . Christine

      Just put more golden syrup you wont get such a dark cake but it should work x

      Or corn syrup if you've got no other syrup options but be aware the taste won't be the same, that dark rich colour comes from the treacle in particular and there is a flavour to match.

      It might sound a bit wacky, but try substituting the eggs with a large, ripe banana, well mashed. The ginger flavours still go well with banana, the banana makes a reasonable egg substitute (binds, add moisture and richness), and has the added bonus of making the loaf last longer!

      You could but I wouldn't the taste of treacle will be very overpwering.

      If you're worried the treacle taste will be too strong, use plain white sugar instead of brown sugar. But I wouldn't worry. I have an old recipe for a similar loaf that I've used for years, it only uses treacle and there's no sense that the flavour is too strong. Unless you don't like treacle, I guess.

      @@amy3971 I just realised you might be in the USA, and possibly thinking of blackstrap molasses? Treacle in the UK (or New Zealand, where I am) is a different product to molasses, it's lighter in colour and flavour. I agree completely, if the whole recipe used blackstrap molasses, the flavour would be really strong.

      You could try a golden or dark honey in place of the treacle, and perhaps corn syrup instead of the golden syrup? The flavour won't be the same but the recipe should still work. If you can find molasses that would be a good option to sub for the treacle. It's sometimes sold as a health food (not sure where you live, but it can be found in health food shops where I am).

    If you wrap it in foil and leave it for 24/48 hours it goes all sticky and gooey on the outside. Mmmmm yummy.

      Treacle is a syrup made from burnt sugar and muscovado is an undefined sugar
      I'm not sure what substitutes would be available for treacle in your region but you can replace Michael with dark brown sugar

    So why did you not mix the bicarb with the dry ingredients?

      It's the only raising agent for the cake and you don't want to activate it until right at the last minute. The moisture from the syrups and the melted butter would start it going too soon.

      Treacle is a syrup made of burnt sugar (its.better than it sounds) and golden syrup is made out of caramelized sugar you can replace them with molasses or dark corn
      syrup

    I’ve made this three times now! The latest one I added the zest of an orange to the syrup at the start of the boil. Took the cake “to another level” as they say. Next time will probably try a little zest in the cake mix as well.

    Hello! Can you pls teach us the difference of sugars (caster, powdered, refined, regular, etc.) and when to use them? Thank youu

      Caster sugar is finer than regular
      Powdered sugar is well in powder form but it also has extra constancy to prevent clumping
      Refined sugar is the same as regular
      I normally use regular sugar in recipes that call for it but also in recipes that call for caster as they are so similar
      And powdered sugar is used in icing and American butter cream

      Here are more specific descriptions:
      Coarseness (for coarsest to finest)
      -Demerara sugar/muscovado sugar
      -brown sugar, light or dark
      -granulated sugar, or regular refined sugar
      -caster sugar (British) /superfine sugar (American)
      -icing sugar/confectioners sugar/powdered sugar
      Flavour profile:
      Demerara, muscovado, and brown sugar = molasse-y, caramel-y flavour and makes things chewy
      Granulated/caster/icing sugar = flavourless and helps things spread
      Use of sugars:
      demerara, muscovado, brown = generally used in spiced baked goods or streusel toppings
      granulated/caster = used in regular baked goods and as a common sweetener
      icing = used in macarons or icings
      Ingredients:
      light brown sugar = white sugar + a little molasses
      dark brown sugar = white sugar + a lot of molasses
      icing sugar = white sugar ground finer + cornstarch

      @@mindfulbaking and dust them in some of the flour before mixing in, this helps them not sink. Crystallised ginger in ginger loaf is very decadent but really yum!

      Sally Dells Hi Sally, thanks so much for taking time to reply! Give it a go and let me know! Try a medium cheddar - nothing too strong! A crumbly white cheese can be great with fruitcake ... always a winter favourite with me

    Thank you for the recipe, I made the loaf and it came out beautiful!!!! I halfed the sugar too and you can taste even more heat from the ginger flavour. I heated it in the microwave and have it over coffee...just delightful ☺
