    BLUEBERRY COBBLER RECIPE
    (makes 4 servings)
    Ingredients:
    2 cups blueberries, fresh or frozen (300g)
    1 tbsp maple syrup
    1 tsp lemon zest
    1 cup ground oats, or oat flour (100g)
    1.5 tsp baking powder
    1/3 cup milk (80ml)
    1/4 cup unsweetened applesauce (65g)
    2 tbsp maple syrup
    1 tbsp butter (20g)
    NUTRITIONAL INFO (per serving):
    187 calories, fat 2.2g, carb 39g, protein 4.3g
    Preparation:
    Preheat the oven to 350F (180c). In a 20cm square pan, add the butter and brown it in the oven for a few minutes.
    Meanwhile, in a bowl, add the blueberries, 1 tbsp maple syrup and zest of one lemon. Stir to combine.
    In another bowl, whisk together the oat flour, baking powder, milk, applesauce, and 2 tbsp maple syrup until smooth.
    Remove the browned butter from the oven and pour the batter into the hot baking dish. Sprinkle the blueberries on top.
    Bake in the oven for 30 minutes, or until the top is golden brown and the blueberries are bubbling.
    Let the cobbler cool for 15 minutes before serving. Spoon into plates and serve with a dollop of cottage cheese or Greek yogurt on top.

    We finally had some fresh blueberries here, and so it was time for some cobbler Sasha-style. Excellent, as always. So easy to prepare and bake while getting the rest of the dinner ready. I used the jumbo berries, since they were on special this week, but I think next time I'll stick with the smaller size to enhance the blueberry flavor.     I made this last night. I found that I needed to add more milk because it was TOO THICK. So I added a little more oat flour along with the oat milk. The flavor was nice, though. Thanks for this recipe!

    Could you tell me what can we use instead of applesauce and can we use brown flour instead of oat flour?

      Applesauce is a binding agent. It adds a bit of sweetness and tart flavour. Mashed bananas might work. This is a gluten free recipe but there’s no reason you couldn’t use AP flour - of course this is only my opinion. I veganize recipes so am always substituting. Good luck. ♥️🇨🇦

      Hi there! I don't have a step-by-step meal plan inside my ebook, but there're different type of recipes you can use for any meal during the day, no matter weekday or weekend. Anyway, I was thinking about creating a weekly meal plan with specific recipes you can follow, altogether with grocery list and some tips.

      Hi! It doesn't have to be oat flour, any flour of your choice (exept coconut flour which soaks too much liquid) will do the work.

      @@HowToCookSmarter Buckles are made with batter on the bottom and fruit on top, which sinks into the batter as it bakes, just like yours!
