I have another idea for you. Homemade Nutella. Hazelnut roasted and shreded till it is a cream or mousse. Than add honey and cocoa and a tablespoon water for consistency.

@@sooyaaaaaa_ Yes, of course you can use honey, just use a little less than you would with maple syrup, around 25% less as it's sweeter. Use a honey you like the taste of, I like manuka honey; although it does have a strong flavour/taste to it 👍

About two weeks ago I made a peanut butter jar's worth of preserves and it turned out very nicely. I used mixed berries currently in my freezer: blackberries, strawberries and blueberries, adding in unsweetened store bought applesauce, chia seeds and a spoonful of low sugar powdered pectin. I didn't make a mental note about additional sweetening but will be using a couple of tablespoons of monkfruit sweetener for the next batch....I have lots of berries to still use up ! This fruit mixture is so good with yogurt, over ice cream, in smoothies. Very versatile and not sickly sweet either.

Fantastic version of homemade healthy jam. Never ate store bought jam as it taste like a bag of sugar. I normally make my jams without pectin only add quarter cup of honey. I do boil the jars before and after cooking and adding jam to the jar as I like to use the berries growing in my yard. For a fast and easy jam for everyday, I love the chia seed recipe.

Wonderful, thanks so much. I have been making jams this year because of lots of fruit trees in my neighborhood and don't want the fruit to go to waste. A struggle has been to make jams that are lower in sugar, so I had substituted white cane sugar with coconut sugar, which was ok, but still a lot of sugar. Next time, I will use the tips you've provided here to make my jams. Thanks again for posting.

If you want to conserve big amount it’s possible to freeze the jam jars, put lids on only after they’re frozen

I like the idea to reduce the sugar which is nice! Although pectin occurs naturally in several fruits, esp citrus. When I make homemade jam I also get a lemon or two. I add the lemon juice in cause it adds a nice acid to balance things out. Then I also add the squeezed out lemon rind, peel, seeds n all in (you can put it in a filter bag) and cook it in there with the fruit. You can use that as your source of pectin. Then just remove it afterwards :)! Additionally if you make citrus marmalade no added pectin is needed !

Actually I never tried it with this recipe, but it's low in sugar and therefore I think it wouldn't last as long as the traditional, but canning this jam is also an option.
