When my husband said.. What do you want black treacle for? I replied a Jamaican ginger cake.. his instant reply was: Wow! My comment is that the batter was really runny, and yet it cooked beautifully! Yummy! ❤ Ps.. definitely with butter!

A little nostalgia never hurts, I remember when treacle was a household staple. Ginger cake and gingerbread men that you could break your teeth with, it is so good that it all hasn't completely died off and you are doing your bit to save some of it :).
So true. I made gingerbread men in my Home Economics class as I live near ‘the home of gingerbread’. One of them got a bit broken so I piped an icing ‘cast’ on it and told the Examiner the gingerbread man had a broken leg. I got an ‘A’.
I also add the frozen fresh ginger in cubes found in tesco freezers in the Asian section. Also i chop the balls of ginger in syrup from supermarkets. Yummy
@@AZ-Sharon McVitie's are the Elvis of biscuit and cake bakers over here but they are getting expensive in the supermarkets the other day I paid £3 for x2 packets digestive biscuits😥
@@mrdangiles90 Also, many biscuits and cakes now contain palm oil, or other vegetable oils. Much better to bake your own and use butter, as ingesting too much in the way of veg oils can be detrimental to health.

Think that Jamaican ginger cake is probably my favourite type of cake & treat myself to a Mcvities one every few weeks (& your right unlike my waistline they’ve definitely been shrinking over the years), yours however looks so much more moist & lighter in texture Rik!👌 Will definitely have a try at making this myself for sure. I love it on its own, or spread with butter & also have for pudding, a big thick wedge warmed in the microwave for a minute or so & slathered in thick creamy custard … sheer bliss!☺️ Now I’ll have to source a bigger loaf tin as think mine is only a 1lb model. Love ginger cake,and biscuits,I think I told you I used Guinness in mine,and I like to eat it with sour cream,but I like some of the suggestions of lemon drizzle,and cream cheese icing,same idea a bit of sourness to go with the richness of the cake.😊

As is …. Rik , or with butter. Mug of coffee for me. Many people like a drizzle of lemon icing on it with lemon zest. If you want to be really snazzy at Christmas, cut the cake in half horizontally and add a layer of coffee buttercream.
My mum used to make ginger parkin regularly more than 60 years ago, my sisters and I used to fight over the corners because they had that sticky crust. Memories.

A trick I learned from my mother is to include lumps of stem ginger (comes in syrup in a bottle) in the batter for extra bursts of ginger when eating.
