I baked this cake in the country I currently live, for a friend I knew had gone through a terrible time during the pandemic. Break up from someone she thought was her soulmate, stressful career with abusive higher ups, infected with covid and quarantined to the point of depression--just heart breaking. When I baked this 8 inch cake for her, I hoped she wouldn't think it was a burden to carry a cake without a cake holder in the freezing winter weather. It was a surprise. I meticulously measured each ingredient with a scale as Nick recommended. My heart was full as I watched the cake getting ready in the oven. I asked my friend if she liked cherry or blueberrry(cause I was gonna do a cherry ricotta almond cake if she preferred cherry). She said blueberry. Greek yogurt is expensive where I live, so I hope one day to make my own greek yogurt. I had to use a toaster oven, and the bane of toaster ovens is that the top gets browned quickly. There is a tip to put tin foil over the cake when the cake's color is just right- but I decided I didn't want to open the oven when it's getting baked. It was snowing when I took the cake with me. My friend and I had dinner. We had a long chat in the cafe. As we walked towards home, I slowly uncovered the cake to her and I saw...tears. She later showed me a photo of her enjoying a slice with milk on the side. Thank you, Nick for giving me a recipe that I will remember forever.

Hi there! You can use a blonde coconut sugar. The cake will be slightly darker in color and not quite as sweet, but it works!

Any substitution for the greek yogurt??
Are you looking for a dairy free substitution? If not, than I think sour cream or creme fraiche would work well (although they haven’t been tested). If you’re dairy free you could try a thick style coconut yogurt. Keep me posted!
If you can get Alpro products they do a really nice soya greek yogurt, if it's a dairy free version your after!

If you want more subscribers, give them what they want: complete directions on the videos. By leaving important details out so that viewers are forced to visit your website you frustrate people. There are better, more honest, ways to promote a website.
