One of my favorite no-cook meals is a tortilla with a flavored tuna packet. My favorite is the Jalapenio tuna with a piece of sliced cheddar cheese. You can make these before the trip or very easily on the trip. In fact I had that for lunch at my trip to Cinder Hills just this last weekend. If you don't add the cheese, you don't really need to refigerate it.

Chickpea salad is my favorite go to. I usually make it before I leave and we eat it for lunch “en route.”
