This has become my favorite granola recipe after making a few adjustments. I typically make half of this recipe at a time. For the dry ingredients: 2 cups of oats, a quarter cup of ground flax seed, a quarter cup of pumpkin seeds, and a pinch of salt. For the wet ingredients I use a quarter cup of zero sugar maple syrup, two tablespoons of applesauce, and two tablespoons of peanut butter as I can't get the crunch I want without a little bit of fat. Bake at 350 for 30 minutes and spread it in a thin layer on the baking sheet so it gets as crispy as possible. After the bake I like to mix in a quarter cup of dried cranberries because they get too hard when I bake them with the rest of the ingredients.
The whole recipe comes out to 1300 calories (no added sugar! 52 grams of protein!) and I get 4 servings out of it. I love the recipe but I crave granola for the crunch and without the PB it comes out pretty chewy. Fortunately the PB works just as well as coconut oil and it adds a little protein. I love it in a bowl with some protein powder and milk! Thanks for the blueprint!

Thank you! This recipe is really underrated considering how cheap it is to make, especially if you're able to buy oats, nuts, and seeds in bulk. I made it last night and I'm enjoying it with my coffee as I write this. One small tip: you might need to experiment a bit with the baking method depending on your ingredients & setup. Mine didn't come out as crunchy as I would like (flavor is still great!), so I'll try spreading it into a larger baking pan next time. I don't mind if it's a bit crumbly as I'll mostly be eating it in a bowl with Greek yogurt.

hi sonja, i'm not sure that would work since the egg white is acting as a binding agent here, while aquafaba is typically used to add rise to cakes and baked goods. you can just omit it or replace half the applesauce with peanut butter/ nut butter of your choice :)

I made this - it comes out exactly as it looks - not too stickiy together like a bar, but in pieces. The taste is fantastic - I eat it with vanilla yogurt - but any flavor will do. This is now my favorite recipe. I also added some pecans. It's so handy to take to work for a quick snack. Making it again today. So happy to find a recipe without sugar, used the applesauce and maple syrup.

For me the applesauce added too much moisture and made the granola rubbery no matter how long I cooked it. I added 1/4c EVOO and 1/4c Canola to the granola the second time around instead of AS. May not be as healthy but at least edible. I also added 1 tsp vanilla and 1/4c brown sugar, Saigon cinnamon adds a nice depth. Pecans, walnuts and almonds are my pref. Use a pan so that the granola is an even 1/2" on parchment. Cook for 25 min @ 325F actual oven temp not dial, rotate pan and cook for another 25 min. or so until getting lightly browned. Remove from oven and cool until it can be broken in nice chunks, then place back in oven for another 20 min until dark golden for additional all around toasty crunchy goodness. Let cool completely. Wow! Always fun to make it your own.
