I’ve made this three times now! The latest one I added the zest of an orange to the syrup at the start of the boil. Took the cake “to another level” as they say. Next time will probably try a little zest in the cake mix as well.

Hi there I baked the jamacian ginger cake/loaf yesterday and it was a triumph. For some inexplicable reason I added ½ teaspoon of baking powder instead of the recommended ¾ teaspoon of bicarbonate of soda and expected an issue with bake. To my relief and surprise the cake/loaf was well risen, moist, dark and really unctuous and the addition of the ginger syrup over the top raised the finished bake up a notch. Thanks for an easy and informative video and your enthusiasm shines through.

I made this on the weekend and it turned out so well! I'm in Canada so I used molasses, and I couldn't find golden syrup anywhere but found a recipe online and made my own. I also baked my loaf at 325F for 60 minutes and it was done (any longer and it would have been overdone). Hope these tips help others out there!
I got really, really close to my iPad while I was watching this and I think I could actually smell the ginger. It was glorious. Then my roommate walked in and I did had to try to explain why I was trying to snort my iPad. I don’t think she understood how much I really wanted to smell that cake because she went over to the other side of the room, grabbed her iPad from its stand, and slowly backed out of the room. Oh well, I enjoyed imagining the smell for a minute or two and she’ll get over it. 😂 Great job on the cake, Sally. Thanks for sharing that with us.

I’ve just made this, OMG, it’s fabulous, that ginger syrup is to die for, the whole cake goes nicely with some cream poured ontop. Thank you for sharing your knowledge and experience with us. I kept some syrup and later added some to sparkling water. Yummy. ❤️
Caster sugar is finer than regular Powdered sugar is well in powder form but it also has extra constancy to prevent clumping Refined sugar is the same as regular I normally use regular sugar in recipes that call for it but also in recipes that call for caster as they are so similar And powdered sugar is used in icing and American butter cream Hope this helps!

Made this cake and it was the best ginger cake ever. I put some of the syrup over but was cautious in case it was too soapy but I should have put more. We had it with butter and custard. Lovely. I am making it again this weekend. Will try and take a photo but technology may defeat me. Make this cake you will love it

My mum used to get the shop bought kind, slice it in half and fill with cream and bananas wirh lemon juice over them. Top with same.. delicious desert.
I made a ginger cake yesterday..( not this one but a family recipe ) the method is almost identical but I add 1/4 teaspoon of cayenne as well as 2 teaspoons of ginger. and allspice as well as the cinnamon.. I used a traybake tin … lovely with custard when it’s a few days old. Or with butter on …I don’t put a glaze on. 😊🇬🇧
Made this a few days ago and it was delicious! Had no treacle so just used golden syrup and reduced the dark sugar just a little as well. Skipped the drizzle but it was perfect with a nice cuppa tea. It was all finished within a few hours!

I made this for the first time today and it turned out wonderfully! This is an absolutely perfect recipe, doesn’t need any tweeks, it’s very easy to make and the cake is so yummy with a lovely sticky, chewy top. Actually tastes very, very like the McVities version. I’m delighted with this simple recipe and classic caje which is now part of my repertoire! I didn’t make the syrup, but I don’t think it needs it, but I will try it next time, if I can find fresh ginger.

@@mindfulbaking and dust them in some of the flour before mixing in, this helps them not sink. Crystallised ginger in ginger loaf is very decadent but really yum!
I adore your channel and recipes! I do struggle with trying to convert from convection (fan) Celsius to standard oven, Fahrenheit. Is there a simple trick to this conversion? If so, it would be so helpful if you included this additional bit of information in your description for those of us not fortunate enough to own a convection (fan) oven. I found another ginger cake recipe online recently and made it today. Unfortunately, I didn't find it that easy to make. There was too much of it and it filled my loaf tin right up to the brim (in hindsight I shouldn't have poured all of it in). When it was done, I left it on the side, but took it out of the tin too early (it was still quite warm) and the bottom got stuck in the tin because I didn't bother to line it, just generously butter it. It tastes quite nice, but, it's a bit crumbly. It might be better by tomorrow. After seeing your recipe, I thought I would try yours as it seems easier and there is less of it and the mixture appears less sloppy.
Over the weekend I made a batch of gingerbread cookies (leaning on the soft side) and I'm going to fill them with chocolate ganache. Reminds me of Christmas. In that recipe, which made 45 decent size cookies (think chocolate chip cookie size vs say an Oreo) it only called for 1 tbsp of ginger which was plenty. Can you imagine how ginger forward this loaf is going to be?? Mmmm, 😋

Black Treacle and golden syrup (or light treacle)are 2 different sugar products. Treacle is molasses. Golden syrup is a bit tricker, honey or corn syrup can be used but they impart their own unique flavour. Another option is to find a British / Irish food shop in your city or town and get it there or order from your nearest online.

I'm gonna make this tomorrow but I'm using a rum syrup to top the cake off and some crystallized stem ginger in the batter mix. Some whipped cream with a teaspoon of vanilla extract on the side . Unless I leave the cake as a ginger cake and make the cream a rum flavoured Chantilly cream? Decisions, dcissions...lol Thanks for the recipie, just what I was looking for.

Quick question, since you only used golden syrup did you use just 115g of syrup or did you double it to 230g to make up for the treacle?

When it was done, I left it on the side, but took it out of the tin too early (it was still quite warm) and the bottom got stuck in the tin because I didn't bother to line it, just generously butter it. It tastes quite nice, but, it's a bit crumbly. It might be better by tomorrow. After seeing your recipe, I thought I would try yours as it seems easier and there is less of it and the mixture appears less sloppy.

I’ve actually been craving ginger cake, this looks perfect!
Over the weekend I made a batch of gingerbread cookies (leaning on the soft side) and I'm going to fill them with chocolate ganache. Reminds me of Christmas. In that recipe, which made 45 decent size cookies (think chocolate chip cookie size vs say an Oreo) it only called for 1 tbsp of ginger which was plenty. Can you imagine how ginger forward this loaf is going to be?? Mmmm, 😋

Try molasses for treacle
Actually, molasses is made of the same stuff but it seems to be very different from golden treacle used here.
Black Treacle and golden syrup (or light treacle)are 2 different sugar products. Treacle is molasses. Golden syrup is a bit tricker, honey or corn syrup can be used but they impart their own unique flavour. Another option is to find a British / Irish food shop in your city or town and get it there or order from your nearest online.
What can I use instead of Golden syrup

I'm gonna make this tomorrow but I'm using a rum syrup to top the cake off and some crystallized stem ginger in the batter mix.
Some whipped cream with a teaspoon of vanilla extract on the side .
Unless I leave the cake as a ginger cake and make the cream a rum flavoured Chantilly cream?
