I just made these muffins, this is what I learned, make sure you're blueberries are sweet and not bitter, also make sure you follow his advice on the water for the steam so that they don't come out crunchy. It's a tasty recipe and I do give it 2 thumbs up 👍🏼
Love your videos!! I solved the blueberry problem that is pretty much foolproof. You put part of your batter in the pan with no blueberries and then add the blueberries to the remaining batter and spred on top. When part of the blueberries sink, they will sink into the plain batter and the remaining ones will stay up top. It took me decades to figure that out. Keep making great videos

These are the best blueberry muffins I've ever made or tasted. I used 1 1/2 cups of frozen wild blueberries and 1 cup of sugar. I used kefir to replace sour cream and milk and added 1/2 teaspoon of almond extract. Sooo delicious

If you want "bakery" style TALL muffins, here is a tip for you: For tall muffin tops, bake the muffins for 5 minutes at 425°F (218°C) then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 13-16 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 18-21 minutes, give or take.

I made this recipe gluten free and eggless. Everyone loved it! It just needs longer baking time. I substituted eggs with cream cheese and milk. And flour with 2 cups gluten free flour and ½ cup almond flour. I was scared but it worked!!Delicious!

I made these using fresh raspberries. I like this recipe as it's wet and that helps the berries fold in better. I use buttermilk instead of whole milk and was glad to see that John uses a combination of butter and oil. The batter was a little wetter than I needed. While I used lemon zest I didn't add the 1/4c lemon juice. I was going to use water instead but the batter was wet enough. I really like this recipe for fruit muffins although it didn't rise quite as much as I had hope; probably because the batter was wet. A big thumbs up.

I had to turn my oven down to 385 towards the end of the baking process and at the end I shaved off some cream cheese to sprinkle on top with a little sugar great recipe you can make real cheap if you already have flour, sugar, and baking powder! I tripled the recipe so my partner can take some to work and made them in a jumbo tin. All in all delicious thank you for the recipe!

These just came out of the oven like 1 hour ago and almost gone. Imagine 4 people almost ate them including me. I followed you exactly even temperature of oven. I have a problem with oven temperature it’s almost like I’m having anxiety of burning things with high temperature. I used frozen blueberries and didn’t bleed all over the batter as you said do not defrost. I also piled it in like a mountain to get that peek like Starbucks does. I didn’t do the streusel and added only white sugar on top and made them a bit crispy on top. Also didn’t stick in the muffin papers and I think it’s the oil and butter in them. Oh sorry I didn’t have sour cream instead used Greek yogurt. Just live your recepie a and explanations of your cooking. Bravo 👏

I have made these 2x this month. The best recipe, love the lemon juice and zest in them. I double the recipe so I can make a loaf in a bread pan as well. It has to cook on a lower temp for a longer period of time so its not raw in the center. 325 for about 45min

I just tried this recipe. The batter seemed thin. I thought I had done something wrong, even though I measured my flour. I baked it anyway. I didn't use the Streusel topping. To my surprise, the muffins came out so good. They aren't good for my diet because I ended up eating three muffins, lol. I do think I will use the streusel topping on my next ones because they needed a little something crunching on top. Thank you for this recipe. I will definitely bake this recipe again.
Moment of truth....hmm the subtle lemon in there is great and the blueberries are sooo good warm and steamy! The breading part is a little bit dry, but I left mine in the oven for an extra 5 mins because my oven usually needs extra time. It's not a big deal though, I definitely enjoy them! Thanks!

I made these! I don't think I cooked them long enough but they were still delicious. They were in the oven for 23 minutes and the toothpick came out clean, but they were not brown. Next time I will go for 25 minutes. Love the lemon tang.

Use your clean fingers to crumble the butter and flour together until you have a shaggy mixture. I like to press large handfuls together at the end then gently break apart to create a range various sized clumps. For the Muffins: Preheat to 400 degrees F. Prepare your muffin tin by either greasing the wells or adding paper liners. Add the flour, baking powder and salt to a large bowl then whisk together and set aside. Toss the blueberries In about a tablespoon of the dry mixture and set aside. This will help prevent them from sinking in the batter. In medium bowl, add melted butter, oil, milk, sugar, vanilla, eggs, lemon juice, sour cream, and lemon zest then whisk together until combined. Pour the wet mixture Into the dry then mix until almost combined. Add the blueberries and fold in. Transfer batter to your prepared muffin tin filling the wells to the top. Cover with the streusel topping. Bake for about 20 minutes at 400F. I like to add a ramekin filled halfway with water to keep the muffins nice and moist during the bake but this is optional. Let the muffins cool in the tin for at least 10 minutes before removing.
i just made these, and they were absolutely delicious! i left out the crumb topping, because 3/4 C of sugar is plenty. i too love the lemon. Next tme i will spritz my muffin paper with a little oil, because the paper stck a bit to the still warm muffins 🌈😀

I baked mine for the entire time at 400 and the blueberries exploded. They muffins did not turn out good at all

Great recipe. They came out so moist and I didn’t even utilize the half filled ramekins in the oven as the recipe put as optional. I think the lemon zest and juice made a big difference

I made this recipe in a nine inch round cake pan. It turned out awesome and i also used the crumble on the top as shown in this video. It turned into such a gorgeous cake. So so so delicious.. 💖💖💖

Such a yummy recipe! I had to turn my oven down to 385 towards the end of the baking process and at the end I shaved off some cream cheese to sprinkle on top with a little sugar great recipe you can make real cheap if you already have flour, sugar, and baking powder! I tripled the recipe so my partner can take some to work and made them in a jumbo tin. All in all delicious thank you for the recipe!

These just came out of the oven like 1 hour ago and almost gone. Imagine 4 people almost ate them including me. I followed you exactly even temperature of oven. I have a problem with oven temperature it’s almost like I’m having anxiety of burning things with high temperature. I used frozen blueberries and didn’t bleed all over the batter as you said do not defrost. I also piled it in like a mountain to get that peek like Starbucks does. I didn’t do the streusel and added only white sugar on top and made them a bit crispy on top. Also didn’t stick in the muffin papers and I think it’s the oil and butter in them. Oh sorry I didn’t have sour cream instead used Greek yogurt. Just live your recepie a and explanations of your cooking. Bravo 👏

Just made these this morning. They tasted pretty good ☻ I will say they came out of the oven looking VERY white. Fully cooked but there’s barely any browning, making them look undercooked.

I have made these 2x this month. The best recipe, love the lemon juice and zest in them. I double the recipe so I can make a loaf in a bread pan as well. It has to cook on a lower temp for a longer period of time so its not raw in the center. 325 for about 45min

I just tried this recipe. The batter seemed thin. I thought I had done something wrong, even though I measured my flour. I baked it anyway. I didn't use the Streusel topping. To my surprise, the muffins came out so good. They aren't good for my diet because I ended up eating three muffins, lol. I do think I will use the streusel topping on my next ones because they needed a little something crunching on top. Thank you for this recipe. I will definitely bake this recipe again.

Moment of truth....hmm the subtle lemon in there is great and the blueberries are sooo good warm and steamy! The breading part is a little bit dry, but I left mine in the oven for an extra 5 mins because my oven usually needs extra time. It's not a big deal though, I definitely enjoy them! Thanks!

Beware! Recipe link is quite a bit different than the ingredients in the video. The video adds an additional 1/4 cup oil and 1/4 cup sour cream. The printed recipe comes out dry and was a failure.

I made these! I don't think I cooked them long enough but they were still delicious. They were in the oven for 23 minutes and the toothpick came out clean, but they were not brown. Next time I will go for 25 minutes. Love the lemon tang.

Today i made this recipe for the first time with blackberries and they turned out amazing🤩 i had some doubts about those toppings because they looked like bread crumbs lol. (I think it's about your butter and how solid it is) But TRUST THE PROCESS i loved it thanks.
Ingredients
For the Muffins:
▢2 ½ cup all-purpose flour (300g)
▢1 teaspoon salt
▢2 teaspoon baking powder
▢¼ cup butter (56g), unsalted, melted
▢¼ cup vegetable oil (60mL)
▢1 cup whole milk (240ml)
▢¾ cup granulated sugar (170g)
▢¼ cup sour cream (60ml)
▢2 teaspoon vanilla extract
▢1 tablespoon lemon zest
▢2 eggs room temperature
▢¼ cup lemon juice (60ml)
▢8 oz blueberries fresh
For the Topping:
▢½ cup all-purpose flour (60g)
▢½ cup granulated sugar (100g)
▢¼ cup unsalted butter (56g)
▢1 pinch salt
Instructions
For the Streusel Topping:
Whisk the flour, sugar and salt in a medium bowl then add the cubed butter.
Use your clean fingers to crumble the butter and flour together until you have a shaggy mixture. I like to press large handfuls together at the end then gently break apart to create a range various sized clumps.
For the Muffins:
Preheat to 400 degrees F. Prepare your muffin tin by either greasing the wells or adding paper liners.
Add the flour, baking powder and salt to a large bowl then whisk together and set aside.
Toss the blueberries In about a tablespoon of the dry mixture and set aside. This will help prevent them from sinking in the batter.
In medium bowl, add melted butter, oil, milk, sugar, vanilla, eggs, lemon juice, sour cream, and lemon zest then whisk together until combined.
Pour the wet mixture Into the dry then mix until almost combined. Add the blueberries and fold in.
Transfer batter to your prepared muffin tin filling the wells to the top. Cover with the streusel topping.
Bake for about 20 minutes at 400F. I like to add a ramekin filled halfway with water to keep the muffins nice and moist during the bake but this is optional. Let the muffins cool in the tin for at least 10 minutes before removing.
i just made these, and they were absolutely delicious! i left out the crumb topping, because 3/4 C of sugar is plenty. i too love the lemon. Next tme i will spritz my muffin paper with a little oil, because the paper stck a bit to the still warm muffins 🌈😀
