    For all those asking why it's called lobster sauce, that's the way they cooked lobster in the Toishan region in China. The early immigrants from China to America were mostly from that region. When they came over, they substituted the shrimp for the lobster since it's far easier to get shrimp than lobster. The proper name for this dish should be 'Shrimp with lobster style sauce". Chinese is a stylized language, so when just say shrimp with lobster sauce, many if not most will understand that it is just stylized language. The literal translation for this dish in Toishanese is " Shrimp lobster gravy". My heritage is Toishanese and my dad was a chef, so growing up, I used to hang out with a lot of the old time Chinese chefs (they were in their 80's back in the 1970s) and that's the way they explained it to me because I was wondering the same thing.

      Yes, I'm from NYC and this sauce was used to make a dish called Lobster "Cantonese". It was cheaper to make it with shrimp.

      My family is also old school Toisan restaurant owners and I don’t know how our version mutated into what it is, but ours is mostly the same but we take whole fermented black beans and turn them into a mash and mix it with some seafood broth and oyster sauce and simmer with the mix - it’s almost like a Korean jajangmeon, but much less sauce.

    My mother used to make lobster sauce for us all the time, same recipe as yours, but she added more ground pork, included the egg yoke and added a tablespoon of fermented black beans to give it even more flavour. Very tasty, I know what I’ll be having tomorrow😋😋😋

    One of my favorite Chinese dishes. You did a wonderful job describing the preparation. I love this dish when black beans or some black bean sauce is added to it. It makes the sauce a little darker but adds a great additional flavor to it.

    I grew up in New York and LOVED this since I was a kid but with lobster. It was all over the place as “Lobster Cantonese” Now I live on the west coast and that name comes up as some kind of stir fry. One restaurant years ago sort of had it but with a brown sauce. YOUR recipe looks delicious and the real deal. Time to hook this up myself , thanks for clear and simple instructions 😋

      I us a bunch of pans and woks, non-stick and carbon steel. For height heat, carbon steel wok works the best. Thank you 😊

    I've made your recipe with your directions at least 7 times and it comes out great! That is the way I remember it but it was with lobster in China Town NY when I lived there. Excellent and exactly the way it tasted!

    This is one of my fav dishes, I am friends with my Chinese restaurant chef, I bring him a lobster tail and request that the whole egg be added to the dish with extra garlic, he make me very happy all the time!!!

    This is EXCELLENT TO HAVE RECIPE OF! growing up in Brooklyn, Lobster Cantonese and Shrimp with Lobster Sauce was our Delicacy take out treat rarity... but these days it is never as good as years ago, of course I’m no longer in the city anymore either... can’t wait to make my own!

    I'm so glad I found you on here. I've not been able to eat Chinese food for a while now because of health issues I don't go out much at all. I constantly crave Chinese food but only make stir fry and egg drop soup. I now am going to use your recipes and live happily 😁. Thanks for your contribution.
