Honestly, molasses is key to get the gingerbread flavor. MK has so many other great recipes, I'd skip this one if you don't have or don't like the molasses. MK has so many great recipe, maybe try her pumpkin cake? I can't remember if she has a sticky toffee pudding recipe, but that is very similar to this and usually doesn't have molasses.

Hi Mariam! Blackstrap molasses (or molasses in general) is made from refining sugar. Blackstrap is a type of molasses that is refined the most. It has a deep, almost bitter flavour that adds heaps of depth to baked goods. Yes molasses is often used in gingerbread cookies :)

YOU HAVE SOE GOOD RECIPES ONLINE BUT THIS ISN'T ONE OF THEM. THE TASTE OF THE RAISING AGENT WAS TOO MUCH. HOWEVER THE TEXTURE WAS GREAT.
