Turtle Candies - Day 2 of the Twelve Days of Christmas

- Turtle Candies
Pecan halves
11 ounce bag Kraft caramels
2 Tablespoons heavy whipping cream
12 ounce bag semi sweet or dark chocolate chips
Place four pecan halves into an x shape on a parchment lined baking sheet.
Melt caramels and whipping cream in microwave. Microwave one minute then stir. Melt in 30 second increments until the caramel is melted. Place a small spoonful of caramel in the center of the pecan halves.
Allow these to cool on counter or in the refrigerator for 30 minutes to an hour or until the caramel is firm.
Melt chocolate chips in the microwave the same way you did the caramel. Cover the caramel with the chocolate then place the candy back into the refrigerator so it cools and the chocolate hardens.
Store in an airtight container.
Yields : 24 turtles

An old man that worked at a local bakery in Mobile, Alabama gave my husband this recipe, it’s been probably been almost 45 years ago. He folded his pecans in with the caramels, I do the same.
I dip the whole thing in chocolate.
I use milk chocolate as the coating.
Sometimes, I use chopped pecans and stir them into the melted caramels.
I tried making them years ago by making my own caramel. For some reason it always crystalizes.

45 years ago, the caramel bag was probably a full pound. I remember the first time I bought sugar that was 4 pounds instead of 5 pounds. Totally threw me and afterward, it seemed like most products followed suit. I love pecan turtles and these look delicious! Thank you for sharing!

I made these tonight and it was very easy as you said. I normally make my own caramel, but decided to go easy this year!! I did have to warm the caramel a couple of times, but I made more Turtles as well. I bought two bags and counted them and had 39 caramels per bag!! So they’ve gone down one less caramel now!! Thanks for sharing your recipe!!

I tried this recipe. Couldn't find plain pecans. But used glazed pecans. Was delicious. Husband even loved them.
There are so many ways to make these! I put a caramel on each turtle and put in oven to soften, then I push down on the caramel then dip the turtle in dark chocolate that has a little paraffin wax! I’m 60+ years and my mom did this recipe !

When I was in the 11th grade In homeeck we got to go to the store and each of us got to pick out a candy we wanted to make it. It was around Christmas and the school paid for it and pecan turtles is what I made this sure brought back a lot of memories. That’s been many a year ago, I really enjoy this show. Great job!!! When I make these or other chocolate covered homemade goodies I use my smaller crockpots and it keeps the chocolate, caramel, etc just perfect temperature!! I make loads of Christmas goodies!!!

I am loving your site, I watch the new videos everyday, the mac and cheese is on my to make list, Thank you are thinking of the first Responders, I am a fireman's flame (wife) he retired at 26 years of service. They are usually forgotten and yes, every holiday something usually gets them out the door. I will never forget the person who brought a ham in a throw away pan a couple days before Christmas with a large package of buns for the crew to cook. A few wives made side dishes for the guys, made a much brighter holiday for them and us.
Oh My Tom, You are so entertaining and as much as I love watching you make your recipes, the anticipation of the end and your excitement to taste test makes it all worthwhile. I love the caramels with apple slices (In addition to in turtles☺). You are certainly right that the caramels are HARD to unwrap! But they are so worth it. 😋
The amount of cream you use, will determine the consistency of the caramel and how hard or soft your candy is.
In my opinion, Tom has the right balance!

Nice Turtles... I'm not sure what your other Twelve Days of Christmas treats are, but back in grade school, a classmate's mother used to make a Rice Krispies marshmallow type treat using Corn Flakes, shaped like Christmas Wreaths, using some green food coloring in the marshmallow and a half a Maraschino cherry as a bow. Why I remember this kind of stuff after 60+ years... my aunts at Family Reunions wished I'd forget somethings!!!

Turtles are one of my favorites, what a great combination! I think i will make homemade caramel to go in them and take them to our church Christmas party. They can be made ahead of time, so that will be easier.
