Moist and Fluffy Vanilla Muffins | Quick and Easy Recipe
Very delicious, bakery style, moist, soft and fluffy Vanilla Muffins. Very quick and easy recipe. You'll definitely love them!
Ingredients:
240g/ 2 cups all-purpose flour
2 tsp baking powder
½ tsp salt
113g/ ½ cup unsalted butter, room temperature
180g/ 1 cup almost full granulated sugar
2 large eggs, room temperature
1 tbsp vanilla extract
120g/ ½ cup sour cream or Greek yogurt or buttermilk, room temperature
120ml/ ½ cup milk, warm
Sprinkle the top with some granulated sugar (optional)
Bake in the oven 190C/375F for about 18-20 min. Cool in the pan for 5 min, then transfer to a wire rack to cool completely. Enjoy!
I made 11 vanilla muffins.

Hi, don't overmix means that you have to combine the ingredients only, as soon as you see that all the ingredients are incorporated you have to stop mixing.

Your cake looks amazing but if 180 equals 350 oven temp, so why 170 is 375. Can you explain that so I can start baking this delicious looking cake. Thanks
Hi, in this recipe 170C is fan forced (190C conventional oven) or 375F conventional - 340F fan forced.

Hi, the recipe is in the description, about 250g butter, melted.
It needs molasses or black treacle to make a true ginger cake......and Birds Custard !!!

They look good, but cornstarch is very expensive in the US and comes in fairly small containers, maybe 3 cups at most, maybe less, i will check and let u know
I pay $2.50 at Target for a 16 oz container. Not too bad
I can't say about USA but in Australia it isn't expensive only 2.15 USD for 300g.
Does the butter have to be frozen for this?
It has to be very cold, you can keep it in the freezer for about 10-15 min before using.

WHY are you peeling the carrots? You're chucking out the most nutritious part.
It's better to peel the carrots before baking because the skin can have a bitter taste and unpleasant texture.

I made this cake, and it was the most delicious ginger cake I have ever tasted. Thank you so much ❤ For those who like to measure in cups: ☆ 1 and half cup of milk ☆ 1 cup brown sugar ☆ Half cup golden syrup ☆ I added 2 tblsp black treacle ☆ 2 cups self raising flour All other ingredients measured the same as instructed.

I made this cake about 5 days ago as my daughter asked me to make her gingerbread. I used 200g golden syrup and 40g of treacle and a touch more of the spices cos I like it spicy too and a large pinch ground cloves x took over an hour and when it came out oven I couldn't wait to taste it.😂 Yip cut a bit off while still hot and on eating thought it was maybe a bit too moist but the longer you leave this cake before eating it is perfect and I mean perfect. Without a doubt the best gingerbread recipe don't use any others and waste your time as I have did the recipe is bang on I'm away to make another.
Before they are cook They kind of look like ice cream scoops to me. Might be worth sending thie to some special effects people. Not sure how the batter would hold up under a hot cinema light though. But to me looks like even cooking them it doesn't shrink them very much I just wonder if they would stay a nice cream color also under the lights

Hi, you can try but the texture and flavour will be different.
great recipe thanks. If you want to refine the texture of this cake or any cake for that matter, you can strain the eggs through a fine mesh sieve. If you have a recipe that calls for 2 eggs, then I allow 50g for each egg. So I tend to whisk, sieve and measure the eggs. It isnt necessary for a home cake, but it definitely refines the texture of any cake, if you want to impress critical friends/family/inlaws. :)
