My local grocery story bakery always made carrot cake with raisins. I had it every since I was a kid and thought that's just how it's made it. When I got older and got carrot cake elsewhere I noticed that raisins are "special". I have to go out of my way to make sure there's raisins because there's literally no other way to have it to me! It's just the right texture and flavor balance with the nuts and carrots ❤

I have been making your recipes with a combination of quinoa flour, coconut flour, and almond flour. For sweeter I have been substituting blue agave syrup and honey. It all translates very nicely. After baking, cover it in some kind of chocolate frosting, ganache, or Brigadiero (kind of fudge made from condensed milk and chocolate powder. Or she says there's a traditional cracked one made with milk, sugar, chocolate powder and butter. Hope this helps !!
That looks so good, never had it before though. Im from Brazil and here carrot cakes are very diferent, so good but a whole new vibe. We blend the carrots into the batter so it becomes all orange and smooth, to top it of we just add a coat chocolate sauce. Goes really nice with a cup of coffee.
You should try someday the brazilian style carrot cake! All wet ingredients go on the blender, including the carrots, and then you mix with the dry ones. After baking, it's covered with some kind of chocolate frosting: ganache, brigadeiro (a kind of fudge made out of condensed milk and chocolate powder) or the traditional cracked one made with milk, sugar, chocolate powder and some butter. It tastes like "granny's cake"!! Delicious!

I tried it today and my nephews love it. I also take out half cup of sugar and substitute for brown and dark brown sugar; i add some thinly sliced ginger as well. The cake turn out great, not too sweet for me to enjoy and the amount of cinnamon in this recipe is perfect (I hate strong cinnamon smell). Now I wait for my mom to try since it mother’s day tomorrow.

If you want to reduce the sugar, which I highly recommend you do, but without changing the texture too much, you could add a tablespoon of room temperature butter half way through mixing.
Hello, I just finished eating the first slice of this cake and I came here to comment how amazingly moist and still light and soft this turned out to be! Almost doesnt need the creem cheese frosting, incredible easy recipe, I used walnuts. I was worried the oil was too much but it wasn't.
I just made this cake twice in the last 2 weeks and each time used a 9 x 13 cake pan. The flavor and texture is wonderful - confirmed by people I shared it with. Both times as the cake was cooling, the center sunk a bit and I can't figure out why. I followed the recipe to the letter and used fresh baking soda and powder, ended up baking it for 39 minutes each time (to achieve that clean toothpick).

I just made this without the frosting bc I want to cut down on sugar and used 2 rectangle pans. It came out great and the only thing im going to change is toast the nuts for 3 min instead of 4 min. Used half cup walnuts and half cup pecans (didn't have enough pecans) and less then 1/4 teaspoon of clove per his suggestion. I'll be making this again and again.
In this dough, I instead oil put carrots marmelade, on this way I get sweetness and moisture instead oil and sugar 👌🏻.. example for chocolate spong cake I used figs marmelade confit.. so delicious substitute

I have to admit, I am one of those people who prefers to exclusively use salted butter. It is in all of my recipes (I usually just don’t add salt when called for) Is there some cooking/baking magical reason I should REALLY keep unsalted butter on hand? I just can’t see the issue in it (unless your doctor says to cut salt) Salt is great in a desserts anyway.

I made this cake for a family birthday and I made a Betty Crocker one too ( which I add carrots to mix). I ignored the sugar part of recipe as we only have unrefined sugar or Erythritol and I reduced the amount to 360g coconut nectar sugar. Whilst the family and neighbors loved both cakes this won hands down for my husband and I’m making it again for a dinner party this weekend.

Instead of a mandolin, I like to use a cheese grater that I use for all my vegetables and cheese and whatever else I need to use it for and I got it from Amazon and you turn it with your hand. It’s the best and I will never use anything else I even use it for garlic.

It has sour cream and applesauce, and I just don't know if this one will be the same deliciousness, but I will try it out. The reason why usually recipes for baking advise yo use unsalted butter is so you're able to control de salt levels yourself, nothing else.

Instead of a mandolin, I like to use a cheese grater that I use for all my vegetables and cheese and whatever else I need to use it for and I got it from Amazon and you turn it with your hand. It’s the best and I will never use anything else I even use it for garlic.

I've been making your original carrot cake recipe for years and it's sooo good. It has sour cream and applesauce, and I just don't know if this one will be the same deliciousness, but I will try it out. I see that you've replaced the original recipe on your site with this one, so I'm glad I saved the original one just in case lol.
